Easy quick Amish pickle recipe

1 cup distilled white vinegar
1 tbsp salt
2 cups white sugar
6 cups sliced cucumbers
1 cup sliced onions
1 cup sliced green bell peppers

Steps:

  • In a medium saucepan over medium heat, bring vinegar, salt and sugar to a boil.
  • Boil until the sugar has dissolved, about 10 minutes.
  • Place the cucumbers, onions and green bell peppers in a large bowl.
  • Pour the vinegar mixture over the vegetables.
  • Transfer to sterile containers and store in the refrigerator.

Using only a handful of pantry ingredients, a Mason jar, and a few hours in the refrigerator, you can make classic dill pickles that are just as tangy and flavorful as those prepared according to more traditional (and labor-intensive) canning techniques. Plus this recipe can be scaled with ease, meaning you can make just one jar or ten in a matter of minutes. So if you're a pickle lover but short on time, this method is for you.

Number Of Ingredients 7

1 cup rice wine vinegar or distilled white vinegar
Kosher salt
1 teaspoon whole black peppercorns
1/4 teaspoon crushed red pepper flakes
6 sprigs dill
3 cloves garlic
1 1/4 pounds kirby cucumbers, ends trimmed (about 4 medium cucumbers; see Cook's Note)

Steps:

  • Bring the vinegar, 1 1/2 cups water and 1 tablespoon salt to a boil in a small saucepan over medium heat, stirring until the salt is dissolved, about 3 minutes. Remove from the heat.
  • Meanwhile, place the peppercorns, red pepper flakes, dill and garlic in a 1-quart Mason (or other glass) jar. Pack the cucumbers in the jar as tightly as possible.
  • Pour the vinegar mixture over the cucumbers so the cucumbers are completely submerged. Leave uncovered and allow to cool to room temperature, about 1 hour. Cover and refrigerate for at least 1 day before using. The pickles will keep in the refrigerator for up to 2 weeks.

6 cups thinly sliced cucumbers
2 cups thinly sliced onions
1-1/2 cups sugar
1-1/2 cups cider vinegar
1/2 teaspoon salt
1/2 teaspoon mustard seed
1/2 teaspoon celery seed
1/2 teaspoon ground turmeric
1/2 teaspoon ground cloves

Steps:

  • Place cucumbers and onions in a large bowl; set aside. Combine remaining ingredients in a saucepan; bring to a boil. Cook and stir just until the sugar is dissolved. Pour over cucumber mixture; cool. Cover tightly and refrigerate for at least 24 hours before serving.

6 c sliced cucumbers
1 c onion sliced thinly
4 clove garlic cloves whole
fresh dill
1 c cider vinegar
2 c sugar
1 Tbsp each celery seed and cumin seed
2 Tbsp canning salt

Steps:

  • 1. Get two quart jars and sanitize them. Add the fresh dill to each jar. layer each jar with cucumbers and onions.
  • 2. Mix the cider vinegar, sugar, celery seed, cumin and salt. Pour even amounts over each jar of cucumbers. Finish the jars with water.
  • 3. Place lids on the jars and shake the jars. Place in refrigerator and shake a couple of times during the next 24 hours. Ready to eat.

Liquid:
6 cups cucumbers, sliced
1 cup green pepper, sliced
1 cup onion, sliced
1 cup cider vinegar
2 cup white sugar
1 tsp celery seed
2 Tablespoon salt

Steps:

  • Slice the veggies into 2 quart jars, I like to make layers of them: you can leave out the onions and peppers, if you want, but they are so good! Mix your other ingredients in a large measuring cup, stir well. The sugar will not be dissolved yet. Pour over sliced vegetables, evenly in each jar. You will finish filling the jars with cold tap water. I shake the jar a few times during the 24 hrs to mix. No need to cook it, ready to eat in 24 hours. Taste best if eaten within a week or two, but I like to add tomato wedges or slices to this liquid for overnight, when it is close to empty of veggies, use the next day, unbelievable with sandwiches I have also pickled hot peppers using a batch of this same liquid~They are delicious!
