BITTER LEMON
This is a British cousin of American lemonade. Makes an excellent mixer for gin, vodka, and tequila. Personally, I like it mixed with tonic water or soda water and poured over crushed ice on a hot summer day.

Steps:
- Cut the lemons into pieces, put in a saucepan with the water and bring to the boil.
- Reduce the heat and simmer gently for 10-15 minutes, until the fruit is soft.
- Add the sugar and stir until dissolved.
- Remove from the heat, cover and cool.
- Strain before using.
BITTER LEMON SODA
This is very much like Krest® Bitter Lemon (found in Africa) or Schweppes® Bitter Lemon (found in Europe). Unfortunately there is nothing comparable found in the USA, but this comes pretty darn close! This is the perfect thirst quencher for a blistering hot day!

Steps:
- Combine sugar, water, lemon zest, and lavender in a pot and cover; bring to a boil. Cook mixture until sugar is dissolved, 5 to 10 minutes. Remove pot from heat and cool syrup to room temperature, about 15 minutes.
- Pour lemon juice into a pitcher, strain syrup into lemon juice, and stir until concentrate is evenly mixed. Refrigerate concentrate until chilled, at least 1 hour.
- Fill serving glasses with ice and pour about 2 ounces concentrate into each glass; top with tonic water and stir.

WILD HEART COCKTAIL
The delicate orange flavor of Aperol melds well with bitter lemon soda in this crisp cocktail.

- Combine Aperol, vermouth, lemon juice, and bitters in a cocktail shaker. Fill shaker with ice and shake until outside of shaker is frosty, about 30 seconds. Strain into an ice-filled Old-Fashioned glass. Top with lemon soda and garnish with orange wheel.
BITTER LEMON SPRITZ
This recipe makes a single cocktail, but the proportions are easily multiplied for those celebrating with a crowd, so keep it in mind for the holidays. You can certainly sub gin for the vodka which is what I do

- Add the vodka, lemonade and several ice cubes to the shaker and shake vigorously until chilled and frothy.
- Transfer the contents of the shaker to a rocks glass, add the club soda. (Add a few extra ice cubes if needed.).
- Shake on drops of bitters to top.
- Serve with a rosemary sprig "swizzle stick.

- Measure gin and Bitter Lemon into a mixing glass. Fill glass ¾ full with ice; shake vigorously.Add sparkling water and swirl. Strain into a tall Collins glass filled with fresh ice. Garnish with lemon slice and fresh thyme.Housemade Bitter LemonWash lemons and cut the ends off. Slice each lemon in half lengthwise and cut each half into 4 slices. Combine lemons, sugar and water in high-speed blender. Process at high speed, pulsing until almost smooth. (Mixture should retain some texture.)Place mixture in a med. non-corrosive saucepan and bring to a boil over med.-high heat. Boil for 1 min; remove from heat and let steep for 1 hr.Strain through a fine strainer. Store in refrigerator up to 2 weeks.
- Into chilled mixing bowl, measure cream. With an electric mixer fitted with whisk or a handheld, whip cream until soft peaks form. Refrigerate. In blender container, puree raspberries until completely smooth. (It should measure about 1 cup.) Cover and refrigerate. For a large semifreddo, line a 9 by 5-inch loaf pan with plastic wrap, leaving a couple of inches overhang on each side. Or use small silicone or nonstick molds for individual semifreddo portions; set aside. In mixing bowl with electric mixer or whisk, vigorously whip egg yolks until pale yellow; ribbons should form when beaters are lifted. For syrup, in small saucepan over medium-high heat, combine sugar and water. Cook mixture without stirring until it reaches 250-258 F on candy thermometer. Mixture should thicken and turn clear; remove syrup from heat. With the mixer on medium speed, slowly stream syrup into egg yolks, whipping vigorously to incorporate. When all the syrup is added, continue whipping just until the bowl is
- 1. For walnut butter, melt chocolate and coconut oil in small saucepan. Stir in vanilla and salt. 2. Place walnuts in food processor and process for 2 to 3 minutes or until a paste begins to form.
