Time 30m

Number Of Ingredients 11

3/4 cup real salted butter (softened)
1 1/2 cups all-purpose flour
1/2 cup crushed Nilla wafers
1 - 8 oz package cream cheese (softened)
1 1/2 cups powdered sugar
1 cup frozen whipped topping (COOL WHIP) (thawed)
2 bananas (sliced)
1 4 oz package instant banana cream pudding
2 cups cold milk
remaining COOL WHIP
1/2 cup crushed Nilla wafers

Steps:

  • Preheat oven to 350F degrees.
  • Spray an 8 x 8 or 9 x 9 inch baking dish with nonstick cooking spray.
  • Prepare crust by adding the butter and flour to a bowl and blend using a large fork or pastry blender.
  • Add crushed Nilla wafers and mix (don't crush the wafers too small, leave some bigger pieces for a crunch.)
  • Press mixture into the bottom of prepared baking dish.
  • The easiest way to do this is to put a little flour on your fingers and press it down.
  • Bake at 350 degrees for 18-20 minutes or until light golden brown.
  • Remove from oven and let cool.
  • While the crust is cooling prepare the filling.
  • In a large bowl using a stand mixer or a hand mixer add the softened cream cheese and powdered sugar.
  • Cream the mixture until smooth.
  • Stir in one cup COOL WHIP and set aside.
  • Prepare pudding according to package directions (adding the 2 cups cold milk).
  • Using a wire whisk, mix the pudding until thickened.
  • When the crust is completely cooled spread on the cream cheese mixture evenly.
  • Then add a single layer of sliced bananas.
  • Next, add the prepared banana cream pudding and spread evenly.
  • Top with remaining COOL WHIP
  • Sprinkle the crushed vanilla wafers evenly over the top.
  • Chill for at least 2 - 3 hours before serving.

Time 4h

Yield 1 pie, 8-10 serving(s)

Number Of Ingredients 11

1 pie crust
4 large ripe bananas
2 cups whole milk
6 large egg yolks
1/4 cup cornstarch
3/4 cup dark brown sugar
2 teaspoons vanilla extract
1/2 teaspoon table salt
4 tablespoons unsalted butter, room temperature and cut into small pieces
1 1/2 cups cold heavy cream
3 tablespoons coffee-flavored liqueur (recommended -- Kahlua)

Steps:

  • Heat oven to 375 degrees F, arrange rack in upper third, and place a baking sheet on rack while oven heats.
  • Peel 1 banana and place in a blender with milk, egg yolks, cornstarch, sugar, vanilla, and salt and process until smooth. Pour into a small saucepan, bring to a simmer over medium heat and cook, stirring constantly until mixture bubbles and is thick, about 7 to 8 minutes. Remove from heat and stir in butter, a few pieces at a time, until melted. Set aside to cool slightly.
  • Pour in filling into the pie shell and evenly smooth with a spatula. Slice remaining 3 bananas into 1/2-inch pieces and arrange on top of custard. Smooth whipped cream over top, loosely cover in plastic, and set in refrigerator until cool and set, at least 3 hours.

  • Place very clean glass or metal bowl and metal whisk in freezer just until cold, about 5 minutes.
  • When everything is cold, place cream in bowl and begin to whisk until it froths up and starts to thicken, about 1 minute. Whisk vigorously until soft peaks form (the cream will hold a point when the whisk is lifted but will fall back into the bowl almost immediately), about 1 minute.
  • Add the liqueur and whisk until stiff peaks just form (the cream stays put on the whisk when it is lifted from the bowl), about 1 minute. Store covered in refrigerator until ready to use.

DULCE DE LECHE BANANA CREAM PIE

Dulce de Leche Banana Cream Pie image

Categories     dessert

Time 2h40m

Yield 1 (9-inch) pie

Number Of Ingredients 11

1 (5-ounce) package Maria crackers (about 41 crackers), or graham crackers
1/2 cup roasted, unsalted peanuts, plus 1/2 cup chopped, for garnish
1/8 teaspoon salt
8 tablespoons (1 stick) unsalted butter, melted
4 ounces cream cheese, at room temperature
4 tablespoons (1/2 stick) unsalted butter, at room temperature
2 tablespoons powdered sugar
2 teaspoons ground cinnamon
1 cup heavy whipping cream
1 cup store-bought dulce de leche (recommended: Nestle La Lechera Dulce de Leche), plus extra for decorating
3 medium bananas, sliced

Steps:

