CHOCOLATE CHERRY BROWNIES

Chocolate Cherry Brownies image

Chocolate Cherry Brownies are moist chocolate brownies topped with a cherry and ganache topping.

Provided by Amanda Rettke-iambaker.net

Categories     Dessert

Time 1h55m

Number Of Ingredients 11

1 1/2 cups (186g) all-purpose flour
1/3 cup (42g) dark cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
4 large eggs, (room temperature)
2 cups (400g) granulated sugar
3/4 cup (1 1/2 sticks or 170g) butter, (softened or room temperature)
2 teaspoons vanilla
1/2 cup seedless cherry preserves
6 ounces semisweet chocolate, (chopped)
1/2 cup heavy whipping cream

Steps:

  • Heat oven to 350°F. Prepare a 9x13 baking dish with non-stick spray or GOOP.
  • In a large bowl add flour, cocoa, baking powder, salt. Whisk together ingredients until they are fully incorporated.
  • In the bowl of a stand mixer or in a large bowl using a hand-held mixer, beat the eggs, sugar, butter, and vanilla until light and fluffy.
  • With the mixer off, add in the flour mixture. Turn mixer on low and mix until ingredients are well combined.
  • Pour brownies into a prepared baking dish and bake for 30-35 minutes at 350°F. Brownies are done when an inserted toothpick is removed with crumbs but not wet batter.
  • When brownies are slightly cooled (but still warm!), spread the cherry preserves over the top using an off-set spatula.
  • To make the chocolate ganache, bring the whipping cream to a boil and remove from heat.
  • With chocolate chips in a heat-safe bowl, pour cream over chips and slowly stir until all chips are melted.
  • Pour the chocolate ganache over the cherry preserves layer, covering as much of the preserves as possible.
  • Refrigerate for about an hour or until the chocolate is set.

CHOCOLATE CHERRY BROWNIES

Chocolate Cherry Brownies image

Beautiful, fudgy chocolate brownie studded with sweet and juicy cherries! This easy recipe produces perfect, rich and indulgent brownies every time!

Provided by Anna Wierzbinska

Categories     Dessert

Time 1h50m

Number Of Ingredients 9

150 g unsalted butter (room temperature)
300 g sugar (caster or granulated)
3 large eggs
115 g plain flour
70 g cocoa powder
1/2 tsp salt
1/2 tsp baking powder
200 g chopped chocolate (dark or milk or both)
250 g cherries (pitted) (cut into halves and quarters)

Steps:

  • Preheat the oven to 175 C (160 C fan). Butter the bottom and the sides of your 8" square baking tin and line it with baking paper, with plenty of overhang.
  • In a medium saucepan, combine the butter and 100g of sugar and heat over a medium heat, stirring slowly until the sugar has dissolved and the butter has melted completely, about 1-2 minutes. Set aside and allow to cool slightly.
  • In a large bowl, whisk together the eggs and the remaining 200g of sugar until light, smooth and fluffy, about 5 minutes. Pour the sugar and butter mixture into the sugar and egg mixture and whisk to combine.
  • In a medium bowl mix together flour, cocoa powder, baking powder and salt. Add the dry ingredients to the bowl with sugar, egg and butter mix and whisk to combine. Do not overmix, few streaks of flour remaining are just fine. Add the chocolate and cherries and fold them with spatula until they are evenly incorporated. Pour the batter into the prepared baking tin and smooth the top with spatula. You can also reserve a small handful of chopped chocolate and scatter it over the top of brownie batter.
  • Bake the brownies for 38- 40 minutes or until the top of the brownies is set and shiny, with few cracks in the surface. Toothpick inserted in the middle will not be clean and should have crumb on it.
  • Allow the brownies to cool and set in the tin for at least 1 hour or ideally, until completely cool (I always transfer mine to the fridge to set overnight). Use the overhang baking paper to lift the brownies from the tin, slice into 16 square pieces and enjoy!

THE ULTIMATE CHERRY BROWNIES (WITH CHOCOLATE)

The Ultimate Cherry Brownies (with Chocolate) image

These are the ultimate cherry brownies! They are made with chocolate and cocoa powder and are topped with fresh cherries and even more chocolate in the form of ganache.

