Best-In-The-West Berry Cobbler image

The name says it all! It has a delicious sugar crackle topping that forms by pouring the boiling water over the top before baking. This is my favorite cobbler recipe. Easy, impressive, and versatile. Can use any combination of berries, frozen or fresh.

Number Of Ingredients 9

2 -3 cups berries (blueberries, blackberries, marionberries, or raspberries. I usually use a combo bag of frozen berrie)
3 tablespoons shortening
1 1/4 cups sugar, divided
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 tablespoon cornstarch
1 cup boiling water

Steps:

  • Spread berries in a greased 8 inch square pan.
  • Cream shortening and 3/4 cup sugar well.
  • Sift flour, baking powder, and salt together.
  • Add alternately with milk to creamed mixture. Batter will be thick.
  • Spread batter over berries.
  • Combine remaining sugar and cornstarch together then sprinkle evenly over batter. *NOTE* This is a juicy cobbler but if you want the berries and sauce to be thicker add an extra 1/2 to 1 tablespoon of cornstarch to the remaining sugar.
  • Pour boiling water over all. Do not mix.
  • Bake at 350* for 30-45 minutes, until golden brown and toothpick inserted into middle comes out clean. Serve warm or at room temperature with whipped cream or ice cream if desired. (Doubled recipe fits into a 9x13 pan, but must bake 20-30 mins longer than normal).

1 cup self-rising flour
1 cup sugar
1 cup milk
1 stick melted butter or 8 tablespoons or 1/2 cup
1 can fruit pie filling of your choice (I use the 20 ounce can of fruit pie filling, drained)

Steps:

  • Mix first 4 ingredients and pour into a 9 x 9 baking dish. Drop pie filling by spoonfuls into the filling. Bake at 400 degrees until brown on top about 35 to 40 minutes. Serve with cool whip or ice cream of your choice.

FRUIT:
3 c fruit (apple, peach, pear, berries)
2 Tbsp butter
1 tsp vanilla extract

Steps:

  • 1. Add flour, sugar, baking powder and milk into a medium bowl. Mix together and pour into a buttered pan or baking dish.
  • 2. Add fruit, butter, and vanilla to another pan...sweeten to taste. Bring to a boil. Pour fruit over batter. Bake 450 degrees for 25 minutes.
  • 3. I used a quart of home canned peaches, drained.

1 (29 ounce) can sliced peaches with juice
1 cup self-rising flour
1 cup white sugar
1 pinch salt
1 cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 2-quart baking dish.
  • Stir together peaches and juice with melted butter. Pour into prepared pan. In a small bowl mix flour, sugar and salt. Stir in milk. Pour mixture over peaches.
  • Bake on bottom rack of preheated oven 15 minutes, or until lightly browned, then move to top rack for 20 minutes more. Serve warm.

This cobbler is so very simple, and so very delicious. I am writing this recipe with peaches, however you can use any variety of canned fruit. Hope you enjoy.

1/2 cup butter
1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (20 ounce) can canned peaches, with fruit and juice divided

Steps:

  • Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
  • Mix flour, sugar, and milk.
  • When your butter is melted pour your mixture into pan directly on top of butter.
  • Place peach/fruit slices into pan on top of cobbler.
  • Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
  • Serve hot with ice cream if you wish.
  • I put 8-10 on the servings it depends on the size of the servings.

115g Butter
250g Self-raising flour
400g light brown sugar
475ml milk
250g Frozen raspberries, left to thaw*
250g Cooking apples, peeled cored & choped into small pieces*

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
  • In a medium bowl stir together the flour, sugar and milk; (if batter is a little lumpy thats fine) Pour mixture on top of melted butter in baking pan. DO NOT mix butter and mixture together.
  • Mix apple & raspberries & drop into the middle of the batter; if more crust is desired add less fruit. Bake in preheated oven for one hour or until golden brown
  • *Other combinations of fruit work fine, blackberries in particular.
