PORK LOIN ROAST WITH GRAVY
This delicious pork loin is covered with a fragrant dry rub, then roasted and served with a beautiful gravy. Perfect Sunday lunch or a special occasion dinner.

Steps:
- Preheat the oven to 475F/220C Take the pork loin out of the fridge 1 hour before cooking to bring it to room temperature. Make the rub by combining the garlic powder, smoked paprika, crushed coriander seeds, oregano and salt. Pat the loin dry with paper towel and apply the rub all over.
- Put the meat in a roasting pan or a large cast iron pan and into the oven for 20 minutes. After 20 minutes lower the temperature to 375F/190C and continue roasting for 25-30 minutes until the internal temperature registers 145F/63C. Take the roast out and move to a serving plate, cover with foil and let it rest for 20 minutes.
- Meanwhile make the gravy. To the same pan with drippings add the butter and melt it over medium heat. Then add the flour and let it cook while stirring for 1 minute, then add the stock and red currant jelly, bring to a boil and let it simmer till thickens. Taste and add 1/2 tsp of the leftover rub or salt if underseasoned.

PORK LOIN ROAST WITH MUSHROOM SAUCE
Steps:
- Preheat oven to 425F.
- Crush coriander seeds in a mortar. Add the fresh herbs and crush together with the coriander seeds.
- Mix the crushed herbs and coriander seeds with salt and pepper in a small bowl.
- Rub the pork loin with the seasoning, patting it to make sure the seasonings stick well. Position the pork loin on a rack fitted over a baking pan lined with foil. Make sure that the fat cap is on top of the loin.
- Insert a BBQ or meat thermometer, put the loin in the oven and roast at 425F for 15 minutes. Reduce temperature to 325F and continue to roast until the temperature in the center of the thickest part of the loin reaches 140F, about 50 - 70 minutes.
- Remove the meat from the oven, tent with a piece of foil and let rest for 10 minutes before carving.
- Meanwhile, heat the oil in a skillet over medium-high heat. Saute the garlic and the shallot for 1 minute. Add the mushrooms and continue sauteing for another 5 minutes or so, until the mushrooms begin to brown.
- Add the sherry wine and continue cooking until most of the liquid evaporates.
- Pour in the chicken stock and the soy sauce. Bring to a boil. Add the cornstarch mixture and simmer for about 2 minutes, until it thickens. Season with salt and pepper to taste.
- Serve the pork loin with your favorite side dish (these garlic mashed potatoes are the best match for this dish) with mushroom sauce spooned over it.

SUNDAY DINNER PORK ROAST WITH MUSHROOM GRAVY
Steps:
- Preheat the oven to 450 degrees F.
- Pierce the roast all over with the tip of a paring knife and stuff one clove of garlic into each hole, followed by a few drops of hot sauce. Sprinkle on all sides with Essence and garlic powder and rub into the meat. Heat the oil in a Dutch oven over medium-high heat and brown the roast evenly on all sides, about 10 to 15 minutes. Add the chopped onion, celery, bell pepper, and enough water to come 1-inch up the sides of the pan. Add the teriyaki sauce, Worcestershire sauce, and stir to combine and loosen any browned bits on the bottom of the pan. Cover and bake for 45 minutes.
- Reduce the oven temperature to 350 degrees F and add a more water as necessary to come 1-inch up the sides of the pan. Continue to cook until very tender, about 3 1/2 hours total cooking time.
- Meanwhile, to make the gravy, melt 4 tablespoons of the butter in a medium saucepan. Whisk in the flour and cook, stirring constantly, over medium heat, until milk chocolate-colored roux is formed, about 15 minutes. Add the onion, bell pepper, celery, garlic, and the white part of the green onions, and cook until the vegetables are soft but not browned, about 5 minutes. Whisk in the beef stock and heavy cream and cook until thickened, 10 to 15 minutes.
- While the sauce is simmering, melt the remaining 2 tablespoons of butter in a medium skillet over medium-high heat. Add the mushrooms and cook, stirring, until tender and golden brown around the edges, about 5 minutes. Add the mushrooms and teriyaki sauce to the gravy and simmer until flavors come together, about 3 minutes. Remove from the heat and cover to keep warm.
- Remove the roast from the oven and transfer to a platter. Cover loosely with foil to keep warm. Strain the pan juices through a fine mesh strainer into the gravy and simmer until heated through and thickened, about 5 minutes. Season with salt and pepper, to taste, and serve over the carved roast.

EASTER PORK LOIN ROAST WITH ONION-MUSHROOM GRAVY
This is the main dish I made for my Wive's Easter Dinner when our husbands were deployed. There weren't any leftovers! I say 10 servings because it served 10 women. Men might eat more, thus lessening the servings!

- For Roast:.
- Cut slits into the top of the roast.
- Insert garlic slices into slits.
- Combine olive oil and spices - rub over roast.
- Cover and refrigerate overnight.
- Preheat oven to 350 degrees F.
- Bake uncovered for 2 hours and 15 minutes or until meat thermometer reads 160 degrees F.
- Let roast stand 15 minutes before carving.
- For Gravy:.
- Pour drippings and loose brown bits from the roast pan into a measuring cup.
- Skim the fat off the top, reserving 2 tablespoons drippings.
- Add water and broth to drippings, set aside.
- Sautee onions and mushrooms in oil and butter until tender.
- Stir in flour until well blended.
- Gradually stir in broth mixture.
- Bring to a boil.
- Cook and stir constantly for 2 minutes or until thickened.
- Stir in parsley and pepper.

