Yield 12 dessert dishes, 8 serving(s)

Number Of Ingredients 11

1/2 cup raisins
1/2 cup brandy or 1/2 cup water
1/4 cup butter or 1/4 cup margarine, melted
8 -10 slices dry bread
1 cup packed brown sugar
1 teaspoon cinnamon
1/4 teaspoon allspice
3 eggs
1/4 teaspoon salt
1 teaspoon vanilla

  • Melt butter or margarine.

  • Drain raisins, place 1/2 raisins over bread crumbs.
  • Repeat layers.

  • Beat for 1 minute.
  • Add milk slowly.
  • Pour over mix in dish.
  • Let stand for 5 minutes.
  • Sprinkle reserved sugar mix on top.
  • Bake at 325F for 45 to 50 minutes.

BREAD PUDDING WITH SOUTHERN BOURBON SAUCE

Bread Pudding with Southern Bourbon Sauce image

Provided by Food Network

Categories     dessert

Time 1h15m

Yield 6 servings

Number Of Ingredients 13

3 cups stale French bread, cut in 3/4-inch cubes
2 cups milk
2 eggs
1 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
4 tablespoons butter, melted and slightly cooled
1/2 cup sultana raisins
2 egg yolks
1 stick butter, not margarine
1 cup sugar
1/3 cup bourbon whiskey, to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Place stale bread in a bowl with milk and squeeze the bread with your hand until well saturated with milk.
  • With an electric mixer on high speed in a separate bowl, beat eggs with sugar until thick and pale. Stir in the vanilla, cinnamon, nutmeg, butter and raisins to the egg mixture. Add the soaked bread crumbs to the egg mixture and stir well. Let stand for 10 minutes. It is important to allow enough time for the bread to absorb the egg mixture or the bread crumbs will float to the top during baking, leaving a layer of custard on the bottom of the dish.
  • Transfer the mixture to a greased baking dish. Bake until firm, or until a knife inserted in the middle comes out clean, about 45 to 50 minutes. Let it slightly cool in the dish.
  • Meanwhile, near the end of the baking time, make the sauce. With an electric mixer, beat egg yolks until thick and pale. In a saucepan, melt the butter and sugar. Pour the butter and sugar mixture over the egg yolks, beating constantly with the mixer, until well thickened. Stir in bourbon by hand. Serve the pudding warm with vanilla ice cream if desired. Pass the hot bourbon sauce separately.

BREAD PUDDING WITH DRUNKEN PRUNES

Bread Pudding With Drunken Prunes image

This is "too good" for kids! If the idea of prunes in a Christmas dessert give you the willies, substitute raisins, figs, dried cranberries or cherries (not all at once, but hey--that might be good!). Works for breakfast, too, for overnight guests during the holidays.

Provided by Debber

Categories     Dessert

Time 1h10m

Yield 1/2 cup, 10-12 serving(s)

Number Of Ingredients 11

1/2 cup pitted prune, coarsely diced
3/4 cup Southern Comfort
2 tablespoons butter, melted, divided
2 cups French bread, cubed
1 cup milk
1 cup whipping cream
2 teaspoons vanilla extract
2 whole eggs
2 egg yolks
1/4 cup sugar
1/2 teaspoon salt

Steps:

  • Place diced prunes in a small jar or bowl, pour Comfort ove rtop; let sit about 4 hours or overnight.
  • Preheat oven to 350. Brush 2-quart baking dish with 1 T. melted butter, set aside.
  • In a large bowl, drizzle remaining butter over bread cubes. Scatter cubes on a baking sheet and brown lightly in the preheating oven. Remove and set aside.
  • In a large mixing bowl, combine milk, cream and vanilla. Add eggs, yolks, sugar and salt, whisking until smooth; set aside.
  • Dump bread cubes into prepared baking dish. Remove prunes from liquor (or it might all have soaked in) and toss with cubes. Pour egg-mixture over top of cubes and prunes; cover.
  • Place baking dish in a water bath (water should come 3/4 of the way up the sides of the dish), in the oven. Bake for one hour (or until "set").
  • Remove dish from water bath, chill for two hours in refrigerator before unmolding from baking dish (or leave in the pan if you're not doing a fancy presentation).
  • If you prefer to serve the pudding HOT, let it rest only until it is unpuffed--but do NOT unmold to serve.
  • Serve with "butter-rum" sauce (1/2 cup each melted butter and powdered sugar with 3 T rum splashed in--heat briefly in the microwave) OR vanilla ice cream OR whipped cream.

