ASPARAGUS SOUP

1 tablespoon olive oil
1 shallot, minced
Kosher salt and freshly cracked black pepper
3 bunches pencil asparagus, trimmed and cut into 1 1/2-inch pieces
1 cup thawed, frozen peas or 1 cup shelled fresh English peas (about 1 pound unshelled)
1/4 cup dry white wine
2 cups lightly packed baby spinach
Four 1/8-inch slices day-old sourdough bread (about 3 ounces)
Olive oil, for drizzling
1 1/2 tablespoons chopped fresh thyme
Kosher salt and freshly cracked black pepper
One 3-ounce wedge Parmesan
Creme fraiche
Finely chopped fresh chives
Fresh cilantro leaves
Lime wedges
Good-quality extra-virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • For the soup: In a large soup pot or Dutch oven, bring the oil to medium heat. Add the shallot and salt and pepper to taste. Sweat until translucent, about 1 minute, being careful not to brown. Add the asparagus to the pot and sweat until beginning to soften, about 3 minutes. Add the peas and sweat another minute. Pour in the white wine and deglaze the pot. Add 5 cups water and continue simmering until crisp-tender, another 10 minutes. Remove from the heat and set aside.
  • Working in batches (and carefully as the liquid will be hot), puree the soup until smooth in a blender. In the last batch, add the baby spinach and puree; this will give the soup a vibrant green color. Strain back into the pot through a fine mesh sieve. Return to a simmer until slightly thickened, 4 to 6 minutes. Season with salt and pepper. Remove from the heat.
  • For the Parmesan breadcrumbs: While the soup simmers, pulse the bread in a food processor until you have very coarse crumbs. Once processed, transfer the breadcrumbs to a medium mixing bowl. Drizzle with a generous amount of olive oil. Toss with the thyme. Season mixture with salt and pepper. Transfer to a parchment-lined sheet tray. Using a grater, finely grate a few tablespoons of Parmesan over the breadcrumbs. Place into the oven and bake until golden and crispy, 7 to 10 minutes. Remove from the oven and cool.
  • To serve: Ladle the soup into shallow serving bowls. Sprinkle evenly with a few teaspoons of Parmesan breadcrumbs and top with a dollop of creme fraiche. Garnish with chopped chives, cilantro leaves, a squeeze of a lime wedge and a splash of extra-virgin olive oil. Serve immediately.

3 large eggs
⅔ cup milk
½ cup finely grated Parmigiano-Reggiano cheese (not packed)
½ cup packed all-purpose flour
1 teaspoon lemon zest
¾ teaspoon kosher salt
Freshly ground black pepper to taste
1 pinch cayenne pepper
1 tablespoon olive oil
6 strips bacon, cut into 1/2-inch pieces
1 cup trimmed fresh asparagus, cut into 1/4-inch pieces

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • Place eggs in mixing bowl. Add milk, grated Parmigiano-Reggiano cheese, flour, lemon zest, salt, black pepper, and cayenne pepper. Whisk together until completely combined.
  • Heat 2 teaspoons olive oil in cast-iron skillet over medium heat. Add bacon and cook until fat is rendered out and bacon begins to crisp up. Add asparagus and raise heat to high. Cook and stir about 1 minute.
  • Pour batter into pan in a circular motion.
  • Bake in preheated oven until browned and puffed, 12 to 13 minutes.

1/2 cup whole milk
2 Tbsp. unsalted butter, cut into pieces
Crème fraîche, smoked salmon, baby greens, and lemon wedges (for serving; optional)

Steps:

  • Preheat oven to 425°F. Whisk flour, sugar, thyme, salt, pepper, and 2 Tbsp. Parmesan in a small bowl.
  • Process eggs and milk in a blender until light and frothy, about 2 minutes. Add flour mixture and pulse to combine.
  • Heat a 10" cast-iron skillet over medium-high. Once hot, melt butter and swirl to coat skillet. Pour batter into hot melted butter in skillet. Transfer to oven and bake until puffed and golden brown, 12-15 minutes.
  • Sprinkle Parmesan over pancake before serving with crème fraîche, smoked salmon, baby greens, and lemon wedges (if using).
  • Do Ahead: Batter can be made 2 days ahead. Transfer to a medium jar and chill. Shake jar before cooking.

1 1/2 to 2 pounds asparagus, trimmed
6 tablespoons butter, or more
4 eggs
Salt and pepper
8 thin slices dry-cured ham, like prosciutto
12 or 16 paper-thin slices Parmigiano-Reggiano

Steps:

  • Poach or steam asparagus in or above boiling salted water until it is bright green and just tender, 3 to 7 minutes, depending on its thickness. Meanwhile, put 4 tablespoons butter in a small saucepan over low heat.
  • Place at least 2 tablespoons butter in a large skillet, preferably nonstick, and turn heat to medium. When butter in skillet melts, crack eggs into it. Cook, sprinkling with salt and pepper, until whites are no longer runny, about 5 minutes.
  • Drain asparagus and divide among 4 plates. Turn off heat under butter in saucepan the moment it browns; if eggs are not quite ready, keep butter warm over low flame.
  • Top asparagus with a portion of ham, then a fried egg, then some browned butter, and finally a few slices of the cheese. Serve.

