Rhubarb Kuchen recipe from my grandmother. Its a lovely dessert that is a blend of tart, tangy rhubarb and a thick, buttery almond crust.

3/4 cup butter, softened
1 1/4 cups granulated sugar
1/3 cup plain yogurt
1 egg yolk
1 teaspoon grated orange rind
2 cups all-purpose flour
1/2 teaspoon baking soda
1 pinch salt
3/4 cup sliced almonds
5 cups chopped rhubarb
1 tablespoon orange juice
1/3 cup strawberry jelly

Steps:

  • Cream butter with 3/4 cup of the sugar.
  • Beat in yogurt, egg yolk and orange rind.
  • Combine flour, baking soda, salt and 1/2 cup of the almonds.
  • Gradually stir into butter mixture until mixed.
  • Using wet spatula or hands, spread dough evenly onto bottom and 3/4 inch up side of greased 10-inch springform pan.
  • Toss rhubarb with remaining sugar and orange juice.
  • Arrange evenly over the dough.
  • Sprinkle remaining almonds around the edge.
  • Bake in 350 F or (180 C) oven for 45-50 minutes or until pastry edge is golden brown and rhubarb is tender.
  • Let cool on rack.
  • Remove side of pan.
  • To make Glaze: In small saucepan, bring strawberry jelly and 3 tbsp of water to a boil while whisking constantly.
  • Reduce heat and boil gently whisking often for approx.
  • 3 minutes or until thickened.
  • Brush over rhubarb and sides of cake.
  • Let stand to cool for 5 minutes.

1 pinch salt
2 tablespoons margarine or 2 tablespoons butter
1 egg, beaten with
2 tablespoons milk
1 (85 g) strawberry Jell-O gelatin dessert
5 cups sliced rhubarb
1/3 cup sugar
3 tablespoons flour
1/3 cup flour
2/3 cup sugar
3 tablespoons margarine or 3 tablespoons butter

Steps:

  • Pre-heat the oven to 375.
  • THE BASE: Cut margarine or butter into dry ingredients until it looks like coarse crumbs. Add egg & milk mixture; stir till moist. Pat evenly on bottom and 1" up the sides of 9x9" pan.
  • THE MIDDLE PART: Mix all the ingredients together and turn into crust lined pan.
  • TOPPING: Cut together and sprinkle evenly over the rhubarb.
  • Bake for 45 minutes; cool and serve with ice cream or whipped cream.

I had some Rhubarb in the refirigrator, and had no idea of what to fix with it, until I heard about the Ready. Set. Cook! Reynolds Wrap Recipe Contest. I decided to take the challenge. Along with the Reynolds Wrap, I picked four ingredients from the list, and spent the whole night working on this recipe. The next morning my wife asked me what I had come up with. I couldn't tell her what it is; I just had to cut her a piece, and let her tell me what is. She liked it so much that she only allowed me three small slices.

2 (15 ounce) cans pear halves
2 cups rhubarb
1/8 cup water
1 cup sugar (divided)
2 tablespoons lemon juice, fresh
Reynolds Wrap Foil
2 3/4 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, cool not cold and cut into 6 patties
1 large egg
1 cup heavy cream
2/3 cup cake flour
2/3 cup sugar
2 tablespoons unsalted butter, cold
2 tablespoons heavy cream
1/2 cup almonds, finely chopped

Steps:

  • Drain the pears into a large colander and set aside.
  • Peel and wash the rhubarb, then slice in half length wise, and cut into 1-inch pieces. Place the rhubarb in a large saucepan, and add the water, lemon juice and 3/4 cup of the sugar. Over medium heat, bring to a boil, stirring frequently, cooking the rhubarb until completely softened. Continue cooking until the mixture just starts to thicken. Set aside to cool on a wire rack, while preparing the rest of the recipe.
  • Using Reynolds Wrap® Foil, line a 10-inch/5-quart Dutch oven with two, 24-inch strips and lay across each other forming an "X". Using cake flour; grease and flour the aluminum foil. The aluminum foil is used as handles to lift the Kuchen from the Dutch oven. Also makes cleaning the Dutch oven easier.
  • Set the oven rack in the middle position, and preheat the oven to 375º.
  • Place the flour, baking powder, salt and the remaining sugar in an electric stand mixer bowl. Attach the wire whip, and at speed 1, mix for 15 seconds to combine the ingredients.
  • Attach the flat beater, and at speed 1, add the butter patties one piece at a time, mixing until you have small crumbs.
  • In a small bowl, whisk together the egg and cream, and add to the crumb mixture. Attach the dough hook, and at speed 2, mix until the dough clings to the hook.
  • Pour the dough into the Dutch oven. Arrange the pears, cut side down over the dough. Spoon the rhubarb over the peaches.
  • For the topping, in a medium size bowl, whisk together the flour and sugar. Using a pastry blender, cut in the butter until the mixture resembles fine crumbs. Add the cream and almonds, and gently mix with a fork until moist crumbs form. Sprinkle over the pears and rhubarb.
  • Cover the Dutch oven and bake for 15 minutes, remove the lid and bake for 30 to 35 minutes, or until lightly browned.
  • Cool on a wire rack for 15 minutes. Then gently remove the Kuchen from the Dutch oven, using the aluminum foil as handles, and set on a wire rack to cool.
  • Place the Kuchen on a cake stand, and serve.

