This Green Enchilada Sauce recipe is made from roasted green chiles, onions, garlic, and some classic Mexican herbs and spices all in only 20 minutes! It's easy to make and great for making enchiladas, chilaquiles and more.

4 anaheim peppers ((see notes for substitutions))
1 jalapeno pepper ((optional - see notes))
1 small onion, (chopped)
1/4 cup cilantro, (packed)
4 cloves garlic
1 teaspoon ground cumin
1 teaspoon coarse kosher salt
1/4 teaspoon dried oregano
1 tablespoon olive oil
1 cup vegetable broth ((or chicken broth))
3 tablespoons lime juice ((about 1 1/2 limes))

Steps:

  • Roast the peppers: Line a large baking sheet with aluminum foil and place anaheim peppers and jalapeno (if using) on top.
  • Set your oven rack directly underneath the broiler and turn the broiler on. Broil peppers for 10 minutes, flipping halfway through, until the skin is blackened and blistered.
  • Remove them from the oven and loosely cover the baking sheet with aluminum foil or plastic wrap to keep in some of the heat and help them steam. Let them sit for 5 minutes.
  • Pull and rub off as much of the loose skin on the peppers as possible. It doesn't have to be perfect, just as much as you can.
  • Discard the stems. Make a vertical slit down the middle of the peppers with a knife and remove the seeds and veins. (You can leave them in if you prefer your sauce extra spicy.)
  • Blend: Add the roasted peppers, onion, cilantro, garlic, cumin, salt, oregano and a splash of the vegetable broth to a large blender. Blend until completely smooth.
  • Heat: Heat the olive oil in a small pot over medium-high heat. Add the blended green enchilada sauce and lightly fry for 1 minute, stirring frequently.
  • Season: Remove from heat and add the remaining vegetable broth and lime juice. Mix together, taste and season with more salt if necessary.
  • Serve: Serve immediately or store in an airtight jar in the refrigerator for up to a week, or freeze for up to 3 months.

1/2 onion, diced
1 tablespoon butter
One 15-ounce can green enchilada sauce
Two 4-ounce cans chopped green chilies
2 cups freshly grated Cheddar-Jack cheese
12 yellow corn tortillas
Store-bought salsa, for serving
Sour cream, for serving
Fresh cilantro leaves, for serving

Steps:

  • In a small skillet, saute the onions with the butter over medium-low heat until the onions are nice and golden brown.
  • In a small saucepan, combine the green enchilada sauce with the green chilies and heat until very warm.
  • In the microwave or in the oven (on a baking sheet), melt some cheese all over the top of each tortilla so that it covers most of the surface area.
  • To serve, stack three cheesy tortillas on top of one another. Spoon green sauce over the top and add store-bought salsa, sour cream and cilantro as needed. Delish and so, so easy!

2 tablespoons olive oil
1 medium yellow onion, finely chopped
4 garlic cloves, minced
1 whole roasted chicken, bones and skin removed, meat shredded
1 cup shredded Mexican cheese blend
½ (8 ounce) package cream cheese, softened
¼ cup salsa verde
1 (2.5 ounce) can sliced olives, drained and diced
¼ cup chopped fresh cilantro
½ (4 ounce) can diced jalapeno peppers
¼ cup butter
¼ cup all-purpose flour
2 cups chicken broth
1 cup sour cream
½ cup salsa verde
16 corn tortillas
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.
  • Combine chicken, onion mixture, cheese blend, cream cheese, salsa verde, olives, cilantro, and jalapenos in a large bowl for the filling. Mix well.
  • Melt butter in a saucepan over medium heat. Stir in flour, then chicken broth. Cook until sauce starts to thicken, 6 to 8 minutes. Stir in sour cream and salsa verde; cook until heated through. Spread a spoonful of sauce over the bottoms of two 9x11-inch casserole dishes.
  • Wrap a tortilla in a damp paper towel and microwave for about 30 seconds. Fill with the chicken mixture, roll up, and place seam-side down into a baking dish. Repeat with remaining tortillas until each dish holds 8 enchiladas.
  • Spoon remaining sauce over the enchiladas. Sprinkle cheese on top.
  • Bake in the preheated oven until heated through, about 20 minutes.

1 lb tomatillo, washed & cut in halves
2 medium white onions, coarsely chopped
1/4 cup olive oil
4 -6 garlic cloves, smashed
1 1/2 teaspoons cumin
1 tablespoon chili powder
2 cups anaheim chilies, roasted, peeled, seeded and chopped or 4 ounces diced green chilies
3 cups low sodium chicken broth
salt and pepper, to taste

Steps:

  • In a medium sauce pan, place the olive oil, onions and garlic and saute until soft.
  • Add the broth,tomatillos, cumin, chili powder and green chilies and bring to a boil.
  • Reduce heat to a simmer and cover. Continue cooking until the tomatillos are soft.
  • Cool until room temperature.
  • Using a blender of food processer, blend until smooth.

1 tablespoon olive oil
1 small white onion, peeled and diced
1 jalapeño, cored (seeds removed) and diced
4 cloves garlic, peeled and minced
1 cup vegetable stock
4 (4-ounce) cans diced green chiles
1.5 teaspoons ground cumin
1 teaspoon fine sea salt
1/2 teaspoon freshly-ground black pepper

Steps:

  • Heat oil in a sauté pan over medium-high heat. Add onion and jalapeño and sauté for 5 minutes, stirring occasionally, until the onion is softened and translucent. Add garlic and cook for 1-2 more minutes, stirring occasionally, until fragrant.
  • Transfer the onion mixture to a blender or food processor. Add vegetable stock, green chiles, cumin, salt and pepper. Then puree until completely smooth.
  • Taste and season with additional salt, pepper and/or cumin if needed.
  • Serve immediately, or refrigerate for up to 4 days, or freeze for up to 3 months.

A great enchilada sauce made with fresh roasted Hatch green chilis. You can substitute Anaheim chilies if you can't get New Mexico.

1 1/2 cups New Mexico green chilies
4 garlic cloves
1 medium yellow onion
2 cups chicken stock
1/2 cup chopped tomato
1 teaspoon ground cumin
2 teaspoons salt
1 tablespoon canola oil
1 tablespoon flour

Steps:

  • Roast and peel the chilies, reserving the peels, stems and seeds. I like to use a food mill for this. After pealing the chilies, chop them up and add to the food mill with a medium plate. Reserve the seeds.
  • Add the reserved seeds, stems and peels to the chicken stock and bring to a boil. Simmer for ~ 20 minutes to infuse with the chili flavor and heat. Strain out the seeds and stems.
  • Chop the onion and garlic and sweat (add 1 tsp salt here) over medium heat for ~10 minutes, until soft. Pulse the onions in a blender a couple of times (or use the food mill if you have it out already) until slightly smooth but still a little chunky.
  • If you are doing the chopped tomatoes yourself, blanch the tomatoes for a couple of minutes in boiling water, transfer to ice water bath, peel and chop (or use the food mill again).
  • In a saucepan, heat the oil, add the flour and stir for a minute or so to form a roux. The roux should get to a golden brown. Add the stock to the pan and whisk to prevent any clumps of flour. Add all remaining ingredients. Bring to a boil, and simmer over medium heat, stirring frequently, until the liquid has reduced by half, about 30 minutes or so. Taste halfway through and add salt to taste.
  • It's ready to serve, but I like to let it cool and refrigerate for at least 2 hours or overnight. This allows the flavors to come together.
