MEXICAN HOT CHOCOLATE FONDUE



Mexican Hot Chocolate Fondue image

Mexican hot chocolate is usually made from a hockey puck looking disk of bitter chocolate that already has the sugar in it. Usually it is blended with hot water or milk and seasoned with cinnamon and coffee flavors. Canela, the Spanish word for cinnamon, also known as Ceylon cinnamon, is a true cinnamon that is used frequently in Mexican cooking. A native of Ceylon (Sri Lanka), it is also a primary ingredient in Indian, African and Asian foods as well. Its floral, complex taste sets it apart from cassia, the bark that most often substitutes for true cinnamon. The thin and fragile bark of canela makes it highly perishable, so it is best to use and grind it only as needed. Naturally, it is good for myriad sweet dishes like cakes, cookies, pies and ice cream, and is the penultimate accompaniment for anything chocolate.

1/3 cup sugar
1 tablespoon cornstarch
1 1/4 cups heavy cream
1 1/4 cups milk
2 tablespoons fresh-ground coffee
1/2 teaspoon ground Ceylon cinnamon or canela
1 vanilla bean, split
7 ounces bittersweet chocolate, chopped
3 tablespoons unsalted butter
Regular bananas
Small bananas, like Manzano or red
Strawberries, with stem
Marshmallows
Toasted cubes pound cake
Pineapple chunks
Anjou or Bartlett pear slices, unpeeled
Fried wonton wrappers
Bing cherries, with stem

Steps:

  • Equipment: Fondue pot; fondue forks or wooden or metal skewers
  • In a bowl, whisk together the sugar and cornstarch to blend. Slowly whisk in the cream; then the milk, coffee, cinnamon, and vanilla. Pour the mixture into a stainless steel saucepan and gently bring it to a boil. Cook, whisking, until thickened, about 4 minutes.
  • Remove the pan from the heat and whisk in the chocolate and butter until melted. Using a fine-meshed sieve over a large bowl, strain the chocolate mixture and discard the solids. Pour into a warmed fondue pot and serve with assorted dippers and fondue forks.

Cooking spray
8 flour or corn tortillas, cut into wedges
Ground cumin
Salt and freshly ground black pepper
2 to 3 cups shredded 4 cheese Mexican cheese blends (recommended: Monterey Jack, Cheddar, mozzarella, queso blanco, or any combination of cheese blends)
1 (14-ounce) can artichoke hearts, drained and chopped
1 cup salsa or pico de gallo sauce
1 (10-ounce) package frozen chopped spinach, thawed and well drained
3 seeded, peeled and chopped avocados
2 to 3 tablespoons fresh lime juice
1 to 2 tablespoons freshly chopped cilantro leaves
1 tomato, chopped
Smoked paprika, if desired

Steps:

  • Preheat oven to 400 degrees F.
  • Coat a large baking sheet with cooking spray.
  • Arrange tortillas on prepared baking sheet and spray with cooking spray. Season the top of tortillas with cumin, salt and freshly ground black pepper. Bake 6 minutes, until golden brown and crisp. Remove from oven.
  • While the tortillas are baking, in a medium saucepan, combine cheese, artichoke hearts, salsa, and spinach. Set pan over medium heat and bring to a simmer, for 5 minutes or until cheese melts. Pour into a serving bowl.
  • In a large bowl, combine: the chopped avocados, lime juice, chopped cilantro, chopped tomatoes, salt and freshly ground black pepper and smoked paprika, to taste, if using.
  • Adjust seasonings, if necessary.
  • Serve cheese fondue with baked chips and guacamole.

1 can (14-1/2 ounces) diced tomatoes, drained
3 tablespoons chopped green chiles
1 teaspoon chili powder
1 package (16 ounces) process cheese (Velveeta), cubed
French bread cubes

Steps:

  • In a small bowl, combine the corn, tomatoes, green chiles and chili powder. Stir in cheese. Pour mixture into a 1-1/2-qt. slow cooker coated with cooking spray. , Cover and cook on high until cheese is melted, 1-1/2 hours, stirring every 30 minutes. Serve warm with bread cubes.

MEXICAN QUESO FUNDIDO OR MEXICAN FONDUE

We have probably all had those melted cheese dips that are so popular in Mexican restaurants. This is a much more authentic version yet still simple and yummy. This makes a complete meal that is tasty and FUN! Soyrizo is the Soy based vegetarian version of chorizo. If you have an aversion to cooking with beer you can use some broth in place of the beer. The beer really does impart a special flavor that is unmatched. You could probably use a non-alcoholic beer as well. You could also su the canned chilies and fresh tomatoes with a can of Rotel undrained.

