1 pound boneless skinless chicken breasts, cut into 3/4-inch pieces
2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 cup reduced-sodium chicken broth
2 tablespoons sun-dried tomatoes (not packed in oil), chopped
1 can (15-1/2 ounces) cannellini beans, rinsed and drained

Steps:

  • In a small bowl, combine the chicken, rosemary, salt and pepper. In a large skillet coated with cooking spray, cook chicken over medium heat until browned., Stir in broth and tomatoes, scraping any brown bits from bottom of pan. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until chicken juices run clear. Add beans; heat through.

My Greek grandmother made the most delicious Greek chicken and green beans with a lemon-tomato flavor. Whenever I make this slow-cooker recipe, I think of her. The juices from the chicken help flavor the green beans, but the beans can be prepared alone as a side dish without the chicken. -Elizabeth Lindemann, Driftwood, Texas

Number Of Ingredients 12

1 pound fresh green beans, trimmed
2 large tomatoes, chopped
1 medium onion, chopped
1 cup chicken broth
1/4 cup snipped fresh dill
2 to 3 tablespoons lemon juice
2 garlic cloves, minced
4 bone-in chicken thighs (about 1-1/2 pounds)
1 tablespoon olive oil
3/4 teaspoon salt
1/4 teaspoon pepper
Optional: Lemon wedges and additional snipped fresh dill

Steps:

  • Combine the first 7 ingredients in a 5- or 6-qt. slow cooker. Top with chicken. Drizzle with oil; sprinkle with salt and pepper. Cook, covered, on low until a thermometer inserted in chicken reads 170°-175°, 4-6 hours., Preheat broiler. Place chicken on a greased rack in a broiler pan. Broil 4-6 in. from heat until golden brown, 3-4 minutes. Serve with bean mixture and, if desired, lemon wedges and additional fresh dill.

3 tablespoons extra virgin olive oil
4 whole skinless chicken thighs
1 fennel bulb, quartered,cored and thinly sliced crosswise
1 small onion, thinly sliced
2 cloves garlic, thinly sliced
1 (15 ounce) can roman beans or 1 (15 ounce) can pinto beans, preferably goya,drained and rinsed
1 (12 ounce) can whole tomatoes, finely chopped,juice reserved
12 oil-cured black olives, pitted and quartered lengthwise
6 sun-dried tomatoes, thinly sliced
1 tablespoon tomato paste
2 teaspoons rosemary, coarsely chopped
1 large dried red chili (optional)
salt & freshly ground black pepper
1/2 cup water

Steps:

  • Heat the olive oil in a large skillet.
  • Add the chicken and cook over moderate heat until lightly browned, about 4 minutes per side.
  • Transfer to a platter.
  • Add the fennel, onion and garlic to the skillet and cook over moderately low heat, stirring occasionally, until softened, about 10 minutes.
  • Stir in the beans to coat them with the oil, then add the chopped tomatoes with their juice, olives, sun-dried tomatoes, tomato paste, rosemary and chile.
  • Season with salt and pepper and bring to a simmer.
  • Cook over low heat until the juices thicken slightly, about 4 minutes.
  • Add the chicken and water, cover and simmer until the chicken is tender, about 40 minutes; turning the chicken halfway through.
  • Season the stew with salt and pepper and serve.
  • The chicken stew can be refrigerated for up to 2 days.

16 pitted Greek or ripe olives, sliced

2 bone-in skinless chicken thighs
1 tomatoes, chopped
1/2 onion, chopped
8 pitted kalamata olives, halved
1 tablespoon olive oil
1 teaspoon wine vinegar
1 bunch fresh basil, chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 (15 ounce) can white beans, rinsed and drained
1 tomatoes, chopped
1/4 cup chopped fresh herb, your choice
1 teaspoon red wine vinegar
salt and pepper

Steps:

  • For chicken, heat oven to 375°F.
  • Place each chicken thigh on a large square of aluminum foil.
  • Combine remaining chicken ingredients, spoon over chicken.
  • Fold foil up and over chicken sealing edges to form a packet.
  • Bake 5 minutes or until chicken is cooked through.
  • Meanwhile, for beans, heat oil in a medium saucepan over medium heat.
  • Add garlic, cook 2 minutes.
  • Add remaining ingredients, cook 5 minutes or until heated through.
  • Carefully open packets and transfer mixture to 2 serving plates.
  • Serve beans alongside chicken.

1 tablespoon olive oil
1 can (14-1/2 ounces) no-salt-added stewed tomatoes
1 can (14-1/2 ounces) cut green beans, drained
1 cup water
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1-1/2 cups instant brown rice
12 pitted Greek olives, halved
1/2 cup crumbled feta cheese

Steps:

  • In a large nonstick skillet, brown chicken in oil on each side. Stir in the tomatoes, green beans, water, oregano and garlic powder. Bring to a boil; reduce heat. Cover and simmer for 10 minutes., Stir in rice. Return to a boil. Cover and simmer 8-10 minutes longer or until a thermometer reads 170° and rice is tender. Stir in olives; sprinkle with cheese.
