Inside-Out Grilled Cheese Sandwich image

In my humble opinion, this crispy, crunchy, cheesy masterpiece is the ultimate grilled cheese sandwich. Make sure you follow some basic rules for this to work properly. Only use airy, nutritionally insignificant white bread. Use a nice sharp cheddar and be sure to use a quality non-stick pan over medium to medium-low heat.

2 tablespoons butter, divided
2 slices white bread
½ cup shredded extra sharp Cheddar cheese, divided

Steps:

  • Melt 1 1/2 tablespoons butter in a nonstick skillet over medium-low heat. Place bread slices in the skillet on top of the melted butter.
  • Spread about 1/4 cup Cheddar cheese on one slice of bread; place the other slice of bread, butter-side up, on top of the cheese. Spread about 2 tablespoons of cheese on top of the sandwich.
  • Melt remaining 1/2 tablespoon butter in the skillet next to the sandwich. Flip the sandwich onto the melted butter so that the cheese-side is facing down. Spread remaining cheese on top of the sandwich. Cook sandwich until cheese on the bottom is crispy and caramelized, 3 to 4 minutes. Flip sandwich and cook until cheese is crispy and caramelized on the other side, another 3 to 4 minutes.

8 slices bread
4 slices (1 ounce each) Cheddar cheese
4 slices (1 ounce each) Monterey Jack or mozzarella cheese

Steps:

  • Spread butter evenly on one side of each slice of bread.
  • Place 4 slices of bread, buttered sides down, in 12-inch skillet. Top each with 1 slice of Cheddar cheese and 1 slice of Monterey Jack cheese. Top with remaining bread, buttered sides up.
  • Cook uncovered over medium heat about 5 minutes or until bottoms of sandwiches are golden brown; turn. Cook 2 to 3 minutes longer or until bottoms are golden brown and cheese is melted.

6 tablespoons unsalted butter
2 to 3 teaspoons truffle oil
6 thin slices challah bread
7 ounces brie cheese, sliced, rind removed
4 fresh figs, sliced
6 ounces monterey jack cheese, sliced
1/2 cup fig preserves

Steps:

  • Preheat the oven to 350 degrees F. Melt 3 tablespoons butter with 1 teaspoon truffle oil in an ovenproof skillet over medium heat. Add 2 slices bread, and toast on both sides. Set the toast aside and reserve the skillet.
  • Lay out one slice of untoasted bread. Top with one-quarter each of the brie, figs and jack cheese, then a slice of toasted bread, then another layer of brie, figs and jack. Close with a slice of untoasted bread. Repeat to make another double-decker sandwich.
  • Melt the remaining 3 tablespoons butter with the remaining 1 to 2 teaspoons truffle oil in the skillet over medium heat. Add the sandwiches and cook until golden on the bottom, about 3 minutes. Flip and cook until golden on the other side, about 2 more minutes, then transfer the skillet to the oven and cook until the cheese is melted, 6 to 8 minutes. Serve with the fig preserves.

6 slices olive bread
2 purple onions, sliced
2 tablespoons olive oil
1 tomatoes or 1 yellow tomatoes, sliced
2 slices aged gouda cheese
2 slices chipotle cheddar cheese

Steps:

  • Brush the bread slices and onion slices with the olive oil. Place the onions on a hot griddle. Cook over medium heat until light golden brown.
  • Place 2 tomato slices on each of 2 slices of the bread. Top each with a slice of Gouda cheese.
  • Place a grilled onion slice on each of 2 more slices of the bread and top each with a slice of Chipotle Cheddar cheese.
  • Place each stack on a griddle. Cook over medium heat until the cheese begins to melt.
  • Assemble the sandwiches by inverting the Chipotle Cheddar cheese stack on top of the Gouda cheese stack. Top each with the remaining bread slices.
  • Place the sandwiches untoasted side down on a griddle. Cook for 3 minutes or until light brown.

6 thick slices bread (whole wheat stands up to the heft of this big sandwich)
1 large tomatoes, sliced crosswise into thin (1/4-inch)
4 slices sharp cheddar cheese
4 slices provolone cheese
6 -8 slices of crisp cooked bacon
4 slices American cheese

Steps:

  • Heat a large skillet over medium heat. Butter two pieces of bread on one side, and place next to each other in the skillet. These are the foundation slices for two sandwiches. Place a slice of cheddar on each piece of bread in the skillet, and arrange tomato slices in a single layer on each. Butter two more slices of bread, and place them butter side up over the tomato slices. When bottom of each sandwich is golden brown, use a spatula to carefully turn each sandwich. Now place a slice of provolone on top of each sandwich, and 1-2 slices of bacon. Top with the final slice of provolone.