  • For the crust: Place the Maria crackers in the bowl of a food processor and process until coarsely ground. Add the peanuts and salt to the crumb mixture and process until finely ground. Add the melted butter and pulse until combined. Transfer the crust mixture into a 9 1/2-inch diameter glass pie dish, pressing and forming the crust evenly across the bottom and up the sides. Refrigerate for 10 to 20 minutes to solidify the butter.
  • For the cream filling: Using a hand-held mixer, whip the cream cheese and butter at medium speed until fluffy with minimal lumps. Add the powdered sugar and cinnamon, whipping at low speed until just combined and being careful not to curdle the butter. Add the cream and whip to soft peaks.
  • To assemble the pie: Spread the dulce de leche on top of the chilled crust. Top with the sliced bananas, forming 2 layers if necessary. Pour the whipped cream on top and spread evenly to completely cover the banana layer. Refrigerate and chill until set, about 2 hours.
  • To serve, top the pie with a 1-inch border of the remaining chopped peanuts. Warm the remaining dulce de leche in the microwave or on the stovetop until melted. Drizzle the dulce de leche on top of the pie and serve.

BANANA-DANA CREAM PIE

Banana-Dana Cream Pie image

Categories     dessert

Time 32m

Yield 8 servings

Number Of Ingredients 13

3/4 cup sugar
1/4 cup cornstarch
2 1/2 cups milk
1 tablespoon banana extract
2 tablespoons unsalted butter, cut in small pieces
1/4 teaspoon salt
3 egg yolks
9-inch pie shell, thawed and baked
3 bananas, sliced
Chantilly Cream, recipe follows
1 cup heavy cream, cold
2 tablespoons powdered sugar
1 large marshmallow

Steps:

  • Combine the sugar and cornstarch in a 3-quart saucepan and place over medium heat. Gradually stir in the milk and cook until mixture thickens, about 7 to 8 minutes. Be careful not to cook for too long. Cornstarch loses its thickening ability if it is cooked for too long. Remove pan from heat and whisk in the extract, salt and egg yolks until smooth. Place the pan back over heat, bring back to a simmer and stirring constantly with a wooden spoon, cook for 1 more minute. Be sure wooden spoon touches the bottom of the pan when stirring. Remove from heat; stir in butter.
  • Slice 2 bananas and line the bottom of the prebaked pie shell with 1/2 the slices. Spoon 1/2 the filling on top, smooth with a spatula. Lay down another layer of banana slices, followed by remaining filling. Chill for at least 3 hours. Top with Chantilly Cream, then decorate with remaining banana, sliced. Serve immediately.
  • Chill a mixing bowl and wire whisk in the freezer for 10 minutes before beginning. Beat heavy cream in the chilled bowl until it begins to foam and thicken up. Add the powdered sugar and continue to beat until the cream barely mounds. Do not overwhip.
  • Cut the marshmallow in half and microwave for 10 seconds until soft and almost melted. Now, whip it into the cream to form soft peaks. Aside from adding a hint of vanilla flavor, the gelatin in the marshmallow will stabilize the cream. Refrigerate, covered, until ready to use.

DOUBLE BANANA CREAM PIE

Time 4h

Yield 1 (9 1/2-inch) pie

Number Of Ingredients 18

1 recipe Perfectly Flaky Pie Crust, recipe follows
4 large ripe bananas
2 cups whole milk
6 large egg yolks
1/4 cup cornstarch
3/4 cup dark brown sugar
2 teaspoons vanilla extract
1/2 teaspoon table salt
4 tablespoons unsalted butter, room temperature and cut into small pieces
Coffee Whipped Cream, recipe follows
1 3/4 cups all-purpose flour
2 teaspoons granulated sugar
3/4 teaspoon table salt
6 tablespoons cold unsalted butter, small dice
1/4 cup shortening, crumbled
7 to 8 tablespoons ice water
1 1/2 cups cold heavy cream
3 tablespoons coffee-flavored liqueur (recommended: Kahlua)

Steps:

