ORANGE STREUSEL LOAF CAKE
This yummy cake is my potluck specialty and everyone absolutely loves it. It comes from a recipe on the side of the Duncan Hines Orange Supreme cake mix. It is one of the most moist and tastiest cakes I've ever eaten. The orange cake mixes can sometimes be hard to find so another suggestion would be to use the Tropical cake mix. Either way, mmm-mmm good!!!

Steps:
- Preheat oven to 350°.
- Grease and flour two 9x5x3-inch loaf pans.
- For streusel topping, place 2 tablespoons cake mix, brown sugar, butter or margarine and cinnamon in medium bowl.
- Mix well with fork until crumbly.
- Stir in pecans, if using.
- Set aside.
- For cake, combine remaining cake mix, pudding mix, eggs, sour cream and oil in large bowl.
- Beat at medium speed with electric mixer for 3 minutes (do the entire 3 minutes).
- Pour batter into pans.
- Sprinkle with streusel mixture.
- Bake for 50-60 minutes or until toothpick inserted in center comes out clean.
- Cool in pans 15 minutes.
- Remove loaves from pans and let cool completely.
- For glaze, combine confectioners' sugar and milk or orange juice in a small bowl.
- Stir until smooth.
- Drizzle over cooled loaves.

Steps:
- Cake mix type: Duncan Hines without pudding.
- Preheat oven at 325°F.
- Grease and flour 10-inch tube pan; sprinkle 1 cup of chopped pecans over bottom of prepared pan.
- Mix ingredients and pour into cake pan. Bake 1 hour and leave in cake pan when finished.
- For Glaze:.
- Cook all together and add rum last.
- Punch holes in cake while it's still in the cake pan and pour glaze in and onto bottom of the cake.

- Dissolve jello in 1 cup hot water.
- Let cool.
- Mix everything in bowl.
- Add eggs 1 at a time.
- Pour into greased and floured loaf pans.
- Bake at 350 degrees 40-45 minutes.
- Cool 5 minutes.
- Mix icing sugar and lemon juice.
- Prick with size 8 knitting needle and glaze.
- Makes 2 9x5 loaf pans.

COPYCAT DUNCAN HINES BOXED CAKE MIX
This cake tastes like a boxed white cake mix only better, it has never failed me yet, it is a recipe that I use over and over again for the *perfect* white cake, and so easy to make too! really anything can be addded to this cake, tiny chocolate chips, nuts, dried fruit, add in some food colouring for a pastel coloured cake with matching frosting, this makes a wonderful birthday cake!--------- * NOTE* as one reviewer stated they omitted the salt, omitting the salt will change the texture of this cake completely, so please do *not* omit, using butter-flavor Crisco is acceptable but will alter the taste somewhat but not the texture ;-)

Steps:
- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking pan, and line bottom of pan with parchment paper.
- In a medium or large bowl, with an electric mixer, cream the sugar and shortening until no granules remain (about 4 minutes).
- Add in eggs and almond extract (if using); beat very well for 5 minutes on high speed.
- In a small bowl sift together flour, baking soda and salt.
- Add to the creamed mixture along with the buttermilk; mix well until blended (about 2-3 minutes).
- Transfer to a prepared baking pan.
- Bake on second-lowest oven rack for 30-35 minutes (check for doneness after 25 minutes, this cake bakes fast!).

- Preheat oven to 350°F. Spray 9x5-inch loaf pan with baking spray. Cake will not fit in a smaller pan so if your loaf pan is not 9x5-inch, bake in a Bundt pan instead.
- Beat cake mix, water, oil and eggs in large bowl with a handheld electric mixer on low speed 30 seconds. Beat on medium speed for a full 4 minutes.
- Pour into pan. Tap pan on counter a few times to release air bubbles. Bake in center of oven 45 to 50 minutes for loaf pan or 35 to 40 minutes for Bundt pan, until toothpick inserted in center comes out clean. Do not open oven door while baking, it may cause the cake to sink in the center. Cool on wire rack 20 minutes, remove from pan and cool completely.
- ICING: Whisk together confectioners’ sugar, orange juice and butter in small bowl. Pour over cooled cake. Let stand 10 minutes, until glaze is hardened. Slice and serve.
