One 12-ounce box frozen pie crusts (2 crusts), thawed
4 1/2 cups blueberries
5 tablespoons all-purpose flour
1 cup sugar
1 lemon
Salt

Steps:

  • Preheat the oven to 350 degrees F. Unfold one of the pie crusts and press into a 9-inch pie dish.
  • Combine the berries with the flour in a large bowl and toss to coat. Add the sugar, a squeeze of lemon and a dash of salt. Toss to combine. Pour the berries into the prepared pie dish.
  • Cut the remaining pie crust into 1-inch-wide strips. Arrange the strips on top of the pie in a criss-cross pattern to form a lattice. Bake until the filling is bubbly, 45 to 60 minutes. Serve.

2 cups all-purpose flour
1/3 cup plus 2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup fresh or frozen blueberries, thawed
1 egg
1 cup 2% milk
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. Add blueberries. In another bowl, beat egg and milk; stir in butter. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

Prepared with basic ingredients and a couple mixing bowls, you'll appreciate this easy breakfast recipe.

1/2 cup (100g) packed light or dark brown sugar
1/2 cup (67g) chopped walnuts (or pecans)
1 teaspoon ground cinnamon
1 and 3/4 cups (219g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (115g) unsalted butter, softened to room temperature
1/2 cup (100g) granulated sugar
1/4 cup (50g) packed light or dark brown sugar
2 large eggs, at room temperature
1/2 cup (120g) sour cream or plain/vanilla yogurt, at room temperature
2 teaspoons pure vanilla extract
1/4 cup (60ml) milk, at room temperature
1 and 1/2 cups (250g) fresh or frozen blueberries

Steps:

  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners. Grease/line a second pan with 2 liners because this recipe yields about 14 muffins. Set aside.
  • Mix all of the topping ingredients together. Set aside.
  • Whisk the flour, baking soda, baking powder, and salt together in a large bowl. Set aside.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter, granulated sugar, and brown sugar together on high speed until smooth and creamy, about 2 minutes. On medium speed, add the eggs one at a time, beating well after each addition. Beat in the sour cream and vanilla extract on medium speed until combined. With the mixer running on low speed, add the dry ingredients and milk into the wet ingredients and beat until no flour pockets remain. Fold in the blueberries.
  • Spoon the batter into liners, filling them all the way to the top. Spoon brown sugar topping on each, gently pressing it down into the surface so it sticks. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 18-20 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 23-25 minutes, give or take. Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • Muffins stay fresh covered at room temperature for a few days or in the refrigerator for up to 1 week.

Steps:

  • Preheat oven to 375 degrees. Line a muffin tin with paper liners. Lightly grease paper liners with nonstick cooking spray.
  • In a large mixing bowl, use a hand mixer to cream together butter and sugar, about two minutes.
  • Beat in eggs until combined. Add in the baking powder, salt, and vanilla and mix briefly.
  • Add in half of flour, mix with hand mixer until just combined, then add in half of the milk. Scrape the bottom and sides of the bowl and add in the remaining flour and milk, mixing in between additions.
  • Add the blueberries to the batter and use a rubber spatula to gently fold them in.
  • Divide the batter up amongst the 12 muffins. Sprinkle 1 teaspoon of sugar atop each muffin.
  • Bake in the preheated oven for 30 minutes, until a toothpick inserted into the center comes out clean.
  • Let muffins cool for 5 minutes in the pan before removing them and transferring to a wire rack to cool completely.

2 large eggs (, room temperature)
½ cup plain yogurt
2 ½ tsp vanilla extract
¼ cup milk
1 ¾ cups blueberries (, fresh or frozen)
extra granulated sugar (, to sprinkle on top)
¼ cup brown sugar (, packed)
¼ cup instant oats
1 tsp ground cinnamon

Steps:

  • Preheat oven to 425°F . Line a 12-cavity muffin pan with muffin liners (or spray with a non-stick spray). Set aside.
  • In a large bowl, add in flour, baking soda, baking powder, and salt. Whisk to combine.
  • In another bowl, add in butter, granulated sugar, and brown sugar. Use a stand mixer or handheld mixer to cream the butter and sugars on high-speed until smooth.
  • Turn the mixer speed to medium speed, then mix in the eggs until combined. Add in yogurt and vanilla extract and beat again until combined.
  • Turn the mixer to low speed, then pour in the milk. Once combined, slowly add in the dry ingredients into the wet ingredients. Mix until combined, then turn off the mixer and fold in the blueberries. Your batter will be thick - this is normal!
  • Pour the batter into the prepared muffin tin (make sure it's filled to the top) and top with extra granulated sugar. (If you want to add the streusel topping, mix all of the cinnamon streusel ingredients together and top each muffin batter with the streusel mix).
  • Bake for 4-6 minutes at 425°F, then turn the oven temperature down to 350°F. Continue to bake for an additional 20-22 minutes, or until a toothpick inserted in the center comes out clean.
  • Take the muffin tin out from the oven, but let the blueberry muffins stay in the tin for 5-7 minutes, then transfer to a wire rack to finish cooling.
  • That's it! You've just made your very own copycat Dunkin Donuts blueberry muffins! To store, transfer the muffins to an airtight container and keep at room temperature for 2-3 days, or up to 1 week in the refrigerator. ENJOY!

⅔ cup unsweetened non-dairy milk
1 tablespoon almond butter or other nut/seed butter
1 teaspoon apple cider vinegar
1 cup blueberries, fresh or frozen, plus extra for tops of muffins (See Notes for tips.)

Steps:

  • Locate a standard non-stick muffin pan. Arrange oven rack so that the muffins will be in the center of the oven. Preheat oven to 375 degrees F (190 C).
  • In a large mixing bowl whisk together the dry ingredients. In a smaller bowl mash the bananas and make sure you have 1 cup. Add the remaining wet ingredients to the bananas and mix very well.
  • Pour wet ingredients into dry, and stir until just combined, careful not overmix. The batter will be very thick. Fold in the blueberries.
  • Divide the batter evenly among the muffin cups, only filling them about 2/3 full. If desired, lightly press 2 or 3 extra blueberries onto the top of each muffin. Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool in the pan for 10 minutes, then transfer to a cooling rack.
