No Bake Chocolate Coconut Nests image

These no bake chocolate coconut nests are such an easy Easter treat only require three ingredients: shredded coconut, chocolate chips and candy eggs!

1 ½ cups unsweetened shredded coconut
¾ cup chocolate chips (I used Lily's chocolate chips)
24 Cadbury mini eggs (jelly beans or macadamia nuts*)

Steps:

  • Preheat oven to 400°F. Spread the shredded coconut onto a baking sheet for toasting. Place in oven for 5-10 minutes, until coconut is a light golden brown color. Make sure to stay in the kitchen watch the coconut, as it can easily go from toasted to burnt. Alternately, you can toast the coconut in a pan on the stove-top.
  • Let toasted coconut cool on baking sheet while melting chocolate. Add chocolate chips to a microwave-safe bowl and melt in 20-30 second increments until the chocolate is melted. Add cooled coconut and melted chocolate into a large bowl and toss to combine. Use a spoon or ice cream scoop to scoop about 2-3 Tablespoons of the coconut chocolate mixture onto a piece of parchment and shape into a nest. Top each nest with 2-3 eggs. Repeat with remaining ingredients.
  • Let nests set at room temperature or place in the fridge or freezer to speed up the process. Store leftover nests in an airtight container at room temp for 4-5 days or in the fridge for longer storage. If you store them in the fridge, let sit for about 5-10 minutes before eating.

These Easter Rice Krispies Treats look like little nests, filled with robin's eggs. They're a great snack to serve after an Easter egg hunt.

1/4 teaspoon water
2 to 4 drops green food coloring
1/2 cup flaked coconut
3 tablespoons butter (or margarine)
1 (10-ounce) package regular marshmallows (or 4 cups miniature marshmallows)
6 cups Rice Krispies cereal
Garnish: miniature marshmallows
Garnish: jelly beans
Garnish: chocolate eggs

Steps:

  • Coat with cooking spray enough cupcake tins to yield 16 (2-1/2-inch) cups.
  • In a small bowl, stir together water and green food coloring. Add coconut. Stir until coconut is tinted. Spread on a baking sheet to dry.
  • In a large saucepan, melt butter or margarine over low heat. Add marshmallows and stir until they are completely melted. Remove from heat.
  • Add Rice Krispies cereal. Stir until well coated.
  • Using lightly greased hands, divide the warm mixture into prepared cupcake tins . Shape mixture into individual cups. Cool. Remove from pans.
  • Fill cooled nests with coconut, marshmallows, jelly beans or chocolate eggs. These are best when eaten the same day.
  • Follow steps 1 and 2 of the stove top directions above.
  • In a microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth.

4 cups chow mein noodles
1/2 cup light corn syrup
1/2 cup sugar
3/4 cup peanut butter
36 jelly beans

Steps:

  • Break chow mein noodles into small pieces; set aside in large mixing bowl.
  • Combine sugar and corn syrup in large saucepan.
  • Cook on medium heat until the sugar is melted and there are bubbles at the edge of the pan.
  • Add peanut butter and stir until smooth.
  • Pour peanut butter mixture over crunched up noodles; toss until completely coated.
  • Let cool slightly to avoid burns.
  • Butter hands lightly and use approx 1/4 cup mixture to form a compact ball.
  • Make indention in the middle of each ball to resemble a bird's nest.
  • Place on waxed paper and let cool completely.
  • Place 2-3 jelly beans inside each nest.
  • Serve on a bed of green-tinted coconut for extra festive look.

These nests are a homemade version of the Russell Stover candy, and a fun Easter treat.

4 ounces finely chopped milk chocolate, or semi-sweet chocolate, or white chocolate
2/3 cup unsweetened dessicated coconut
Dash green food coloring, optional (see note)
18-24 small jellybeans

Steps:

  • Line baking sheet or large plate with parchment paper. In heatproof bowl over pan of barely simmering water, melt half of chocolate, stirring occasionally. Remove from heat and stir in remaining chocolate until chocolate is completely melted and smooth.
  • Stir in coconut until completely combined. Drop rounded tablespoons of mixture onto prepared pan, keeping shape as round as possible, and spacing 2 inches apart. Using back of 1/2 teaspoon, gently press into center of each mound to create a slight crater. Gently press 3 or 4 jellybeans into center and chill until set, about 15 minutes. I'm always trying to make recipes just a little healthier for my family. These Haystacks are made with Fiber One Bran Cereal instead of chow mien noodles. These are super easy, so cute, and if you don't tell your friends and family they won't even know you gave them their daily dose of fiber in this yummy treat ;o)

11 ounces , butterscotch or 11 ounces semi-sweet chocolate chips
3 -4 cups of fiber one all-bran cereal
1/4 teaspoon canola oil
1 bag of mini robin eggs, jelly beans or 1 bag even peanuts

Steps:

  • Cover a cookie sheet with waxed paper. Melt butterscotch or chocolate chips and oil in a double boiler, saucepan or in the microwave. Stir until smooth. Remove from heat. With a spatula stir in cereal until coated. Drop by spoonfuls of the mixture onto the waxed paper to make a tiny haystack. Top with robin eggs. Refrigerate for 15 minutes. Makes about 24 depending on how big or small you make the stacks.

Just my take on a favorite recipe!! There are so many out there but this is the way I like to make them!! When I made this today I yielded 6 large muffin tins, 6 small, and two left over "hand formed" nests. ;) Total of 14 assorted sizes - depends on your pans what you will yield. Cook time is chill time.

2 cups chocolate chips
2 tablespoons creamy peanut butter
4 cups chow mein noodles
cooking spray

Steps:

  • Heat water in double boiler over medium heat and add chocolate chips to top portion.
  • When chocolate begins to melt, add peanut butter and continue to stir until creamy.
  • Add broken chow mein noodles, stirring until completely coated.
  • Remove from heat and place upper portion on a folded towel to allow cooling while you prepare tins.
  • Spray muffin tins (I liked the large size best, but make both for varied sizes) with cooking spray (such as Pam).
  • Spoon generous amount of mixture into each cup creating a well in the center as you go.
  • Continue until all of mixture is used up.
  • Place jelly beans, M&M's Peeps or other candies for garnish as desired.
  • Chill in refridgerator for at least 1 hour or until chocolate has hardened.
  • Remove from tins and serve or package to gift - should be used within a couple of days.
  • For additional garnish, can be served on dyed green coconut and tied in cellophane bundles with ribbons to give as gifts.
  • Enjoy!

Steps:

  • Melt Chocolate Chips if using.
  • In a bowl add RK and CC or PB.
  • Stir.
  • It may be gooey but cover 24 Baking Cups with it add flower to make less sticky.
  • Cover all the Baking cups fulley make sure you see no white spots.
  • Bake them for 30 secs in the microave.
  • When not gooey place Jelly Beans or Chocolate eggs inches.
  • Serve and Enjoy!
