Steps:

  • Preheat oven to 350 degrees F. Combine brownie mix and flour in a mixing bowl. Stir in extracts, eggs and oil; blend thoroughly. Dough will be stiff. Add chocolate chips. Drop by rounded tablespoons onto greased baking sheets. Bake for 10 to 12 minutes; cool on rack.

1/2 cup unsweetened cocoa powder
1 cup white granulated sugar
1/2 cup melted butter
3 tablespoons vegetable oil
1 egg
2 teaspoons pure vanilla extract
1 1/3 cups all purpose flour (or plain flour)
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup semi sweet chocolate chips, ((add more if desired))

Steps:

  • Preheat oven to 350°F (175°C). Line 2 cookie sheets or baking trays with parchment paper (baking paper).
  • In a medium-sized bowl, mix together the cocoa powder, white sugar, butter and vegetable oil. Beat in egg and vanilla until fully incorporated.
  • Add the flour, baking powder, and salt; stir the dry ingredients first before mixing them through the wet ingredients until a dough forms (do not over beat). Fold in the chocolate chips.
  • Scoop out 1-2 tablespoonful of dough with a cookie scoop (or small ice cream scoop), and place onto prepared baking sheets. Press them down as thick or thin as you want your cookies to come out.
  • Bake in hot preheated oven for 10-12 minutes. The cookies will come out soft from the oven but will harden up as they cool. (Be careful not to over bake as they will dry out.)
  • Allow to cool on the cookie sheet for 10 minutes before transferring to wire racks to cool.

1/2 cup butter or 1/2 cup margarine
1 cup white sugar
2 eggs
1 teaspoon vanilla
1/2 cup flour
1/3 cup cocoa
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chocolate chips (optional)
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)

Steps:

  • In a medium saucepan, melt butter or margarine on low heat.
  • Remove from heat and in same pan, stir in sugar, eggs and vanilla, stir well.

2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • Cream butter and sugars until fluffy and pale yellow in color. Beat in eggs and vanilla until well combined.
  • In a separate bowl, mix dry ingredients together, and add slowly to batter. Mix well. Add your chocolate chips and mix well.
  • Either scoop dough in heaping tablespoons or roll into large balls and place approximately 3 inches apart on a lightly greased cookie sheet.
  • Before you put them in the oven, flatten them with either your fingers or the bottom of a drinking glass, much like you would a sugar cookie. (This ensures the big, mall cookie appearance.)
  • Bake for 9 minutes. (They will look underdone but they aren't. ) Let them cool on the cookie sheet for approximately 5-8 minutes, then move gently onto a wire rack to finish cooling.

1 cup salted butter (melted and cooled - directions in step one)
1 1/2 cups granulated sugar
2 teaspoons vanilla
2 eggs
3 tablespoons strong coffee
2 2/3 cup all purpose flour (more if it's too sticky)
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips

Steps:

  • Melt 1/2 cup butter in the microwave for 30-45 seconds or until completely melted. Transfer to the refrigerator or freezer and cool until solid, about 30 minutes. Leave the other 1/2 cup butter out on the counter to bring it to room temperature. If the butter is rock solid (usually from the freezer) I stick it back in the microwave for 10 seconds to get it workable again. See notes for more info.
  • Preheat the oven to 350 degrees. With an electric mixer (I usually just use a hand-held one), cream the melted/solid butter, room temperature butter, sugar, and vanilla until creamy and fluffy. Add the eggs and mix until just incorporated.
  • In a separate bowl, combine the flour, cocoa powder, baking soda, and salt. Add the flour mixture to the creamy butter mixture and mix until incorporated, adding the coffee gradually as you go. The dough should be thick and sticky, but dry enough to touch with your hands without making a huge mess. If it's still too sticky, add more flour. Stir in the chocolate chips.
  • Roll the dough into even balls (I got about 20 out of the whole batch) and place on a baking sheet lined with parchment paper. Bake for 8 minutes and transfer to a cooling rack right away. They will be underdone and super puffy, which makes them perfectly soft, thick, and fudgy when cooled.

1/2 cup evaporated milk
1 cup butter
2 cups sugar
2 teaspoons vanilla

1 1/4 cups Gold Medal™ all-purpose flour
3/4 cup unsweetened baking cocoa
1/4 teaspoon salt
1 package (11.5 or 12 oz) semisweet chocolate chunks (2 cups)
1 1/2 cups chopped pecans
1 teaspoon oil

Steps:

  • Heat oven to 350°F. Grease 13x9-inch pan. In small saucepan, cook caramels and milk over low heat until caramels are melted and smooth, stirring frequently.
  • In medium saucepan, melt butter over low heat. Remove from heat. Stir in sugar, vanilla and eggs. Stir in flour, cocoa and salt until well blended. Stir in 1 1/2 cups of the chocolate chunks and 1 cup of the pecans. Spoon and spread batter in pan.
  • Gently and evenly drizzle caramel filling over batter to prevent large pockets of caramel and to prevent caramel from reaching bottom of bars. (Caramel can cover entire surface of batter.)
  • Bake 35 to 40 minutes or until set.
  • In small saucepan, melt remaining 1/2 cup chocolate chunks with oil over low heat, stirring until smooth. Drizzle over warm brownies. Sprinkle with remaining 1/2 cup pecans; press in lightly. Cool 20 minutes. Refrigerate 1 hour 30 minutes or until chocolate is set. Cut into squares. If refrigerated longer, let stand at room temperature for 20 minutes before serving.