Provided by Adina

Categories     Cakes

Number Of Ingredients 12

200 g all-purpose flour (7 oz/ 1 ¾ cup, Note1 )
50 g unsweetened cocoa powder (1.7 oz/ ½ cup )
1 teaspoon baking powder
250 g unsalted butter (9 oz/ 1 cup + 2 tablespoons)
300 g bittersweet chocolate (10.5 oz, 50 % cocoa, Note 2)
4 eggs large
250 g brown sugar (9 oz/ 1 ⅓ cup )
pinch of salt
700 g fresh sweet cherries (1.5 lb )
200 g bittersweet chocolate (7 oz, 50 % - 70 % cocoa, Note 2)
500 ml heavy cream (17 fl.oz/ 2 cups )
2 tablespoons unsweetened cocoa powder

Steps:

  • Preheat the oven to 180°C/ 360°F. Grease the baking tin and line its bottom with parchment paper, leaving an overhang on two sides.
  • Dry ingredients: Combine flour, cocoa powder, baking powder, and salt in a bowl. Set aside.
  • Melt chocolate and butter: Fill a pan with hot water, about a quarter full. Place the heatproof bowl on top, and make sure that its bottom doesn't touch the water. Add cubed butter and chopped chocolate and stir until melted and smooth. Don't let the mixture get too hot, remove it from the heat if it gets too hot.
  • Batter: Beat the eggs and the sugar in a large bowl for about 5 minutes or until the mixture is thick. Immediately mix in the chocolate butter mixture.
  • Add the flour mixture and mix only shortly, just enough to combine the ingredients.
  • Bake: Pour the mixture into the prepared tin and level. Bake for about 25 minutes. The brownies should remain somewhat gooey in the middle. Let cool completely in the pan.
  • Prepare cherries: Was, dry, and pit the cherries. Set them aside.
  • Melt chocolate: Finely chop the chocolate. Place it in a small heatproof bowl. Fill a pan with hot water, about a quarter full. Place the heatproof bowl on top, and make sure that its bottom doesn't touch the water. Stir until melted and smooth.Transfer to a larger bowl and let cool slightly while you whip the cream.
  • Whip the heavy cream shortly. Add 2 tablespoons cocoa powder and continue whipping until stiff.
  • Combine: First, fold only about ¼ of the whipped cream into the chocolate. Once incorporated, fold in the rest. Work carefully but rather quickly.
  • Place the brownie or a serving platter.
  • Spread about ¼ of the chocolate-cream mixture over it. Top with about ½ of the pitted cherries.Cover with the remaining chocolate cream and finish with the remaining cherries.
  • Refrigerate: Place the cherry chocolate brownies in the refrigerator for about 2 hours or until set.
  • Cut into pieces before serving.

Time 55m

Yield 16 servings

Number Of Ingredients 8

1 stick (8 tablespoons) unsalted butter, at room temperature, plus 1 1/2 teaspoons for buttering the baking dish
6 ounces unsweetened chocolate, chopped
3/4 cup granulated sugar
1 teaspoon pure vanilla extract
1/8 teaspoon kosher salt
2 large eggs, plus 1 large egg yolk, at room temperature
1/2 cup all-purpose flour
3/4 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F. Butter an 8-inch square baking dish with 1 teaspoon butter. Cut a piece of parchment paper in a strip to line the bottom and 2 sides of the dish. Butter the paper with the remaining 1/2 teaspoon butter and set aside.
  • Place the unsweetened chocolate and 8 tablespoons butter in a medium heat-proof bowl that fits comfortably over a saucepan filled with 1 inch water. Place the double-boiler over medium heat and cook, stirring constantly with a silicone spatula, until the chocolate and butter are just barely melted. Remove the bowl from the heat and continue to stir for 1 minute to cool slightly. The mixture should be warm to the touch, not hot.
  • Using a hand-held mixer, beat the sugar, vanilla and salt into the chocolate mixture until smooth. Add the eggs and yolk all at once and beat until fully incorporated and smooth. Fold in the flour and semisweet chocolate chips with a silicone spatula until just barely combined; a few streaks are fine. Pour the mixture into the prepared pan and bake on the middle rack until just set and a toothpick inserted in the center comes out clean, about 30 minutes. Do not overbake. Allow to cool to room temperature before cutting into 16 small pieces.

DOUBLE CHOCOLATE CHERRY BROWNIES

Double Chocolate Cherry Brownies image

I love these and when I bring them into work they do not last long. Also a favorite request at barbques! If you like marachino cherries give these a try, the juice gives them a good flavor and they will not dry out like most brownies, the cherries keep them moist along with the chocolate chips.

Provided by Eileen Haddock

Categories     Chocolate

Time 1h10m

Number Of Ingredients 5

2 box brownie mix
1 jar(s) marachino cherries
1 c chocolate chips
1 pkg milk chocolate frosting

Turn half of the mix into the bottom of a long greased pan and sprinkle the chocolate chips on top of the batter, then cover the chips with the rest of the batter.
