SKILLET APPLE PORK CHOPS
With fresh sage and apple, this dish is tasty, easy and done in a flash. The recipe says garlic butter, but I keep a jar with three cloves of garlic covered in olive oil and use that instead. The garlic oil is delicious for salads also. -Lorraine Caland, Shuniah, Ontario

- In a large skillet, heat oil over medium heat. Add pork chops and apple; cook 4-5 minutes on each side or until a thermometer inserted in pork reads 145° and apple is golden brown. Remove from pan; keep warm., Add remaining ingredients to skillet, stirring to loosen browned bits from pan. Bring to a boil; cook until liquid is reduced by half. Serve with chops and apple.

Adapted from www.allrecipes.com, this came to the rescue when I was looking for a 30-minute or less pork chop recipe. It's a nice surprise that it's delicious as well!

Steps:
- Heat oil in large nonstick skillet on medium heat.
- Add chops and cook 4 minutes on each side or until lightly browned.
- Remove chops from skillet.
- Add apples, cider and bring to a boil.
- (Next time, I'll try adding raisins during this step too.) Add stuffing veg/seasoning packet and stuffing crumbs.
- Stir just to moisten.
- Top with chops and cover.
- Cook on low heat 10 minutes or until chops are cooked through.

- Cut pork into bite sized pieces.
- Season pork with ginger and 2 T. of the brown sugar and stir fry on high heat in olive oil until browned and cooked through.
- Remove pork from the pan and deglaze with apple and lemon juices.
- Add cabbage, carrots and apples and remaining brown sugar and turn heat down to medium.
- Cook veggies until tender-crisp and add pork back to pan and combine well.

- Brown pork: Season pork with salt and pepper on both sides. Heat oil in a large skillet over medium-high heat. Add chops to the hot pan and cook until browned on either side. Remove chops from the pan and cover them with foil.
- Sauté onion and apples: Add onion and apples to hot skillet and sauté over medium heat until softened and starting to brown. Season with dried herbs and salt and pepper. Deglaze pan with wine, scraping any browned bits off the bottom.
- Make gravy: Add chicken broth, vinegar, mustard and maple syrup to the pan. Bring to a boil, then stir in cornstarch slurry. Simmer for one minute.
- Finish: Add pork chops back to the skillet and finish cooking until pork chops are done and gravy has thickened. If desired, stir butter into gravy before serving.
