3/4 cup sugar
1 envelope (1 tablespoon) unflavored gelatin
1/2 cup cold water
1 cup heavy whipping cream
1-1/2 cups sour cream
1 teaspoon vanilla extract
4 to 5 cups fresh fruit (bite-size pieces)

Steps:

  • In a saucepan, combine sugar and gelatin. Stir in water; let stand 5 minutes. Bring to a boil, stirring constantly. Remove from the heat; stir in whipping cream. , In a bowl, combine sour cream and vanilla. Add gradually to hot mixture; mix until smooth. Pour into a 4-cup bowl or mold. Cover and chill for 4 hours or overnight. Serve over fruit.

A traditional Russian dessert that has been claimed to be food of the gods. The trick is to get the gelatin as hot as you can so as to dissolve completely, so that when it hits the cold sour cream it remains lump-free. Work quickly! Cook time includes chill time.

1 1/2 cups water
3/4 cup sugar
1 (1/4 ounce) envelope unflavored gelatin, plus 1/4 teaspoon unflavored gelatin (Knox)
1 1/2 cups sour cream
1 1/4 teaspoons almond extract
1/4 teaspoon vanilla extract
8 ounces Cool Whip
strawberry, raspberries, blueberries, blackberries, peaches (any combination cutting larger pieces into bite-sized)

Steps:

  • Heat water, sugar and gelatin over medium heat stirring until the gelatin dissolves and becomes clear. Do not boil; cool slightly. Beat in sour cream until smooth. Add almond and vanilla extracts. Fold in Cool Whip until smooth.
  • Pour into a 9 x 9 inch square pan and chill overnight or until set. Serve with your choice of fruit.
  • Note: Can also be poured into a lightly greased mold. To unmold wrap a damp, warm dish towel around the mold. Invert mold onto a plate, holding mold and plate together, shake slightly to loosen. Gently remove mold and center dessert on plate.

1 box Jell-O Vanilla Instant Pudding
1 can mandarin oranges
1 tub (8 oz.) Cool Whip

Steps:

  • Mix gelatin mix with 1 cup boiling water till dissolved. Add 1 cup cold water plus 3 ice cubes and stir into the hot gelatin mix. Set aside 5 minutes to cool.
  • Add the instant pudding to the gelatin mixture, stir for about 2 minutes and then let set for approximately 15 minutes to thicken. Fold in the mandarin oranges and Cool Whip.
  • Refrigerate for approximately 30 minutes or can be frozen for a more ice cream like dessert.

The idea for this dessert didn't come to me in a dream but I was trying to think of a better name for a Strawberry Posset (which is what this actually is) but since very few people know what that is, I am calling it a Strawberry Dream. I think after trying it you'll agree that the name is totally appropriate. The boiled strawberry-infused cream and sugar filling firms up into a luxurious, pudding-like texture that when sandwiched between strawberry puree and macerated strawberries, tastes like a dream! Even though the portions are a bit small, the taste is rich and a little goes a long way.

2 cups quartered fresh strawberries
1 tablespoon white sugar
½ cup white sugar
2 cups heavy cream
¼ teaspoon pure vanilla extract
¼ cup freshly squeezed lemon juice
⅔ cup diced fresh strawberries
1 tablespoon white sugar

Steps:

  • Prepare strawberry puree: Mix quartered strawberries and sugar in a 2-cup liquid measure or bowl. Let sit and macerate for 1 hour, stirring every 10 to 15 minutes. Use an immersion blender to blend into a smooth puree. Pass through a mesh strainer to remove seeds, if desired. Cover and refrigerate until needed.
  • Prepare cream mixture: Combine sugar and cream in a saucepan. Set heat to medium-high and bring to a boil while whisking occasionally; be careful, since cream can easily boil over. Once cream just starts to boil, reduce heat to between medium and medium-low and maintain a steady simmer. Simmer for 5 minutes.
  • Remove from the heat and whisk in vanilla, lemon juice, and 1/3 cup of the reserved strawberry puree until completely incorporated. Let cool for 10 to 15 minutes.
  • While the cream is cooling, pour the remaining strawberry puree evenly into 4 dessert glasses.
  • Pour the cooled cream mixture into the glasses. Wrap with plastic wrap and pop in the refrigerator until thoroughly chilled, 3 to 4 hours.
  • Meanwhile, prepare topping: Toss diced strawberries and sugar together in a small bowl. Wrap with plastic wrap and chill alongside the strawberry dreams.
  • When ready to serve, remove strawberry dreams and topping from the refrigerator. Stir the topping and spoon strawberries and any accumulated juices on top of each dream.

Steps:

  • In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Bring to a boil; cook and stir until gelatin is dissolved. Remove from the heat; set aside. , In another saucepan, heat whipping cream and sugar over medium heat until sugar is dissolved and mixture is lukewarm. Remove from the heat; stir in gelatin mixture until completely dissolved. Cover and refrigerate until slightly thickened, about 30 minutes., Stir in sour cream and vanilla. In each of four parfait glasses, place a scant 1/4 cupful of cream mixture; top each with a rounded tablespoonful of raspberries. Repeat layers. 1 cup pecans, chopped
1 cup butter, melted

1 cup confectioners' sugar

Steps:

  • In small bowl, combine the flour, pecans, butter and sugar.
  • Press into a greased 13-inch by 9-inch by 2-inch baking dish.
  • Bake at 350 degrees for 18-20 minutes or until golden brown.

Pinch of salt
1 1/4 cups superfine sugar
2 teaspoons cornstarch
1 teaspoon white-wine vinegar
A few drops vanilla extract
1 pound strawberries, hulled and halved or quartered
1/2 teaspoon high-quality vanilla extract
1 teaspoon high-quality balsamic vinegar
2 teaspoons superfine sugar
2 cups heavy cream

Steps:

  • To prepare meringue: heat oven to 350 degrees. Line a baking sheet with parchment paper, and draw a circle on the paper using an 8- or 9- inch cake pan as a guide. Flip the parchment over so the pencil marking is facing down (this ensures that the pencil won't transfer to the meringue). In bowl of an electric mixer, combine egg whites and salt. Begin beating at low speed, slowly increasing to high. Continue until satiny peaks begin to form; gradually beat in sugar a tablespoon at a time until meringue is stiff and shiny.
  • Sprinkle in cornstarch, white-wine vinegar and vanilla, and fold in gently. Mound onto parchment within circle, and shape into a disk, flattening top and smoothing sides. Place in oven, and immediately reduce heat to 300 degrees. Bake 1 hour 15 minutes. Turn off heat, and allow meringue to cool completely in oven.
  • To prepare topping: in a mixing bowl, combine strawberries, vanilla, balsamic vinegar and sugar. Cover with plastic wrap. Let sit at room temperature at least 15 minutes and up to 2 hours.
  • To serve, carefully peel off parchment and place meringue on a platter or cake stand. Gently crack the top with the back of a soup spoon to make a shallow nest for the whipped cream and berries. Whip cream until it is thick enough to hold peaks, and spoon it evenly over meringue. Cover cream with strawberries, allowing a small amount of their liquid to dribble onto cream. Serve immediately.
