This recipe came to me by way of my brother. I enjoyed it at his home and asked for the recipe. It has become a standard dessert in our home. I enjoy it plain and sometimes I warm it up and put a big scoop of vanilla ice cream on it. Either way, it is delicious.

3 eggs
1 banana, cut into chunks
1 (18.25 ounce) package yellow cake mix
1 (15.25 ounce) can apple pie filling, or more to taste
¾ cup brown sugar
½ cup flaked coconut
½ cup chopped pecans
1 tablespoon ground cinnamon
¾ cup confectioners' sugar
5 teaspoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat eggs and banana together in a bowl until smooth. Add cake mix and apple pie filling to eggs; beat until batter is combined. Pour batter into prepared baking dish.
  • Stir brown sugar, coconut, pecans, and cinnamon together in a bowl; sprinkle over batter in the baking dish. Swirl coconut mixture into batter using a knife or toothpick.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 60 minutes.
  • Whisk confectioners' sugar and milk together in a bowl until icing is smooth. Drizzle icing over the top of the hot cake. Cool cake in the baking dish to room temperature, cover the dish with plastic wrap, and refrigerate until cold.

1 (21 ounce) can apple pie filling
2 teaspoons ground cinnamon
3 cups all-purpose flour
1 cup white sugar
1 ½ cups milk
½ cup butter, softened
3 teaspoons baking powder
1 teaspoon salt
3 eggs
¼ cup packed brown sugar
¼ cup chopped walnuts
2 tablespoons butter, melted
¾ cup confectioners' sugar
1 tablespoon butter, melted
¾ teaspoon vanilla extract
2 ½ teaspoons hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 pan.
  • Mix pie filling and cinnamon, set aside.
  • Beat flour, white sugar, milk, 1/2 cup softened butter, baking powder, salt and eggs in mixing bowl on low speed for 30 seconds. Beat on medium speed for 2 minutes.
  • Pour half of the batter into prepared pan. Spoon half of the pie filling over the batter. Spread remaining cake batter over pie filling, and top with the remaining half of the pie filling.
  • Mix brown sugar and nuts together and sprinkle over top of cake. Drizzle with 2 tablespoons melted butter.
  • Bake at 350 degrees F (175 degrees C) for 45 to 55 minutes. Allow cake to cool 20 minutes.
  • Combine confectioners sugar, 1 tablespoon butter, 3/4 teaspoon vanilla, 2 to 3 teaspoons hot water. Beat until smooth. Drizzle over cake.

I THINK this is from an early edition of Light&Tasty -but my copied page is faded. There are many possible variations, made the same way - such as yellow cake mix and peach pie filling, or chocolate cake mix with cherry pie filling - which I have not tried, since I LOVE the apple/spice. In preparing the bundt pan, I always use Baker's Joy spray (with flour) or Pam For Baking, and never have a problem with release. It is very easy, and packable in lunches.

18 1/4 ounces spice cake mix
1 (21 ounce) can apple pie filling
3 eggs
3/4 cup fat free sour cream
1/4 cup water
2 tablespoons canola oil
1 teaspoon almond extract
2 tablespoons brown sugar

2/3 cup confectioners' sugar
2 teaspoons low-fat milk

Steps:

  • Set aside 1 Tblsp. cake mix.
  • Set aside 1-1/2 cups pie filling.
  • In mixing bowl, combine eggs, sour cream, water, oil, extract, remaining cake mix, and remaining pie filling.
  • Beat on med. speed for 2 minutes.
  • Pour 1/2 batter into 10 inch bundt pan, coated with non-stick cooking spray.
  • Combine brown sugar, cinnamon, and reserved cake mix.
  • Sprinkle over batter.
  • Spoon reserved pie filling over batter, to within 3/4 of edges.
  • Top with remaining batter.
  • Bake at 350 degrees for 40-45 minutes, until toothpick inserted near center comes out clesn.
  • Cool in pan 10 minutes before removing from pan to wire rack.
  • Turn cake upright, on rack.
  • In a small bowl, combine glaze ingredients.
  • Drizzle over cooled cake, on plate from which it is to be served.