Pastry for single-crust pie (9 inches)
3 cups chopped fresh or frozen rhubarb
2 cups fresh raspberries
3/4 cup sugar
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 egg, lightly beaten
1/4 teaspoon ground nutmeg
TOPPING:
1/3 cup all-purpose flour
1/4 cup packed brown sugar
3 tablespoons butter, melted

Steps:

  • Line a 9-in. pie plate with pastry. Trim to 1/2 in. beyond edge of plate; flute edges. In a large bowl, combine the rhubarb, raspberries, sugar, flour, vanilla and egg. Pour into crust; sprinkle with nutmeg. 3 pears, fresh, firm, peeled, cored and sliced
1 cup strawberry, small, fresh, halved
1/2 cup rhubarb, fresh, finely sliced

1/2 teaspoon cinnamon, Saigon
1 sheet puff pastry
vanilla sugar (President Choice Sugar & Vanilla Grind Blend, garnish)

Steps:

  • Preheat oven to 425 degrees.
  • Use parchment paper on cookie sheet.
  • Start to prepare your fruit.
  • Peel, core and slice your pears.
  • Wash your berries and cut in halve.
  • Wash and slice your rhubarb, very thin.
  • Saute pears and rhubarb in butter for 1 - 2 minutes.
  • Remove from heat to cool.
  • Add lime zest, sugar and cinnamon, mix gently.
  • Now add the fresh strawberries gently into the mix.
  • Roll out the pastry to make 12 x 10" rectangle, on a floured surface.
  • If necessary, drain the cooled fruit.
  • Place the fruit in the middle of the pastry, horizontally, starting within ½ inch of the top and bottom edges.
  • Brush the melted butter on the edges of the pastry and fold over fruit.
  • Place seam side down on prepared cookie sheet.
  • Slash the top of the strudel every 2 inches.
  • Brush the strudel with the remaining melted butter and sprinkle on vanilla sugar.
  • Bake in a 425 degree oven for 30 - 35 minutes, until puffed and golden brown.
  • Allow to cool to room temperature and sprinkle with powdered sugar before cutting.
  • Serve plain or with ice cream, whipped cream, Crème Anglais or fresh clotted cream.

1 whole turkey, cleaned with neck and giblets removed (12-20 lbs)
1/4 cup seasoning (your preference)

Steps:

  • Select some sort of stake (hammered into the ground) or more robust steel/cast iron/ whatever "stand" that can hold the turkey sort of like standing on its butt (would be interesting to do this with the "beer-butt" cooking method) .
  • Place a (new) stainless steel garbage can over the bird (you could use cast iron, but if using galvanized metal, burn it out first).
  • Around the sides of the can, bank with 10-12 lbs of charcoal briquettes, (fully grayed up) and cover the top of the can over with a layer or two of burning briquettes.
  • Allow to cook for 1.5 hours (for a smaller bird) to 2 hours for a larger one, periodically "dusting" the briquettes and re-banking them. (No "peeking" obviously!) .
  • On conclusion of the cooking period, sweep away the remaining embers and ash, and very carefully (anticipating a pretty vicious blast of hot air and steam) and test your bird that the required parameters of 160 in the breast, 180 in the thighs (okay, you can do it 10* less, as it will convect up that much, no point in it being too dry).
  • If you want, there can be all sorts of "tweaks" -- you can in fact "beer butt" it, with a large soup can 3/4 full of onion soup/beer/cranberry juice/herbs/spices, pick you own poisons! You can do a rub, you can "brine" the bird, you can place cake tins of water for a "moister cook", you can toss in some wood chips (willow, alder, maple, hickory) that you cause the trash can to be a "smoker", you can inject it, you can stuff oils and herbs under the skin, fill it up with garlic cloves, stand it up a bit higher and stick in 6" of corn silks or even hay (using a bit of water with the latter) and get all sorts of different, but wonderful results.
  • Of course, if, (incredibly!) your bird is "seriously underdone" you have only to cover it over with the can and stoke up the coals again -- .

1 1/2 tablespoons cornstarch
1 refrigerated pie crust
1 cup whipping cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla
Reynolds Wrap Foil
1 tablespoon butter, softened
2 tablespoons brown sugar
1 tablespoon honey
1/4 cup quick-cooking oatmeal
1/4 cup almonds, chopped
1 tablespoon honey
1/4 teaspoon very hot water

Steps:

  • Remove the piecrust from the refrigerator 20 minutes prior to beginning.
  • Preheat oven to 425 degrees F.
  • In a medium size bowl toss together the pears, sugar, ginger, cinnamon, nutmeg, lemon juice, lemon zest and corn starch. Set aside.
  • In a small mixing bowl mix together the topping ingredients and set aside.
  • Line a baking sheet with Reynolds Wrap Non-Stick foil.
  • Unroll the piecrust on the Non-Stick foil.
  • Stir the pear mixture, then, using a slotted spoon pile the mixture in the center of the piecrust, leaving approximately 2 inches around the edge. Leave the juice in the bowl for now.
  • Carefully fold the edges of the piecrust onto the pears, pinching the seams to ensure that they are sealed. The crust will not completely cover the pears, the center will be open.
  • Carefully pour the reserved pear juice onto the exposed pears, make sure there is no juice on the outside of the crust.
  • Distribute the topping on the exposed pears.
  • Bake at 425 degrees until crust is golden brown, 25 to 30 minutes.
  • While the tart is bakes, pour the cream into a large mixing bowl and whip until peaks start to form. Add vanilla and confections sugar and beat until stiff peaks form. Do not over beat, otherwise you'll have sweet butter ;=).
  • Once done, remove tart from the oven and brush the pastry with the honey and water mixture.
  • Cool at least 20 minutes.
  • Slice and top each dish with whipped cream before serving. ENJOY!
