CHOCOLATE COVERED BANANA POPS
Steps:
- Peel, then cut each banana in half crosswise and insert a craft stick into each half. Place on a tray, cover with plastic wrap and place in the freezer until frozen, about 3 hours.
- Place the peanuts in a shallow dish or on a plate. Melt the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the bottom of the top pan. Pour the melted chocolate into a tall glass. Dip each frozen banana into the chocolate, turning it to coat, and immediately roll in the peanuts. Place on a tray covered in waxed paper. Serve immediately or wrap individually in plastic wrap or waxed paper and freeze for up to 2 weeks.

- Dipping decorations: granola, chopped nuts, sprinkles, jimmies, crushed cookies, and toasted coconut
- Line a sheet pan with waxed paper. Cut 1-inch off the end of each banana. Insert a popsicle stick into the cut-end of each banana, pushing the stick halfway in, leaving the other end exposed for use as a handle. Place the bananas on the sheet pan and freeze 1 hour.
- Melt the chocolate and butter in a bowl over a saucepan of simmering water, stirring occasionally.
- Arrange the dipping decorations on several flat plates. Working with 1 banana at a time, dip it in the chocolate and turn to completely coat (spoon some on, if needed). Roll the dipped banana in the desired decorations, transfer to the sheet pan, and return to the freezer.
- Once frozen, store the bananas in an airtight container.
- Serving suggestion: To serve at a kid's party, paint a hunk of styrofoam and stick the banana handles in the top, so they stand upright.

- Peel the bananas, Trim the ends and cut in half to make 6 mostly straight segments. Stick short skewers into one end of each banana.
- Line a baking sheet with wax or parchment paper. Lay the bananas on the baking sheet and freeze for at least one hour.
- Meanwhile, mix together the peanut butter, yogurt and one packet of stevia in a shallow bowl. Once the bananas are frozen, remove them from the freezer.
- Roll each banana segment in the peanut butter mixture and return to the baking sheet. You may have to use a spoon or butter knife to help spread the peanut butter dip on the banana.
- Once all bananas have been coated, return to the freezer and freeze for another 30-60 minutes, until the peanut butter coating is hard.
- Mix the chopped nuts, pretzel bits, cacao nibs, and the other packet of stevia together on a plate or shallow bowl. Set aside.
- Melt the chocolate and coconut oil in a double broiler (or in a glass bowl sitting on top of a small pot of boiling water).
- Remove the bananas from the freezer. One by one, dip each banana into the chocolate, coating it as evenly as possible.
- Hold the banana over the plate with the toppings and sprinkle toppings onto the banana until all sides are coated.
- Lightly place the coated banana on the baking sheet. Once all are done, return the bananas to the freezer.
- Freeze until set, about 10-20 minutes, or store in an airtight container to save for later.
- Serve and enjoy!

- Cut off a inch off the bottom of each unpeeled banana, and gently insert a popsicle stick into each one. Then unpeel bananas. Place banana's onto a baking sheet and freeze until frozen.
- In a double boiler melt chocolate chips and shortening. Dip frozen bananas into melted chocolate, then roll in coconut, chopped nuts, sprinkles, or anything you want.

- Slice bananas into 1/4-inch rounds. Place them on a baking sheet lined with parchment paper and freeze for 45 minutes.
- Start a pot of simmering water. Place the chocolate, coconut oil, and salt in a glass measuring cup or large wide mouth jar, and place it into the simmering water. Very carefully, stir the chocolate until it melts, using a hot pad or gloves to hold the glass. Do not let any of the water splash, or it will split the chocolate. (You can also melt the chocolate in the microwave in a liquid measuring cup, heating for about 30 second intervals and then stirring several times until the chocolate melts.)
- Make sure your toppings are ready, if using. Leave the jar in the double boiler to keep the chocolate warm. Use a fork to dip each banana slice into the jar, then shake off excess chocolate. Transfer the slice to the parchment lined baking sheet, using your finger to gently slide off the banana. Add toppings immediately (the chocolate freezes quickly) — this process is easiest with 2 people, 1 person to dip and 1 person to top. This recipe uses only 1 cup of chocolate for the bananas, but it’s nice to have extra chocolate to make the dipping process easier. You can dip pretzels or cereal into the remaining chocolate, or discard it.
- Return the bananas to the freezer and freeze for 30 minutes. Then transfer the banana bites to a freezer safe container. Store up to 1 month.

- Prepare your work space. Place a cutting board for the banana slices to your left. In front of you arrange bowls for the toppings and leave a space for the bowl of melted chocolate. To your right, set a parchment or silicone baking mat-lined baking sheet for placing the dipped banana slices. Have 2 forks handy. Your work will flow from left to right (reverse if you are left-handed).