4 tablespoons unsalted butter
3 large eggs
3/4 cup milk
3/4 cup flour
1/4 teaspoon salt
1/4 teaspoon vanilla
Butter
1 lemon
Powdered sugar

Steps:

  • Preheat oven to 425 degrees. Cut up butter into small pieces, and place in cast iron Dutch oven or skillet without the lid on. Place Dutch oven in hot oven. Prepare batter in a blender by placing eggs in and blending until foamy. Add milk, flour, salt and vanilla and blend until combined. When butter has fully melted in skillet, carefully remove hot Dutch oven from oven and swirl butter to coat pan. Quickly pour batter in skillet and place back in hot oven. Bake for about 25 minutes, or until puffed and lightly browned. Remove from oven and cut into wedges and place on serving plates. Cut tablespoon pats of butter, and place a pat on each serving. Cut lemon in half, and squeeze juice over wedges and sprinkle liberally with powdered sugar. Serve immediately.

2 medium leeks (white portion only), cut into 1/4-inch slices
2 teaspoons kosher salt, divided

1/2 pound sliced baby portobello mushrooms
1 pound fresh asparagus, trimmed and cut into 3-inch pieces
1 log (4 ounces) fresh goat cheese
1 large egg, lightly beaten

Steps:

  • Place flours and salt in a food processor; pulse until blended. Add butter; pulse until butter is the size of peas. While pulsing, add just enough ice water to form moist crumbs. Shape dough into a disk. Cover and refrigerate 1 hour or overnight., In a large skillet, heat 1 tablespoon butter over medium heat. Add leeks and 1 teaspoon salt; cook and stir until softened, 5-7 minutes. Reduce heat to medium-low; cook until deep golden brown, 25-30 minutes, stirring occasionally. Remove from pan to a large bowl., In the same skillet, heat oil and remaining 1 tablespoon butter over medium heat. Add mushrooms and remaining 1 teaspoon salt; cook and stir until reduced by half and crispy, about 20 minutes. Add to bowl with leeks., Meanwhile, in a Dutch oven, bring 8 cups water to a boil. Add asparagus; cook, uncovered, until the stalks turn bright green, 2-3 minutes. Remove asparagus and immediately drop into ice water. Drain and pat dry; add to bowl with leeks and mushrooms., Preheat oven to 400°. On a lightly floured surface, roll dough into a 12-in. circle. Transfer crust to a parchment-lined baking sheet., Crumble goat cheese over top of vegetable mixture. Spoon over crust to within 2 in. of edge. Fold crust edge over filling, pleating as you go and leaving a 6-in. opening in the center. Brush folded crust with beaten egg. Bake until crust is golden brown and cheese is melty, 30-35 minutes. Let stand 5 minutes before cutting. Serve warm or at room temperature.

  • The Westlandse druif (PGI). This Dutch grape actually has its own theme park in the Westland area in the province of Zuid Holland. Anyone who’s ever flown into Schiphol at night will have seen the light given off by the green houses there which may very well have housed, at that very moment, a bumper crop of Westlandse druiven which by all accounts are sweet and delicious.
  • Brabantse Wal asparagus (PDO). Dutch white asparagus, also called ‘the white gold’ is grown in the area of Bergen op Zoom in Brabant. Apparently its unique flavour is a result of the pure groundwater that runs underneath the Kalmhoutse heath and the salty sea wind blowing in from Zeeland.
  • Kanterkaas (PDO). This cheese comes from Friesland and the Westerkwartier, which is part of Groningen province. Made from cow’s milk it comes with either cloves or cumin.
  • The Opperdoezer Ronde (PDO) is a potato which can only be grown around the town of Opperdoes in the province of Noord-Holland. In spite of its knobbly, pale appearance it is a delicate flower of a potato with a thin skin which has to be harvested and sorted by hand.
  • The Meerlander (PDO) is another protected potato, developed and grown in the Haarlemmermeer in Noord Holland. The taste, according to potato connoisseurs is ‘mildly velvety, somewhat dry but with a lot of body’.
  • Gouda Holland and Edam Holland (both PDO). We are lumping these two together because there are an awful lot of cheeses on the list and because these two had a battle on their hands with Germany which produces cheeses labelled Gouda and Edam as well.
  • Jenever (PGI), or Dutch gin, can only be produced in the Netherlands and Belgium. The most popular drink during the 1960s and 70s, its consumption has now plummeted to record lows.
  • Suikerstroop (TSG), a thick sugary syrup, is a traditional Dutch product used to put on sandwiches and pancakes. It also goes by the name of pannenkoekenstroop or simply stroop.
  • Basterdsuiker (TSG), a type of caster sugar has also made it onto the list; its production process is apparently unique to the Netherlands. ‘ Basterd’ comes from ‘bastard’ as the stuff is made with a waste product of sugar production mixed with suikerstroop, sugar, glucose, fructose and a little acid.
