DUTCH APPLE PIE COOKIES

Dutch Apple Pie Cookies image

The perfect little three bite dessert with a flakey pie crust, cinnamon apple filling, and a sweet buttery crumb topping!

Provided by Julie

Time 1h20m

Number Of Ingredients 12

1 roll of refrigerated pie dough (I used Marie Callender's)
5 small Granny Smith apples, peeled, cored, and diced finely
1/4 cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoons lemon juice
1 tablespoon cornstarch
2 1/4 cups all purpose flour
2/3 cup brown sugar
2/3 cup granulated sugar
2/3 cups old fashioned oats
pinch of salt
3/4 cups plus 2 tablespoons (14 tablespoons total) butter, melted

Steps:

  • Preheat oven to 350 degrees. Spray the wells of a standard size muffin tin with nonstick spray. Roll out dough onto a lightly floured surface, and cut out circles about 2 inches in diameter. Gather and re-roll unused dough and cut additional circles. I used the rim of a small plastic cup. Place the circles in the bottom of each muffin well.
  • Add the apples, sugar, cinnamon, lemon juice, and cornstarch to a medium saucepan. Cook on medium heat, stirring occasionally for about 5-10 minutes until the apples have softened slightly and the juices begin to thicken. Remove from heat.
  • Add about one tablespoon of the apple filling on top of each circle of pie dough.
  • In a medium bowl, mix flour, brown sugar, granulated sugar, oats, and salt. Add melted butter and mix until well incorporated.
  • Add a heaping tablespoon of the streusel topping to each muffin well, and gently pat it down over the apples.
  • Bake for 17-19 minutes. **Allow the apple pie cookies to cool in the muffin tin for at least 10-15 minutes before removing.** I like to use a dull knife to gently remove them from the tin. Cool on a wire rack.

DUTCH APPLE PIE

Dutch Apple Pie image

The difference between classic apple pie and a Dutch apple pie recipe is all in the delicious crumb topping. Dutch apple pie topping is made with butter, Gold Medal™ flour, brown sugar and granulated sugar, and you'll know when it's ready to come out of the oven when the crumb toppings are a deep golden brown. Instead of a second pie crust, enjoy a generous blanket of sweet streusel crumbs-sprinkled over a tender spiced apple filling.

Time 2h45m

Yield 8

Number Of Ingredients 13

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
8 cups sliced cored peeled apples
1/2 cup granulated sugar
1/4 cup Gold Medal™ all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice
1/2 cup unsalted butter, softened
1 cup Gold Medal™ all-purpose flour
2/3 cup packed brown sugar
1 tablespoon granulated sugar

Steps:

  • In medium bowl, mix 1 cup flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary). Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap, and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 400°F. On surface sprinkled with flour, using floured rolling pin, roll pastry dough into circle 2 inches larger than 9-inch pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired.
  • In large bowl, toss Filling ingredients. Pour into pie plate, mounding apples toward center.
  • In medium bowl, use pastry blender or fingers to mix butter, 1 cup flour and the brown sugar until a crumb forms. Sprinkle evenly over top of pie. Sprinkle 1 tablespoon granulated sugar on top.
  • Bake 45 to 55 minutes or until pie crust and crumb topping are deep golden brown and filling begins to bubble. Transfer to cooling rack to cool.

EASY DUTCH APPLE PIE

Easy Dutch Apple Pie image

The first apple pie I ever made; easy and simple directions. And real apples, no canned apple pie filling! I made this for dessert when company was over and I figured if I screwed up, I could always pass it off as apple cobbler with ice cream served over it, but it came out great, looked and tasted like a real apple pie!

Time 2h2m

Yield 24 bars

Number Of Ingredients 20

1 1/2 cups unbleached all-purpose flour
3/4 teaspoon salt
1/2 cup unsalted butter
1 large egg, beaten
2 tablespoons ice water
2 tablespoons unbleached all-purpose flour
1/2-3/4 cup sugar (depends on tartness of apples and personal preference)
nutmeg (a pinch)
1/2 teaspoon cinnamon
1/4 teaspoon salt
5 -6 cups peeled cored diced apples (Granny Smith)
2 teaspoons vanilla extract
1/2 cup heavy cream
1 1/2 cups unbleached all-purpose flour
3/4 cup sugar
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1/2 teaspoon almond extract

Steps:

  • Preheat oven to 425°; lightly grease a 13x9 inch pan.
  • Crust: in a mixing bowl, whisk together the flour and salt; using a pastry blender, cut in the butter.
  • Drizzle the beaten egg over the mixture; toss lightly to combine.
  • Add the ice water 1 tablespoons at a time, stirring gently until the dough starts to clump together; grab a fistful; if it sticks together easily, you have added enough water.
  • Roll the dough into a generous rectangle to fit your pan.
  • Place the dough in the pan; prick it all over with a fork; bake it for 10-12 minutes, until it is set and barely starting to harden.
  • Filling: in a bowl, whisk the flour, sugar, spices, and salt together; add in the apples, tossing to coat.
  • Stir in the vanilla, then the cream; spread the filling over the crust.
  • Topping: in a mixing bowl, whisk together the flour, sugar, salt, and cinnamon.
  • In another bowl, combine the melted butter and extracts; pout over the flour mixture.
  • Stir until the butter is absorbed and the mixture forms fairly even crumbs; sprinkle over the filling.
  • Bake for 15 minutes; decrease temperature to 350°; bake for 30-35 minutes, or until the topping is brown and the filling is bubbly.
  • Remove from oven and cool on a rack; let them cool to lukewarm before cutting.
