- Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
- Mix together the bread and milk in a bowl and set aside.
- Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
- Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
- Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
- Slice and serve with the sliced red onions and dill pickle chips.
BACON-WRAPPED DOUBLE PORK MEATLOAF

- Heat the oven to 400 degrees F and arrange a rack in the upper third. Line a baking sheet with foil and set aside.
- Add the oil to a medium pan over medium heat. When the oil shimmers, add the onion, garlic and thyme and cook until softened, about 3 minutes; set aside.
- In a large bowl, add the eggs, buttermilk, mustard, Worcestershire, salt, and pepper. Whisk until the eggs are broken up and evenly combined. Add the onion mixture, ground pork, sausage, cracker crumbs, and parsley. Mix until thoroughly combined (don't squeeze mixture).
- Dampen your hands, and put the meat on the prepared baking sheet. Form the meat into a 9 by 5- inch loaf. Arrange the bacon across the top of the loaf and bake until the internal temperature is 155 degrees F, on an instant-read thermometer, about 55 to 65 minutes. Remove from the oven to a cutting board and let cool for 10 to 15 minutes before slicing and serving.

In a small bowl, crack egg and beat it slightly. This helps prevent overworking the meat while combining, resulting in a tougher meatloaf. Add egg to large bowl with meat mixture. Combine well with hands, do not overwork the meat mixture. Gently press meatloaf into bowl and divide in half. Place first half into 7x10" baking dish and form into a flat meatloaf Gently press the center in to create a rim around the outside of the meatloaf. Add shredded cheese into the center of the meatloaf. Form remaining half of meatloaf in the bowl into a size similar than the meatloaf in the pan. Set on top and press the sides together to seal in the cheese. Form into a loaf shape about 1½ to 2 inches tall. You may notice cracks in the loaf. Run your hands under warm water and then across the meatloaf to smooth the cracks out. Set meatloaf aside. In a small bowl combine 4 tablespoons ketchup and 1 tablespoon brown sugar. Mix well with a fork. Apply glaze evenly all over your meatloaf (except the bottom). Arrange bacon slices over the top of the meatloaf. Start by wrapping a piece of bacon across the front side and a second piece of bacon across the back side. Arrange remaining bacon over the top. Tuck the ends of the bacon under the meatloaf (this prevents curling). Place meatloaf in the oven and bake until bacon is crispy, about 1 hour. Remove from oven. Allow to rest uncovered for 20 minutes. Serve and enjoy

- In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 14x10-in. rectangle. Spread sour cream to within 1/2 in. of edges. Sprinkle with cheese and olives. , Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling. Seal seam and ends. DOUBLE CHEESE MEATLOAF
I found this on the web years ago, but unfortunately, I don't remember where. This has a ketchup glaze, but if you reduce the amount of ketchup and increase the brown mustard (which is what I do) you can't tell. This is excellent, and really doesn't have a lot of filler. I also increase the cheese. Sometimes I make this in my muffin tins. I generally serve this with mashed potatoes and dinner rolls, and my two picky sons both like it.

- Preheat oven to 375°F.
- Spray a medium skillet with cooking spray.
- Heat over medium high heat.
- Add onion.
- Cook stirring occasionally, until slightly soft, about 3 minutes.

- Preheat oven to 375 degrees.
- Saute chopped onion for three minutes over medium-high heat.
- Combine onion, 4 teaspoons of the ketchup, 1 teaspoon of the mustard, Mozzarella, bread crumbs, parsley, Parmesan, oregano, pepper and the egg in a large bowl.
- Crumble ground meat over the mixture and blend well using your hands.
- Pack mixture into a loaf pan coated with cooking spray.
- Combine remaining ketchup and mustard and spread over the top.
- Bake 50 minutes or until a meat thermometer registers 160 degrees.
- Let meatloaf stand for 10 minutes before serving.
DOUBLE BACON, SPINACH AND CHEESE MEATLOAF
I came up with this recipe at the age of 16 (almost 20 years ago). I found my old high school cook book I created and here it is. This may sound a little labour intensive, but it isn't really. Once cooked, this looks very impressive. The first time I maded this, I was rather impressed with myself!

- Chop 4 bacon rashers finely and cook in a pan. Once cooked, add the washed and trimmed spinach and the crushed garlic, cook until spinach is just wilted, about 45-60 seconds.
- You can either leave the spinach mixture as is, or puree to a paste. Set aside mixture to cool slightly while you make the meatloaf base.
- In a large bowl, add the meat, eggs, onion, zucchini, bread crumbs and sauce. I like to use hands to mix it well.
- Lay out a large rectangular peice of foil. Place the remaining bacon along the foil side ways, not lengthways. You want the ends of the bacon to overlap touch while the meatloaf is cooking.
- Gently place handfulls of the meat mix over the bacon. Cover the bacon and smooth out the meat with wet hands to create a 2cm (3/4 inch) thick meatloaf over the bacon.
- Pour the spinach and bacon mix over the meatloaf. Spread evenly over, leaviing a gap of at least 4 cm (just over 1 inch) lengthways. This will help the mix not to squeeze out when you roll it up.
- Over the spinach layer, sprinkle the cheese on top, not going past the spinach. The cheese will ooze out while cooking otherwise.
- Using the foil as a guide, roll the meatloaf up lengthways. Discard the foil. Pinch the ends of the meatloaf closing them sealed.
- Place meatloaf carefully seam side down on a lined baking tray (easier to clean later).
- Bake at 180oC (375 F) for 1 full hour.
- Remove from oven and let stand for 5-10 minutes before slicing.
- * Please note that bacon in Australia, NZ and UK has an eye of meat and are twice as long as bacon in the US (our bacon is 30 cm long, about 10 inches). US cooks may need extra bacon for the top of the meatloaf. If someone makes it from the US, please post a note as to how much you used. Thank you.

- Preheat the oven to 350°F. In a medium skillet, cook the bacon over medium heat until limp and some of the fat is rendered, 3 to 4 minutes. Remove the bacon from the skillet and reserve it.
- In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and egg. Pat the mixture into a shallow 2-quart baking pan. Spread the top of the loaf with ketchup, then lay the bacon strips over the ketchup. - Heat oven to 350 degrees. In a medium pan, cook bacon just until limp. Remove from pan and set aside. Remove most of the grease and saute the onions just until soft, cool, and set aside.
- In a small bowl, mix the eggs, mayo, pickles, onions, dry mustard, salt, & pepper, just to combine. Place meat and bread crumbs in a large bowl, and mix in the egg mixture. Mix well. With your hand, score the meat into 3 equal sections, just eyeball it if you want. Take one section of the meat mixture and shape it into an oval about 1 inch thick. This is the bottom layer of the meat loaf. Place 3 slices of the cheese on top of this loaf making sure that they are not hanging over the edge of the meat loaf. You don't want it to melt and run out. Take the next 1/3 section of meat, place it on top of the cheese layer and mold it to the same size as the bottom layer. Lay the last 3 slices of cheese on this layer contuning to keep the cheese away from the edges. Place the rest of the mixture on the top and shape to the rest of the meat loaf. Smooth the sides of the loaf with a little water on your fingers so that you can't see that it was done in layers, and to make sure the cheese won't ooze out when it melts. It may seem like alot of fuss, but it is WELL worth the little extra effort. Spread the ketcup or chili sauce over the top, then place the bacon strips across the meatloaf sideways instead of the length, covering the entire loaf. Bake for 1 hour, or until it reaches an internal temp of 160. Remove from oven and tent with foil for about 10 minutes to set. When you slice this, you will be able to see the 2 cheese layers. This sets up nicely and will be great for leftover sandwiches -- .
