My dad loves these stuffed eggs, which are a Southern favorite. I've been cooking since I became a teenager, and this is one of my original recipes.

SAUSAGE-AND-MUSHROOM DUTCH BABY
A Dutch baby is a giant, puffy pancake that deflates within seconds of leaving the oven. Then it's usually topped with something sweet, like a fruit compote or powdered sugar. We decided to bypass the sweet for savory with a classic combo of sausage and mushrooms. Add a big green salad with a sharp vinaigrette for the perfect brunch or dinner.

Steps:
- Position an oven rack in the center of the oven, and preheat to 425 degrees F. Whisk the eggs, milk, flour, 2 tablespoons of the melted butter, 1/2 teaspoon salt and a few grinds of pepper in a bowl or measuring cup until smooth (a few lumps are fine); cover the batter, and refrigerate until needed.
- Cook the sausage in a large nonstick skillet over medium-high heat, breaking up any big chunks with the back of a wooden spoon, until browned and cooked through, about 5 minutes; transfer to a small bowl, and set aside. Lower the heat to medium, and add the remaining 1 tablespoon melted butter to the skillet. Once the butter is bubbling, add the mushrooms, parsley, shallots and some salt and pepper. Cook, stirring occasionally, until the mushrooms are lightly browned and softened, about 5 minutes. Stir in the sausage. Put the skillet in the oven to heat the mushroom-sausage mixture through, 2 minutes. Sprinkle the Gruyere evenly over the mixture, and carefully pour in the batter (make sure that the sausage and mushrooms are evenly distributed over the bottom of the pan). Bake until browned and puffed, 20 to 22 minutes. Serve immediately with salad.

- Stamppot (Dutch National Dish) It’s steamy, it’s hearty, and it’s actually made a whole bunch of different ways. However, this stamppot recipe is the most popular version (and my personal favorite).
- Poffertjes (Dutch Mini Pancakes) Yes, they’re mini pancakes. But really, they’re so much more than that! They’re fluffy, sweet, and full of good vibes.
- Traditional Dutch Split Pea Soup (Snert) Its name is funny, and its appearance is… less than appetizing. But don’t let its looks fool you – snert is absolutely delicious.
- Dutch Hutspot. You know winter is coming when the hutspot comes out! It’s a type of stamppot, but it is a very specific type. Made with potatoes mashed with carrots and onions, it’s well-seasoned and loaded with butter and milk.
- Hachee (Dutch Beef and Onion Stew) I have to say it… the Dutch will never win awards for plating and presentation. A lot of Dutch food just isn’t pretty.
- Kaassoufflé. Kaassoufflé is one of my absolute favorite Dutch treats. It translates to “cheese soufflé,” and it’s literally fried cheese. Well, it’s fried cheese wrapped in puff pastry and breadcrumbs.
- Broodje Rookworst. In its most basic form, broodje rookworst is a smoked sausage and sauerkraut sandwich. It’s almost like a hot dog and almost like a British sausage sandwich.
- Bitterballen. Bitterballen are fried meaty balls of goodness… just don’t ask what’s in them. At least, that’s the joke in the Netherlands. But I promise they’re totally delicious (and safe to eat).
- Ontbijtkoek. Ontbijtkoek is a little breakfast cake that you don’t typically eat for breakfast. However, it IS often served with coffee, and I know you’ll love it!
- Homemade Dutch Frikandellen. The Dutch are masters of mystery meat. So today, let’s unravel at least one mystery for you: the mystery of the frikandel.