HERBED PORK ROAST AND CREAMY MUSHROOM GRAVY
Steps:
- Preheat oven to 325 degrees F.
- Mix together rosemary, parsley, thyme and garlic. Cut small slits over surface of roast and insert herb mixture into slits. Place in a roasting pan. Roast until the internal temperature is 165 degrees F. Remove roast from pan and let stand 10 minutes. Stir soup into pan drippings in roasting pan and heat over a medium flame. Gradually stir in skim milk. Continue to stir until mixture boils. Slice pork and serve with gravy.

- Cut pork roast in half. In a large resealable plastic bag, combine the flour, onion powder and mustard. Add pork, one portion at a time, and shake to coat. , In a large skillet, brown pork in oil over medium-high heat on all sides. Transfer to a 5-qt. slow cooker. Pour broth over pork. Cover and cook on low for 5-6 hours or until tender. Remove pork and keep warm. , For gravy, strain cooking juices and skim fat; pour 2-1/2 cups cooking juices into a large saucepan. SEASONED PORK ROAST WITH MUSHROOM SAUCE
Recently, my area experienced a blizzard that knocked out power for almost a full day. While I had my gas stove for cooking, I didn't have access to the internet to search for recipes. I had to resort to sifting through my cookbooks. I found this gem in a Junior League cookbook, and after modifying it slightly to suit ingredients I had on hand, Hubby proclaimed it worthy of repeating.

- Preheat oven to 425°F
- Mix all the spices together in a small bowl.
- Coat the roast with the spices, patting to keep on meat.
- Insert a meat thermometer in the roast and place the roast on a rack in a shallow baking pan.
- Roast for 15 minutes.
- Reduce the temperature to 325F and continue to roast until the center temperature registers 150F; about 1 1/2 hours.
- Allow the meat to rest for 10 minutes before carving.
- Serve with mushroom sauce.
- Mushroom sauce: Heat the oil in a medium skillet. Saute the garlic and shallot for 1 minute.
- Add the mushrooms and saute over medium-high heat for 4-5 minutes or until they start to brown.
- Add the wine and 1/2 cup of chicken stock and simmer until most of the liquid evaporates.
- Add the chicken stock and soy sauce.
- Bring to a boil.
- Stir in the cornstarch mixture and simmer for 2 to 3 minutes.
- Season with salt and pepper, if desired.
GARLIC PORK TENDERLOIN WITH MUSHROOM GRAVY
One of my family's favorites. If you aren't a garlic fan, pass on this one. A diet breaker, but worth it. Pork tenderloin are often sold 2 to a bag, so they are perfect for this dish. Serve extra gravy with mashed potatoes.

- Preheat oven to 350 degrees F (175 degrees C).
- Rub salt and pepper over all sides of pork tenderloins; nestle tenderloins next to each other in a 9x13-inch baking dish.
- Melt butter in a saucepan over medium heat; add garlic and mushrooms. Bring to a boil, reduce heat to medium-low, and simmer, stirring frequently, until sauce is fragrant, about 5 minutes. Stir vinegar into mushroom sauce. Pour mushroom sauce over tenderloins, letting sauce seep between the two tenderloins.
- Bake in the preheated oven until tenderloins are lightly pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer tenderloins to a serving dish.
- Drain the drippings, including mushrooms, from the baking dish into a measuring cup, scraping the bottom to get all the brown bits. MY YUMMY ROAST PORK WITH ONION GRAVY
This is my family's favorite way to have roast pork. I change the seasonings slightly a lot. I have been watching them lately in order to post so here it is. Time spent sitting wih rub on is not included.

Steps:
- Mix all the dry seasonings in a small bowl.
- Pierce the meat all over with a fork.
- Rub with seasoning.
- Let stand at room temperature for 2 - 4 hours.
- Spray a roasting pan with cooking spray for ease of cleanup.
- Thinly slice onions and spread out in bottom of pan.
- Place roast on top of onions.
- Mix 1 cup beef stock, 2 tbsp Worcestershire sauce, 1 tsp dijon mustard, 1 tbsp soya sauce, and 1/2 cup port, or sherry in 2 cup measuring cup.
- Drizzle a little of the liquid over onions.
- Keep adding small amounts of liquid to pan every 1/2 hour or so to keep onions moist but allow them to get carmelized.
- Roast @ 350F until internal temperature of 165F is reached.
- Remove meat from pan and tent with foil to allow juices to settle.
- Transfer pan drippings and onions to a sauce pan.
- Mix cornstarch with stock and add with port.
- Cook and stir till nicely thickened.
- Serve sauce over meat.
- Great on mashed potatoes.

- In a skillet, brown pork in butter. Transfer meat to an ungreased shallow 1-1/2-qt. baking dish. Sprinkle with salt and pepper; set aside. My own concoction. I prefer to use self rising flour because it gives a lighter coating, but feel free to use plain/all purpose flour.

Steps:
- Heat olive oil in large fry pan.
- Add onion and cook 5 minutes then add mushrooms and cook 2-3 minutes.
- Add garlic and cook 1 minute.
- In the meantime, mix the self rising flour with salt and pepper to taste in a shallow dish and dredge the chops. Save 1 tablespoon of the flour for later.
- With a slotted spoon, remove the veggies from the pan and set aside.
- Brown the chops about 2-3 minutes each side and remove from the pan.
- Return the veggies to the pan, add the chicken stock and place the chops on top, moving them around so they become immersed in the liquid.
- Bring to a boil then lower the heat. Cover and simmer 10-15 minutes until pork is tender.
- Remove pork to a plate and keep warm.
- Mix the leftover tablespoon of dredging flour with the cold water and stir into the pan until thickened.
- Spoon gravy over chops to serve.
