ALMOST-FAMOUS BARBECUE CHICKEN PIZZA



Almost-Famous Barbecue Chicken Pizza image

Number Of Ingredients 9

1 teaspoon extra-virgin olive oil, plus more for brushing
1/2 pound prepared pizza dough, at room temperature
1/3 cup plus 2 tablespoons dark barbecue sauce
1 8-ounce skinless, boneless chicken breast
Kosher salt and freshly ground pepper
2/3 cup grated smoked gouda cheese (about 3 ounces)
2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
1/2 small red onion, thinly sliced
Fresh cilantro, for topping

Steps:

  • Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
  • Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
  • Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
  • While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
  • Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.

2 tablespoons olive oil
1 medium red onion, sliced
1 tube (13.8 ounces) refrigerated pizza crust
3/4 cup barbecue sauce
2 cups shredded cooked chicken breast
6 bacon strips, cooked and crumbled
1/4 cup crumbled Gorgonzola cheese
2 jalapeno peppers, seeded and minced
1 teaspoon paprika
1 teaspoon garlic powder
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 425°. In a large skillet, heat oil over medium heat. Add onion; cook and stir 4-6 minutes or until softened. Reduce heat to medium-low; cook 20-25 minutes or until deep golden brown, stirring occasionally., Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. baking pan. Bake 8 minutes., Spread barbecue sauce over dough; top with chicken, cooked onion, bacon, Gorgonzola cheese and jalapenos. Sprinkle with paprika and garlic powder; top with mozzarella cheese. 250g wholemeal flour , plus a little for kneading if necessary
1 tsp instant yeast
¼ tsp salt
1 tbsp rapeseed oil , plus extra for greasing
pack of 3 peppers
1 large onion
1 tbsp rapeseed oil
1 tsp fennel seeds
2 tbsp barbecue sauce
2 tbsp tomato purée
1 large skinless chicken breast fillet (about 225g), diced
175g baby plum tomatoes , quartered
50g Applewood smoked cheese , grated

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the flour into a mixer with a dough hook, or a bowl. Add the yeast, salt, oil and 200ml warm water then mix well to a very soft dough. Knead in the food mixer for about 5 mins, but if making this by hand, tip onto a work surface and knead for about 10 mins. The dough is sticky, but try not to add too much extra flour. Leave in the bowl and cover with a tea towel while you halve and slice the peppers and onions. There is no need to prove the dough for a specific time, just let it sit while you make the topping.
  • For the topping: toss the peppers and onions with the oil and fennel seeds then roast for 15 mins. Meanwhile mix the barbecue sauce and tomato purée with 5 tbsp water.
  • Take the dough from the bowl and press into the base and up the sides of an oiled 25x35cm Swiss roll tin. Don't knead the dough first otherwise it will be too elastic and will keep shrinking back. Spread with two thirds of the barbecue sauce mix then add the remainder to the chicken and toss well to coat it.
  • Take the roasted pepper mixture from the oven and spread on top of the pizza. Scatter over the tomatoes then evenly spoon on the barbecue chicken. Scatter with the cheese and bake for 15 mins. Serve with a salad or healthy coleslaw.

7 ounces smoked Gouda cheese, coarsely shredded
1 16-ounce Boboli (baked cheese pizza crust)

1 green onion, chopped

Steps:

  • Position rack in center of oven. Place large baking sheet on rack and preheat oven to 450°F. for 30 minutes.
  • Heat olive oil in heavy medium skillet over medium-high heat. Season chicken with salt and pepper. Add chicken to skillet and sauté until just cooked through, about 5 minutes per side. Transfer chicken to plate; let rest 5 minutes.Cut chicken crosswise into 1/3 inch-wide slices. Using slotted spoon, transfer chicken to medium bowl.Toss with 1/4 cup barbecue sauce. Spread half of cheese on Boboli. Arrange chicken slices on Boboli, spacing evenly. Spoon any remaining barbecue sauce from bowl over. Sprinkle red onion over chicken. Drizzle with remaining 1/4 cup barbecue sauce. Sprinkle remaining cheese and green onion over.
  • Transfer pizza to hot baking sheet. Bake until bottom of crust is crisp and cheese on top melts, about 14 minutes. Let pizza stand 5 minutes.

This recipe is for a pizza that is a little different from the usual. It's also called Italian Peasant Bread. When I first began making this years ago, the Boboli crusts were larger than now. You might need to make two or more for a family. I don't bother to peel or seed the tomato.

1 garlic clove, minced

  • Preheat oven to 400 degrees.
  • Place crust on a slightly greased baking sheet or pizza pan.
  • In a small bowl, combine the oil, pepper, and garlic.

1 italian pizza dough (Boboli)
3 1/2 tablespoons peanut butter
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 teaspoons chili oil
1 tablespoon ginger, minced
2 teaspoons honey
1/2 teaspoon sesame oil
2 tablespoons sesame seeds, toasted
1/8 cup green onion, sliced thin
1/2 lb chicken breast
salt
cayenne pepper
2 tablespoons olive oil
1/2 cup mozzarella cheese, shredded
1/2 cup monterey jack cheese, shredded
1 medium carrot, shredded
1/4 cup cilantro, chopped

Steps:

  • In food processor or blender, combine peanut butter, vinegar, soy sauce, chili oil, ginger, honey and sesame oil.
  • Set aside.
  • Season chicken to taste with salt and cayenne pepper (use sparingly).
  • Saute in olive oil until done (about 6-8 minutes).
  • Cut chicken into bite sized pieces and coat with 2 tablespoons of the peanut sauce.
  • Spread peanut sauce over the surface of the Italian pizza crust.
  • Scatter chicken pieces over top and sprinkle with sesame seeds and green onions.
  • Sprinkle with 1/2 cup of mozzarella cheese and 1/2 cup of the Monterey jack cheese.
  • Bake, uncovered in 400°F oven for 12 minutes.
  • Remove from oven and sprinkle with shredded carrot and cilantro.

2 garlic cloves, minced
1 tablespoon olive oil
1 red onion, sliced in thin strips
1/2-1 cup barbecue sauce
1/2 cup cilantro, chopped
1 (6 ounce) can crushed pineapple, drained
8 ounces shredded mozzarella cheese
1 recipe pizza dough (I use recipe #126504) or 1 Boboli pizza crust, crust (I use Nonfat Pizza Dough (Bread Machine))

Steps:

  • Sauté chicken with garlic and onion in olive oil for 2-3 minutes.
  • Add 1/2 cup BBQ sauce and continue to cook until chicken is done. Cool slightly.
  • Prepare dough, if using.
  • Brush dough with additional BBQ sauce.
  • Cover with about 4 ounces of cheese.
  • Top with chicken, pineapple, cilantro and remaining cheese.
  • Bake at 500º for about 10 minutes or until cheese is bubbly.
  • (If using Boboli crust, follow package directions).
