This dragon fruit Waldorf Salad with apples, grapes, cilantro, and cashews, served on a bed of Bibb lettuce, is fresh, light, and delicious.

1 ripe dragon fruit
1/3 cup plain yogurt
2 tablespoons mayonnaise
Juice of 1/2 lemon
1 teaspoon honey
1/2 teaspoon freshly grated ginger
1/2 teaspoon kosher salt
1 Envy apple or another tart and sweet crispy apple, cut into 1/2 inch cubes
1/2 cup red seedless grapes, halved
1/2 cup cilantro leaves, chopped
1/3 cup cashews, chopped
Bibb lettuce leaves for serving

Steps:

  • Cut the dragon fruit into quarters, lengthwise. Peel off the skin. Cut the quarters widthwise into 1/4 inch thick slices.
  • Whisk together the yogurt, mayonnaise, lemon juice, honey, ginger, and salt in a large bowl.
  • Add the apples, grapes, dragon fruit, 3/4 of the cilantro, and 3/4 of the cashews and toss to combine.
  • Refrigerate the salad for at least an hour to chill.
  • Serve the salad over Bibb lettuce leaves, and sprinkle with the remaining cilantro and cashews.

1/2 cup walnuts halves
1/2 cup non-fat yogurt
2 tablespoons light mayonnaise
2 tablespoons minced fresh flat-leaf parsley
1 teaspoon honey
1/2 lemon, zest finely grated
Freshly ground black pepper
2 large crisp apples, such as Gala
2 ribs celery (with leaves), sliced into 1/2-inch-thick pieces (leaves chopped)
1/4 cup golden raisins
1/2 lemon, juiced
1 head Boston lettuce, trimmed, washed, and dried

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
  • Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
  • Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
  • When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

Number Of Ingredients 15

1 piece Dragon fruit (ripe, cut into cubes)
1 piece green apple ( cut into cubes)
1 piece red apple ( cut into cubes)
½ cup red grapes ( cut into halves)
¼ cup cilantro (chopped )
1/3 cup Greek yogurt
2 tbsp eggless mayonnaise
1 tsp lime juice
2 tsp honey
½ tsp salt
½ tsp ginger (grated)
2 tbsp almonds (chopped )
2 tbsp cashews (chopped )
1 tbsp walnuts (chopped )
5-6 leaves lettuce

Steps:

  • In a bowl take cubed dragon fruit, red apple, and green apple.
  • In another small bowl whisk together yogurt, honey, mayonnaise, salt, ginger, and lime juice.
  • Pour the prepared dressing over the cubed fruits.
  • Next add in grapes, chopped almonds, cashews, walnuts, and cilantro.
  • Toss to combine making sure the dressing is coating well the fruits.

3 tablespoons apple cider vinegar
3 tablespoons chopped fresh dill

2 cups shredded rotisserie chicken
2 celery stalks, diced, plus leaves for topping
1 apple, diced
1 cup halved red grapes
1 cup chopped walnuts
1/3 cup golden raisins
Kosher salt and freshly ground pepper
8 Bibb lettuce leaves
Finely chopped chives, for topping

Steps:

2 small cooked boneless skinless chicken breasts, cut into 1/2-inch cubes
1 small Granny Smith apple, cored and cut into 1/2-inch cubes

4 leaves Bibb or iceberg lettuce

Steps:

  • Whisk together the yogurt, mayonnaise, honey, ginger, lemon juice and 1/2 teaspoon salt in a large bowl. Add the pineapple, chicken, apples and three-fourths of both the cilantro and the cashews. Toss to combine and serve right away or refrigerate until chilled, about 1 hour.

"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples.
