Serve this nutty spice mix with toasted pitta and olive oil or use in a dish to add some Egyptian spice

Steps:
- Heat oven to 180C/160C fan/gas 4. Mix everything together in a bowl then spread over a baking tray and cook for 8-10 mins until the dukkah looks toasted.
- Tip into a food processor and pulse a few times just until the nuts are chopped not smooth.

- Rub the beef with olive oil and sprinkle all over with 2 teaspoons kosher salt and 1 teaspoon freshly ground black pepper. Heat a saute pan over high heat and sear the filet on all sides, turning it with tongs. Wrap the beef in plastic wrap and freeze for 2 hours, turning once to freeze evenly.
- Meanwhile, place the egg yolks, mustard, garlic, anchovies, lemon juice, 2 1/2 teaspoons kosher salt, and 1 teaspoon pepper in a food processor fitted with the steel blade and process for 15 seconds. Combine the 3/4 cup olive oil and the canola oil in a glass measuring cup. With the food processor running, slowly pour the oils down the feed tube in a thin stream. Add the grated Parmesan and pulse to combine.
- Remove the string from the beef and slice it very thin with a sharp slicing or smoked salmon knife. Place 5 slices on each dinner plate in a single layer. Drizzle the beef generously with the dressing and (in this order) sprinkle with the capers, kosher salt, pepper, arugula, shaved
- Parmesan, and sea salt. Serve at room temperature with a pitcher of extra dressing on the side.

- Drizzle the beef with 1 tbsp olive oil and season well. Heat a frying pan until smoking hot, add the beef and sear on all sides for 2-3 minutes until the edges are golden brown but the middle is still very pink. Remove from the heat and leave to cool for 1 minute. Rub with a little more olive oil and roll in the dukka spice mix, pressing to ensure it is well covered. Wrap tightly in cling film to make a neat cylindrical shape (like a Christmas cracker), then wrap again in foil. Put in the freezer for 30 minutes to set the shape and make it easier to slice thinly.
- When ready to serve, unwrap the beef, then, using a very sharp knife, finely slice into thin rounds. If the slices are a little too thick, place them on a chopping board and flatten using the back of a knife. Place 3-4 slices onto each of 4 plates, then scatter with the Parmesan shavings and rocket leaves and drizzle with the lemon oil. Season, sprinkle over a little extra dukka, then serve.