Provided by Pat Neely

Categories     Bourbon     Milk/Cream     Egg     Dessert     Bake     New Year's Eve     Winter     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Serves 10

Number Of Ingredients 12

2 tablespoons butter, plus more for greasing
10 cups cubed brioche bread (from a 1-pound loaf)
1 cup chopped pecans
4 cups half-and-half
1 cup whole milk
5 eggs, beaten
1 cup packed dark-brown sugar
3 tablespoons bourbon
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon grated nutmeg

Steps:

  • Butter a 13 by 9-inch baking dish, and put the cubed brioche in it. Sprinkle with the pecans.
  • Whisk together the half-and-half, milk, eggs, butter, brown sugar, bourbon, vanilla, cinnamon, salt, and nutmeg in a large bowl.
  • Pour the custard mixture over the bread in the baking dish, giving the bread a stir to make sure it's coated. Let the pudding sit for 1 hour, so the bread can fully absorb the milk.
  • Preheat the oven to 350 degrees F. Once it is ready, put the dish in the oven and bake for 50 minutes, or until puffy and set. Remove, and let stand 10 minutes before serving. This is absolutely lovely when served with some fresh whipped cream.

DRUNKEN BRANDY-PEACH BREAD PUDDING

Drunken Brandy-Peach Bread Pudding image

Categories     Bread     Sauce     Dessert     Bake     Peach     Brandy     Boil

Yield serves 12 to 14 with leftovers

Number Of Ingredients 14

Peach Bread Pudding
2 cups granulated sugar
4 cups half-and-half or heavy whipping cream
1 teaspoon ground cinnamon
3 large eggs
1 loaf challah or French bread, cut or torn into 2-inch chunks
3 cups chopped fresh peaches (about 6 peaches)
1 cup pecan halves
Peach Brandy Sauce
1/2 cup (1 stick) unsalted butter
1 cup firmly packed golden brown sugar
1 large egg
Pinch of kosher salt
1/4 cup peach brandy or liqueur of your choice

Steps:

  • TO MAKE THE BREAD PUDDING: Preheat the oven to 350°F. Grease a 9 by 13-inch baking pan with butter or cooking spray. Mix the granulated sugar, half-and-half, and cinnamon in a large saucepan over medium heat. Stir occasionally until the sugar dissolves. (No need to boil the mixture.) Remove the saucepan from the heat.
  • Whisk the 3 eggs in a bowl until the whites and yolks are combined. Pour about 1/4 cup of the hot cream mixture into the eggs, whisking as you pour. (This tempers the eggs, which keeps them from curdling when they are mixed into the hot cream mixture.) Pour the tempered egg mixture into the cream mixture left in the saucepan and whisk until the sauce is smooth.
  • Gently combine the bread cubes and peaches in a large bowl. Spoon into the prepared pan. Pour the sauce over the peach-bread mixture and let sit for about 30 minutes to let the sauce soak into the bread. Sprinkle the pecans on top.
  • Bake until the pudding is firm and lightly browned on top, about 1 hour. Cut into squares and serve warm or at room temperature with warm Peach Brandy Sauce.
  • TO MAKE THE PEACH BRANDY SAUCE: Melt the butter and brown sugar together in a saucepan set over medium heat. Remove the mixture from the heat. In a bowl, whisk the 1 egg with a fork. Temper the egg by adding about 2 tablespoons of the butter-sugar mixture to the egg and whisk constantly until the egg is incorporated. Pour the tempered egg mixture into the saucepan with the remaining sugar-butter mixture and whisk until the sauce is smooth. Add the salt and whisk in the brandy. Keep the sauce warm until ready to serve. Pour it over the bread putting as soon as it comes out of the oven.
  • do it early
  • The bread pudding can be made up to 12 hours in advance, covered, and refrigerated. Warm in a 300°F oven. The sauce can be made up to 48 hours in advance and refrigerated until ready to use. Reheat it in a heavy saucepan set over low heat until it is warm but not hot; or microwave it on medium power in a microwave-safe container until warm, about 1 to 2 minutes.