1 cup beer, anything but dark beer
1/2 lb oaxaca cheese, grated or 1/2 lb mozzarella cheese
1 lb asadero cheese or 1 lb muenster cheese, grated
4 ounces green chilies, chopped (you can find these in a can- for authentic Mexican use poblano's- you can get these canned too)
1/4 lb chorizo sausage (optional) or 1/4 lb soy chorizo (optional)
1/2 cup tomatoes, chopped
4 garlic cloves, minced
salt & freshly ground black pepper

Steps:

  • If using sausage: Cook sausage to release as much grease and oil as Drain well on paper towels and crumble or chop sausage. We like to grill the sausage outside and let the grease drip off. Plus you get rewarded with a smokiness!
  • Meanwhile, in a microwave safe bowl or the removable crock of a small crock pot, heat beer for about 2 minutes or just to a simmer. Add half the cheese, stir well and microwave 1 minute. Add the rest of the cheese and microwave again until everything has melted completely. Stirring and checking at one minute intervals, of half minute if you have a powerful microwave.
  • Add remaining ingredients, including chorizo if using, and return again to microwave for about 2 minutes, stirring after each minute.
  • Serve with chips , tortillas, bread or veggies for dipping.

1/4 lb. Mexican chorizo
1 small onion, finely chopped
1/2 tsp. roasted ground cumin
1/4 tsp. chili powder
1 canned chipotle pepper in adobo sauce, finely chopped, plus 1 Tbsp. adobo sauce
1 clove garlic, minced
1 cup lager-style beer
1 pkg. (8 oz.) KRAFT Mexican Style Finely Shredded Four Cheese
1 pkg. (8 oz.) KRAFT Shredded Cheddar & Monterey Jack Cheeses
1 Tbsp. cornstarch
1/4 cup chopped fresh cilantro

Steps:

  • Cook chorizo in medium saucepan on medium heat until done, stirring occasionally. Drain; discard all but 1 Tbsp. drippings from skillet. Return chorizo and reserved drippings to skillet.
  • Add onions, cumin and chili powder to skillet; stir. Cook 5 to 7 min. or until onions are tender, stirring frequently. Add peppers, adobo sauce and garlic; mix well. Stir in beer. Bring just to boil, stirring occasionally.
  • Combine cheeses in large resealable plastic bag. Add cornstarch; seal bag. Shake gently to evenly coat cheeses with cornstarch. Gradually add to chorizo mixture in saucepan, cooking after each addition until cheese is completely melted and mixture is well blended, stirring constantly.
  • Remove from heat; stir in cilantro.

When we serve this fondue we usually make it a full meal - serving it up with refried beans, lettuce and tomato salad, caramel custard or flan and of course a pitcher of Sangria. Yum yum! I hope you enjoy!

1/2 teaspoon(s) sea salt
1/4 teaspoon(s) black pepper, ground
1 package(s) sharp cheddar cheese (8oz)
1 package(s) swiss cheese (8oz)
1/2 clove(s) garlic
1 can(s) beer
dash(es) red pepper sauce
SANGRIA
1/4 cup(s) lemon juice
1/3 cup(s) orange juice
1/4 cup(s) sugar
1 bottle(s) red wine

Steps:

  • Toss flour, salt, pepper and cheeses until cheese is coated. Set aside. Rub cut clove of garlic on inside of eathenware fondue pot. Pour beer into fondue pot. Heat pot over low heat. Add cheese mixture, 1 cup at a time, stirring after each addition until cheese is melted and blended. Stir in pepper sauce.
  • Transfer pot to table and heat source. Adjust heat when necessary to keep fondue warm. Spear dippers and swirl in fondue. Tip: If mixture become too thick just add warmed beer to dilute.
  • Dippers: Cornbread, rolled tortillas.
  • Sangria Pitcher: Strain lemon juice and orange juice into serving pitcher. Add sugar stirring until dissolved. Pour in wine. Stir and add ice. Garnish with lemon or oranges slices if desired. Enjoy!

CLASSIC FONDUE

8 ounces raclette or Swiss cheese, grated
8 ounces Gruyere cheese, grated
2 tablespoons cornstarch
1 cup sauvignon blanc or other dry white wine
1 clove garlic, pressed
Zest of 1 lemon
1 tablespoon kirsch
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dry mustard
Crusty Bread, recipe follows, for serving
2 Granny Smith apples, sliced, for serving
2 pears, sliced, for serving
1 loaf crusty bread

Steps:

  • Combine the raclette and Gruyere in a bowl and add the cornstarch. Toss well to coat the cheeses in the cornstarch; set aside.
  • In a pot over medium heat, warm the wine, garlic and lemon zest. Do not allow this to come to a boil or the fondue may be grainy in the end.
  • Slowly add the cheese mix a handful at a time, stirring and allowing each handful to melt completely before adding the next. Repeat until all the cheese is in the pot. Once completely smooth, stir in the kirsch, pepper and mustard. Pour the mixture into a fondue pot with a burner underneath to keep warm. Serve with Crusty Bread, apples and pears.
  • Preheat the oven to 350 degrees F.
  • Put the loaf of bread on a baking sheet and bake for 15 minutes to crisp. Allow to cool, then tear into chunks for serving. Set aside.