  • Heat oven to 375 degrees F, arrange rack in upper third, and place a baking sheet on rack while oven heats.
  • Meanwhile, roll dough on a lightly floured surface to a 12-inch diameter circle approximately 1/8-inch thick. Transfer dough to a 9 1/2-inch pie dish and trim edges so there is a 1/2-inch overhang. Use excess dough to press crust into pie plate. Fold edge of crust back on itself and press, as desired, into a decorative crust. (Can be made 2 days ahead and kept covered in refrigerator until ready to use.)
  • Pierce bottom of crust all over with a fork. Line pie with aluminum foil so it overhangs slightly and covers edges of pie crust and fill with uncooked rice, dried beans, or baking weights. Place pie dish on baking sheet and bake until crust is set and edges are slightly puffed up, about 25 minutes.
  • Gather foil together and remove along with weights. Continue to bake crust until it is thoroughly golden, about 15 minutes. Remove to a wire rack and let cool a few minutes before filling.
  • Meanwhile, peel 1 banana and place in a blender with milk, egg yolks, cornstarch, sugar, vanilla, and salt and process until smooth.
  • In a large bowl, mix together flour, salt, and sugar until well combined. Using clean hands, add butter and toss until just coated. Rub butter between thumb and forefingers to incorporate into flour mixture until butter is in lima bean-sized pieces and comes together in quarter-sized clumps when squeezed in palm, about 2 minutes. Add shortening, toss until just coated in flour, then rub into flour mixture until mixture forms pea-size pieces (some big chunks should remain) and comes together in fist-sized clumps when squeezed, about 1 minute. Drizzle in half ice water and rake through mixture with fingers until just moistened. Drizzle in remaining water 1 tablespoon at a time and comb through mixture with fingers to moisten. It will go from being a shaggy mess to coming together. Dough is moist enough when it is moistened through but is not wet when pressed. (Do not overwork the dough or it will become tough.)
  • While rotating the bowl with 1 hand, push dough between other palm and side of bowl to gather into a ball. Turn dough onto a piece of plastic wrap, press it into a flat disk, then close in wrap. Place in coldest part of refrigerator (usually back bottom shelf) at least 30 minutes before rolling out and forming into a crust.
  • Yield: about 1 pound dough (enough for 1 (9 to 10-inch pie dish))
  • Prep Time: 5 minutes
  • Inactive Prep Time: 30 minutes
  • Ease of preparation: intermediate
  • Place very clean glass or metal bowl and metal whisk in freezer just until cold, about 5 minutes.

DULCE DE LECHE BANANA CREAM PIE

Dulce de Leche Banana Cream Pie image

I created this decadent but not-too-sweet banana cream pie for a holiday family potluck. It has a delicious almond flour crust that lends a wonderful nutty taste without the stress of baking a traditional pie crust. It got rave reviews from some of the best cooks I know! Serve with coffee or black tea.

Time 6h25m

Yield 12

Number Of Ingredients 19

1 (14 ounce) can sweetened condensed milk
1 ½ cups blanched almond flour
¼ teaspoon sea salt
¼ teaspoon baking soda
¼ cup melted butter
1 tablespoon agave nectar
1 teaspoon vanilla extract
3 cups whole milk
4 egg yolks
⅔ cup white sugar
¼ cup cornstarch
½ teaspoon sea salt
1 vanilla bean, halved lengthwise
2 ripe bananas, or more to taste, sliced
1 teaspoon unflavored gelatin
¼ cup cold water
1 cup heavy cream
1 tablespoon superfine sugar
½ teaspoon vanilla extract

Steps:

  • Place the unopened can of sweetened condensed milk in a large pan. Cover with water. Simmer over medium-high heat for 3 hours, adding more water as needed to keep the can covered at all times. Remove can from the hot water using tongs and let cool completely.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine almond flour, salt, and baking soda in a large bowl. Whisk melted butter, agave nectar, and vanilla extract together in a small bowl. Stir into the almond flour mixture until thoroughly combined. Press into a deep-dish pie pan.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes. Let cool completely.
  • Meanwhile, whisk milk and egg yolks together in a bowl. Combine sugar, cornstarch, and salt in a large saucepan. Pour in milk mixture and stir until thoroughly combined. Add vanilla bean halves to the pan. Cook over medium heat, stirring constantly, until custard is thick and glossy, about 10 minutes. Remove from heat. Discard vanilla bean. Cool the custard for 30 minutes.
  • Open the can of cooked sweetened condensed milk and pour 1/2 over the pie crust. Spread evenly. Cover evenly with sliced bananas. Pour cooled custard over the bananas. Refrigerate pie for 2 hours. Place a bowl and beaters in the refrigerator for the icing.
  • Make icing before serving the pie. Sprinkle gelatin over cold water in a microwave-safe bowl; let soften for 5 minutes. Dissolve gelatin in the microwave for 3 minutes, stirring after every minute. Let cool until still liquid but no longer warm, about 10 minutes.
  • Pour heavy cream into the chilled bowl. Beat at high speed until beaters leave clear trails. Slowly add sugar and vanilla extract. Continue beating, pouring in gelatin in a steady stream, until stiff peaks form. Spoon over the pie. Serve immediately or refrigerate.
