CREAMY PARMESAN POLENTA



Creamy Parmesan Polenta image

4 cups chicken stock, preferably homemade
2 teaspoons minced garlic (2 cloves)
1 cup yellow cornmeal, preferably stone-ground
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan cheese, plus extra for serving
1/4 cup creme fraiche
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.

4 cups milk, plus more as needed
3 tablespoons butter
2 teaspoons salt
2 cups polenta
1/2 cup creme fraiche
1/3 cup Parmigiano-Reggiano

Steps:

  • In a large saucepan, bring the water, milk and butter to a boil. Add 2 teaspoons of salt to the water and whisk in the polenta. Whisk constantly for 3 to 4 minutes to prevent lumps. Simmer for 45 minutes, partially covered and stirring every 10 minutes, until the polenta is thick, smooth, and creamy. Add the creme fraiche and Parmesan. Check for seasoning and adjust consistency by adding milk or water to the polenta. Polenta may be made up to 20 minutes ahead of time and kept covered until ready to serve.

Steps:

  • Bring water and salt to a boil in a 3-quart heavy saucepan, then add polenta in a thin stream, whisking. Cook over moderate heat, whisking, 2 minutes. Reduce heat to low and cover pan, then cook at a bare simmer, stirring with a long-handled spoon for 1 minute after every 10 minutes of cooking, 45 minutes total. Remove from heat and whisk in butter until incorporated.

Steps:

  • Generously grease a 5-qt. slow cooker with 1 tablespoon butter. Polenta is one of my favorite comfort foods. This version comes from one of my favorite newspapers, the New York Daily News.

2 cups half-and-half
2 cups water
1 1/2 teaspoons salt
1 1/2 cups coarse cornmeal
4 tablespoons unsalted butter
1/2 cup grated parmesan cheese
fresh ground black pepper

Steps:

  • In a medium saucepan bring the half-and-half and the water to a boil.
  • Add the salt and then gradually add the polenta while stirring.
  • Reduce the heat to maintain a simmer, stirring constantly.
  • The polenta should be smooth and large bubbles will pop on the surface.
  • Cook until very thick but not stiff, about 5 to 7 minutes.
  • Remove from heat and add butter, cheese and pepper.
  • Serve immediately.

small handful dried porcini mushrooms
25g butter
1 shallot , finely sliced
2 garlic cloves , crushed
5 thyme sprigs , leaves picked
500g large field mushroom , sliced
200g chestnut mushroom , sliced
small glass of red wine
125ml vegetable stock
100g taleggio cheese (or vegetarian alternative), sliced
500ml milk
1 bay leaf
3 thyme sprigs
250g instant polenta
50g butter
75g parmesan (or vegetarian alternative), grated

Steps:

  • Soak the dried mushrooms in 150ml warm water. Set aside for 20 mins, then drain and squeeze, reserving the soaking liquid. Heat the butter in a large frying pan. When sizzling, add the shallot and cook for a few mins until soft. Add the garlic and thyme leaves, cook for 1 min more, then turn up the heat and add the soaked mushrooms. After 1 min, add all the other mushrooms and fry over a very high heat for 5 mins until soft. Splash in the red wine and boil rapidly for 1 min. Pour in the stock and reserved mushroom liquid, and simmer for 15 mins until you have a thickened stew. Turn off the heat.
  • For the polenta, bring the milk to the boil with 500ml water, the bay and thyme. Turn off the heat and leave to infuse for 20 mins, then fish out the herbs and bring back to the boil. Add the polenta in a steady stream, whisking steadily. Cook for 1 min until thickened, then stir in the butter and Parmesan. Spoon a 'crater' of polenta onto a baking tray and fill with the ragout. Top with slices of Taleggio, place under a hot grill until melting and oozy, then let everyone help themselves.

I was one of few that tested this for Cook's Illustrated. I was very impressed with this method which uses a secret ingredient of baking soda. Baking soda added to the cooking liquid can reduce the time it takes for the gelatinization to occur which in turn shortens the cooking time. You can use vegetable stock or chicken broth in place of the water. I tasted and it was good but wanted to kick it up and added chopped scallions and chopped chipotles for a kick. Just remember to simmer over very low heat so low you don't think it is cooking.

2 teaspoon salt (I used 1/2 the recipe called for 1 1/2)
1 pinch baking soda
1 1/2 cups coarse ground cornmeal
2 tablespoons butter (I used smart balance) or 2 tablespoons Smart Balance Omega Plus (I used smart balance)
4 ounces parmesan cheese, 2 cups grated
black pepper
1 scallion, sliced (optional)
1 chipotle chile in adobo, seeded and minced (optional)

Steps:

  • Bring water to boil in a heavy bottom 4 quart pan over medium high heat.
  • Stir in salt, and baking soda. Slowly pour cornmeal into the water in a steady stream stirring with a wooden spoon.
  • Bring to a boil stirring consistently for 1 minute.
  • Reduce to the very lowest heat possible and cover.
  • After 5 minutes whisk polenta to smooth out any lumps for 15 seconds,scraping down sides and bottom of pan. Cover and continue to cook without stirring until grains are tender but slightly al dente. About 25 minutes.
  • Remove from heat and stir in butter and cheese.
  • Stir in scallions and chipotle if using.
