DRIED FRUIT MUFFINS

Steps:
- Preheat your oven to 425°F. Lightly grease the cups of a standard 12-cup muffin pan. Or line the cups with papers, and grease the papers.
- Blend together the dry ingredients, add chopped fruit and stir.
- Beat the liquid ingredients together - milk, oil or butter, eggs, and vanilla - until light.
- Pour the wet ingredients into the dry ingredients. Take a fork or wire whisk and blend the two briefly - about 20 seconds should do it.
- Fill the cups of the muffin pan two-thirds to three-quarters full. Sprinkle with sparkling white sugar, if desired.
- Bake the muffins for 15 to 20 minutes, or until a toothpick inserted into the middle of one of the center muffins comes out clean. Remove them from the oven, and as soon as you can handle them turn them out of the pan onto a rack to cool.

FRUIT AND OATMEAL MUFFINS
This was a recipe I put together to use up some dried fruit. They are a dense muffin and reduced fat. You can use a sugar substitute to even reduce the calories. I sometimes use an egg substitute, too. These muffins have become so popular with our friends that every time we have a tailgate party or golf get together I must bring them.

Steps:
- Pre heat ovens to 375.
- Grease and flour muffin pan.
- Soak oats in buttermilk for 5 minutes.
- Combine dry ingredients,set aside.
- Combine beaten egg,applesauce, brown sugar, vanilla and blend well.
- Add to oatmeal/buttermilk, blend well.
- Fold in dry ingredients.
- Mix till wet.
- Add in fuit and nuts.
- Fill muffin cup 3/4 full.
- Bake 15 to 20 minutes.
BASIC MUFFIN RECIPE

- Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
- Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
- Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
- Stir in 100g chocolate chips or dried fruit if using.
- Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
- Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

- Heat oven to 180C/160C fan/gas 4. In a large bowl mix the self-raising flour, baking powder, cinnamon, wholemeal flour and golden caster sugar.
- In another bowl, mix the eggs, semi-skimmed milk and sunflower oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.
- Divide the mix between 12 muffin cases and bake for 25 mins. Cool on a wire rack, then pack in a container for lunch.
HEALTHY MULTIGRAIN MUFFINS
This recipe makes delicious, healthy and versatile muffins. I have tried cranberries, apple pieces, almonds and macadamias as well. You can use any fruit or nut that you especially like.

- Preheat oven to 375 degree F.
- Grease muffin tin (I like to use a silicone muffin pan) or line muffin tin with paper cups.
- Whisk together flours, oat bran, baking powder, baking soda, nutmeg, cinnamon and salt.
- Lightly beat the egg and egg whites. Stir in the buttermilk, applesauce, almond and vanilla extracts, brown sugar, and oil.
- Stir the liquids into the dry ingredients, until almost combined (batter will be thick), being careful not to over-mix. Gently stir in the dried fruit and nuts.
- Fill muffin cups about ¾ full. Bake until tester is clean, about 23 minutes.
- After a few minutes, remove muffins from the pan, and cool on a rack. You can serve them room temperature, or re-warm them in a toaster oven.

- Spray a 12-cup muffin pan with non-stick cooking spray.
- Preheat oven to 400°F.
- Combine the fruit, oats, oat bran, flour, banana, brown sugar, baking powder and cinnamon in a food processor.
- Pulse until mixture is just blended, then transfer to a bowl.
- Combine milk, orange juice, egg whites, oil and orange zest in another bowl.
- Add the milk mixture to the dried fruit mixture; stir just until blended.
- Spoon batter into muffin cups, filling two-thirds full.
- Bake 15 minutes or until the surface of the muffins are golden brown and spring back when lightly pressed, or until toothpick inserted in center comes out clean.
- Remove from pan and cool on a rack for 10 minutes before serving.
- Store in an airtight container at room temperature for up to 3 days.
BRAN MUFFINS WITH DRIED FRUIT

- Combine milk and bran flakes and allow to sit in a bowl.
- Combine dry ingredients, including fruit (I use peaches, apricots, cherries, cranberries, prunes or whatever combo I have in the house).
- Mix eggs, banana, vanilla and oil well and add to bran mixture.
- Add wet ingredients to dry ingredients.
- Stir to blend, but don't overmix.
- Bake at 375° for 20 minute.
- Makes about 18 regular-size muffins.
- I usually make 6 Texas-size muffins, and use the rest for mini-muffins (bite size). It makes 18 of the regular size muffins.

SUGARLESS FRUIT NUT MUFFINS
This is from another website. I did a few changes, I have made 12 muffins with 2 cups of chopped prunes. Also made them with dried apricots and dates. You would never know these didn't have sugar in them.

Steps:
- In a saucepan over medium high heat, combine water, dates, raisins and prunes.
- Boil for 5 minutes, water will be absorbed and remove from heat, add chopped up butter and stir till butter is melted.
- Transfer to large bowl and let cool.
- Set oven to 350*F and grease and flour muffin cups or use paper liner.
- Beat in eggs and vanilla. Stir together flour, baking soda, salt and baking powder.
- Mix in nuts and blend into fruit mixture.
- Spoon into muffin cups 2/3 to 3/4 full.
- Bake in preheated oven for 15-20 minutes, or until toothpick inserted comes out clean.