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1 teaspoon apple pie spice
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour (see Cook's Note)
1 teaspoon apple pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup sour cream
2/3 cup apple butter

Steps:

  • For the crumb topping: Put the flour, brown sugar, apple pie spice and salt in a small bowl and stir to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, apple pie spice, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream in 2 additions, beginning and ending with the flour. Beat until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the apple butter on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.

Steps:

  • Preheat the oven to 375 degrees F (350 degrees if using a Pyrex or dark-finish pie plate). Grease a 10-inch pie plate.
  • In a medium bowl, combine the eggs, oil, vanilla, and sugar, beating with a wooden spoon until thick, about 1 minute. Add the flour, baking powder, cinnamon, allspice, and nutmeg, and salt. Beat vigorously until the batter has a crumbly consistency, about 1 minute. Fold in the apples and mix until the apples are evenly coated and the batter becomes moist and smooth. There will be lots of apples, held together by a relatively stiff batter.
  • Scrape the batter into the prepared pan and smooth into an even layer with a metal spatula. Sprinkle the top evenly with the sugar. Bake on the center rack of the oven 30 to 35 minutes, until the center is firm when gently pressed. A cake tester inserted into the center should come out clean, the top and bottom of the cake should be deep brown, and the apples should be tender when pierced with a knife. Remove from the oven and cool at least 1 hour in the pan on a folded tea towel. Serve warm or room temperature, cut in wedges from the pie pan.

Steps:

  • Measure carefully, placing all ingredients except pie filling and powdered sugar in bread machine pan in the order recommended by the manufacturer.
  • Select Dough/Manual cycle. Do not use delay cycle.
  • Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.

4 eggs
1 cup sour cream
½ cup vegetable oil
6 apples - peeled, cored and sliced
½ cup white sugar

½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.

This moist spice cake from Sandra Castillo of Sun Prairie, Wisconsin is low in fat but full of flavor! "Apple pie filling is my secret ingredient," she writes. "For a fun variation, try it with a chocolate cake mix and cherry pie filling...or yellow cake mix and peach filling."

1 package spice cake mix (regular size)
1 can (21 ounces) apple pie filling
3 large eggs
3/4 cup fat-free sour cream
1/4 cup water
2 tablespoons canola oil
1 teaspoon almond extract
2 tablespoons brown sugar
1-1/2 teaspoons ground cinnamon
GLAZE:
2/3 cup confectioners' sugar
2 teaspoons fat-free milk

Steps:

  • Set aside 1 tablespoon cake mix. Set aside 1-1/2 cups pie filling. In a large bowl, combine the eggs, sour cream, water, oil, extract and remaining cake mix and pie filling; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour half into a 10-in. fluted tube pan coated with cooking spray., In a small bowl, combine the brown sugar, cinnamon and reserved cake mix; sprinkle over batter. Spoon reserved pie filling over batter to within 3/4 in. of edges; top with remaining batter. , Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. , In a small bowl, combine glaze ingredients. drizzle over cooled cake.

I have been making this recipe for years and have received many requests for the recipe. Source: Five Roses Flour Cookbook - which is one of my favourite recipe books. Prepare the topping first.

3 medium apples, sliced thin (I used Granny Smith)
1 tablespoon fresh lemon juice
1/3 cup sugar (white or brown)
3/4 teaspoon cinnamon
1 1/2 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1/3 cup butter (or shortening)
1 cup white sugar
2 eggs
1 cup sour cream
1/2 teaspoon baking soda

Steps:

  • Topping.
  • It is not necessary to peel the apples, but I do.
  • Combine the sliced apples,lemon juice,sugar and cinnamon in a small bowl and set aside.
  • Combine dry ingredients - flour,baking powder and salt in a bowl, set aside.
  • In a large bowl cream butter, add sugar gradually, beat well.
  • Beat eggs into creamed mixture.
  • Measure sour cream into a separate bowl, add baking soda, stir together; the cream will rise up and become fluffy.
  • Add sour cream to the batter alternately with the dry ingredients. Blend well.
  • Pour half the batter into a greased and floured 9" square cake pan, top with half the apple mixture.
  • Add remaining batter and arrange rest of the apples on top.
  • Bake in 325 degree oven for 50-60 minutes.
  • Especially nice served warm. Enjoy!
