1/2 cup sour cream (, light is fine)
11 oz mandarin oranges (drained)
20 oz crushed pineapple (drained)
10 oz maraschino cherries (drained, halved, and patted dry)
1 cup sweetened coconut flakes
2 cups miniature marshmallows
3/4 cup chopped nuts (pecans, walnuts, cashews optional)

Steps:

  • Fold sour cream into Cool Whip in a large serving bowl.
  • Fold in remaining ingredients making sure the pineapple, oranges, and cherries have been properly drained.
  • Serve immediately or refrigerate until serving.

1 cup chopped pecans

1 tub (12 oz.) COOL WHIP Whipped Topping, thawed
1 Tbsp. sprinkles

Steps:

  • Mix fruit, pecans, coconut and marshmallows in a large serving bowl.
  • Gently stir in whipped topping until completely incorporated.

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

1/2 cup pecans
3/4 cup heavy cream
1/3 cup sour cream
3 cups mini marshmallows
1 1/2 cups diced pineapple (1/2-inch dice)
1 cup sweetened shredded coconut
One 11-ounce can mandarin oranges in light syrup, drained well
One 10-ounce jar maraschino cherries, stems removed and halved

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
  • Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
  • Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

Number Of Ingredients 14

1 cup sugar
2 Tbs flour
1/2 tsp salt
1 3/4 cup pineapple juice
2 eggs
1 Tbs lemon juice
1 cup tiny pasta- cooked and drained (acini de pepe, or tiny stars both work)
3 (11 oz) cans mandarin oranges- drained
2 (20 oz) cans pineapple tidbits- drained
1 (20 oz) can crushed pineapple- drained
2 cups mini marshmallows
1/2 cup coconut flakes
1 1/2 cups heavy whipping cream
1/4 cup plus 1 Tbs powdered sugar

Steps:

  • Open all three cans of pineapple and drain the juice into a measuring bowl. Use this juice in the following sauce. In medium pot mix together the flour, sugar, and salt. Then whisk in the pineapple juice and eggs. Place over medium heat and stir regularly until mixture has boiled for 1 or 2 minutes and is thick. Remove from heat, stir in lemon juice and allow mixture to cool completely.
  • Once mixture is cooled, cook the pasta then drain and set aside. In large mixing bowl combine the heavy whipping cream and powdered sugar. Beat with an electric mixer until thick, stiff peaks should form. Don't beat until it turns to butter, but you do want it thick.
  • In an extra large serving bowl combine the drained fruit, coconut, pasta, marshmallows. Then pour the cooled sauce over top and fold in the whipped cream. Stir to combine everything. Chill in fridge several hours or over night before serving.

¾ cup white sugar
2 large eggs eggs, beaten
2 tablespoons all-purpose flour
½ teaspoon salt
2 (8 ounce) cans pineapple chunks, drained with juice reserved
1 (11 ounce) can mandarin orange segments, drained
1 cup shredded coconut
4 cups frozen whipped topping, thawed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, 5 to 7 minutes. Drain, transfer to a large bowl, and cool.
  • Whisk the sugar, eggs, flour, salt, and reserved pineapple juice together in a saucepan until smooth. Cook and stir over medium heat until the mixture thickens. Pour over cooled pasta, and toss to coat evenly. Cover and refrigerate overnight, or at least 8 hours.
  • Stir the pineapple chunks and mandarin oranges into the pasta mixture. Mix in the coconut if desired. Stir in the frozen whipped topping until evenly blended. Chill until serving.
