This easy biscuit recipe without baking powder creates the most fluffy biscuits you could ever imagine! Made with simple ingredients, this recipe calls for all-purpose flour, whole milk, sugar, and butter. You will love these flaky biscuits with jam, butter, or whatever you prefer!

1 cup butter (cold)
3 cups all-purpose flour
1½ teaspoon baking soda
1 teaspoon cream of tartar
½ cup milk (full cream)
1 egg (optional, beaten)

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  • Place butter in the freezer for 15 minutes prior to starting the recipe. In the meantime, mix flour with salt, baking soda, and cream of tartar.
  • Next, use a box grater to grate the butter over the flour mixture. Use your hands to combine ingredients. The result should be a coarse dough.
  • Add milk to the dough and knead to combine.
  • Place dough on a clean surface. Extend the dough with your hands, about ½-inch thick. Then, fold it over, and extend again. Repeat this process three times to make lovely layers in the biscuits.
  • Use a biscuit cutter of 2 ½ inches to cut 16 biscuits. Use a different sized cutter if desired.
  • Place biscuits in the prepared baking tray, no need to set them far apart as they will not expand much.
  • Optional: Beat an egg and brush the tops of the biscuits. This will provide a nice golden brown color.
  • Bake the biscuits for 20 minutes or until the biscuits are golden brown on the top and base.

6 cups all-purpose flour
4 tablespoons baking powder
1/4 teaspoon salt
3 sticks cold butter, cut into pieces
3 1/2 cups whole milk
Melted butter, for brushing, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the flour, baking powder and salt into a food processor and pulse a few times to combine. Add the butter and pulse until the dry ingredients and the butter are mostly combined. (Alternatively, cut the butter into the dry ingredients with a pastry cutter.) Drizzle in the milk and pulse (or stir) just until the dough comes together. Do not over mix.
  • Using a regular table spoon, or large spoon, drop spoonfuls of the mixture onto baking trays and bake until nice golden brown, 20 to 25 minutes. If desired, brush with melted butter after you remove them from the oven.

2 1/2 tablespoons shortening or 2 1/2 tablespoons butter
1 cup milk

Steps:

  • Sift dry ingredients together.
  • Blend the shortening into the flour using fingers or a tool for cutting in butter.
  • When uniform crumbly consistency, make a well in the center. Pour all the milk in at once and then stir just until blended. Don't stir any longer or the biscuits will be tough.

  • Baking Soda. If you would like to use baking soda to replace baking powder you just need to combine a half teaspoon of lemon juice with 1/4 teaspoon of baking soda.
  • Cream of Tartar. While this is one of the best substitutions for baking powder, do not look for it in cream form. You can find cream of tartar in the spice aisle and it is a powder.
  • Vinegar. If you have white vinegar on hand and baking soda, you can make your own baking powder substitute with 1/2 teaspoon of vinegar with 1/4 teaspoon of baking soda.
  • Yogurt. Using yogurt to replace baking powder when making biscuits takes only a few short steps. First make sure it is regular plain yogurt, not Greek or flavored.
  • Buttermilk. If you have buttermilk in your fridge you can use it exactly the same way you substitute using yogurt.
  • Sour Milk. If you don’t have buttermilk you can create your own (you can use this ratio to substitute buttermilk in any recipe). Measure out one cup of milk in a pitcher and add one tablespoon of lemon juice or white vinegar.
  • Molasses. This is another substitution that you will need to combine with baking soda in order to replace baking powder when making biscuits. Combine 1/4 cup of molasses with 1/4 teaspoon of baking soda to use instead of a teaspoon of baking powder.
  • Egg Whites. You can easily replace baking powder when making your biscuits by separating your eggs and whipping the egg whites until they form a stiff peak.
  • Club soda. Because club soda has baking soda in it, it makes it a great substitute for baking powder. All you have to do is replace the amount of milk your recipe calls for and you will still be able to enjoy light fluffy biscuits.
  • Self-Rising Flour. If you do a good deal of baking you may already have self-rising flour on hand. Because self-rising flour already has baking powder and salt in it, you can just use this flour in place of all-purpose flour, baking powder, and salt.
