ARGENTINE GRILLED LEMON CHICKEN



Argentine Grilled Lemon Chicken image

My son Ryan taught me this recipe after a trip home from Argentina. It is now my favorite way to grill chicken. Sounds tedious but it is actually quite easy. I'll post pictures soon.

1 whole chicken
2 lemons
salt
pepper

Steps:

  • With meat scissors or a knife carefully remove the backbone by cutting up alongside the bone on either side.
  • Open up the chicken and pound flat with a meat mallet to distribute the breast meat more proportionally to the size of the thighs for even cooking.
  • Sprinkle both sides with salt and pepper.
  • Loosen the skin from the meat but do not remove.
  • Slice one lemon very thinly. Distribute the slices under the skin.
  • Prepare a charcoal grill with coals only on one side of the grill.
  • Place the chicken bone side down on the grill close to the coals but not over them. Cut remaining lemon in quarters. Squeeze one quarter over the chicken.
  • Make a tent with foil to cover the chicken loosely but have one end hanging over the chicken and the coals. This will allow heat to flow up under the foil and over the chicken.
  • Turn chicken one quarter turn every 15 minutes until all four side have faced the heat. Each time squeezing another quarter of lemon.
  • Turn chicken skin side down directly over the coals for the last 15 minutes to brown.

3 lbs chicken pieces
1 lime, juice of (about 2 tablespoons)
salt
pepper
1/4 cup oil
1 large onion, sliced
1 green bell pepper, chopped
1 1/2 cups pitted ripe olives
1 1/2 cups orange juice
1/2 cup toasted slivered almonds

Steps:

  • Combine chicken and lime juice and marinate for 30 minutes.
  • Lightly season chicken with salt and pepper.
  • Heat oil in a large skillet.
  • Add chicken and brown on all sides.
  • Add onion, pepper, olives and orange juice.
  • Reduce heat, cover and simmer 30 minutes, or until chicken is tender and cooked through.
  • Remove chicken to a serving platter and pour the pan juices over it.
  • Top with almonds.

1 Spanish onion, small diced

1/4 cup Italian parsley, chopped fine
1 teaspoon fresh thyme
Salt and pepper

Steps:

  • Steep saffron in lemon juice for 5 minutes. Combine all ingredients and keep covered.

  • In a food processor or high speed blender, add Chimichurri ingredients and process on Low until chunky sauce forms.
  • In a large bowl, add chicken and pierce randomly with a small knife. Pour half of Chimichurri sauce on top and mix with your hands to coat the meat evenly. Cover and refrigerate for at least 30 minutes or preferably overnight. The longer the better, obviously. Discard marinade before cooking.
  • Grill: Grill on indirect high heat with closed lid for 15-20 minutes per side. Or until juices run clear (check with a knife near bone. Bone in chicken takes longer to cook. Grills vary so check your chicken often. You know your grill best, so it's hard to advise on exact cooking time.
  • Bake: Rub the bottom of large baking dish with oil and lay marinated chicken breasts or thighs in a single layer. Bake uncovered in 450 degrees F preheated oven for 25-35 minutes for chicken breasts and 40 minutes for thighs. Or until internal read thermometer registers 150 degrees F internal temperature. You do not need to wait for 165 degrees F as meat will get there during resting. This way you will avoid dry chicken

  • To make Masala Chicken, first thoroughly wash the chicken under running water. Now put it in some warm salted water and allow it to rest for 10 minutes and throw the water away and wash again. This helps to remove the smell of the chicken.
  • Add oil and ghee in pan and heat over medium flame. When the oil is hot enough, add bay leaves and both the cardamom and cinnamon. Saute for a minute and then add finely chopped onion into it. Cook till onions turn pink. Then add the ginger-garlic paste. Fry for a minute and then add chicken pieces in it. Cook chicken for 2-3 minutes until it turns white.
  • Quickly, add red chilli powder, coriander powder, turmeric, cumin powder, and salt to taste. Stir to mix all the ingredients well with the chicken. Cook for a minute and then add finely chopped tomatoes and green chillies (slit and halved). Now reduce the flame and cook covered for 6-7 minutes and then uncovered till the chicken is browned.
  • Add one cup water and cover the pan with a lid and cook for 2-4 minutes until the chicken is tender and soft. Remove the lid and garnish with garam masala powder, coriander leaves, kasoori methi powder and cook on high flame till the oil separates. Your Masala Chicken or Chicken Masala is ready. Enjoy with butter naan, rice or roti.
