FRUIT AND CREAM CHEESE BREAKFAST PASTRIES RECIPE BY TASTY

Fruit and Cream Cheese Breakfast Pastries Recipe by Tasty image

Here's what you need: cream cheese, powdered sugar, vanilla extract, flour, puff pastry, strawberry, raspberry, blackberry

Provided by Camille Bergerson

Categories     Bakery Goods

Yield 18 pastries

Number Of Ingredients 8

8 oz cream cheese, softened
¼ cup powdered sugar
1 teaspoon vanilla extract
flour, to coat workstation
2 sheets puff pastry, thawed
strawberry, stems removed and sliced
raspberry
blackberry

Steps:

  • Preheat oven to 400ºF (200ºC), and prepare two cookie sheets with parchment paper.
  • In a bowl, mix cream cheese, sugar, and vanilla until fully combined.
  • Lightly flour the surface and roll out puff pastry on top to flatten.
  • Cut each sheet of puff pastry into 9 equal squares.
  • On the top right and bottom left of the pastry, cut an L shape approximately ½ inch (1 cm) from the edge.
  • NOTE: This L shape should reach all the way down and across the square, however both L shapes should not meet at the ends. Your pastry should look like a picture frame with two corners still intact.
  • Take the upper right corner and fold down towards the inner bottom corner. You will now have a diamond shape.
  • Place 1 to 2 teaspoons of the cream cheese filling in the middle, then place berries on top.
  • Repeat with the remaining pastry squares and place them onto the parchment covered baking sheet.
  • Bake for 15-20 minutes or until pastry is golden brown and puffed.
  • Enjoy!

HOMEMADE BREAKFAST TARTS

Homemade Breakfast Tarts image

Provided by Ree Drummond : Food Network

Time 2h20m

Yield 8 tarts

Number Of Ingredients 14

3 cups all-purpose flour, plus more for rolling
2 tablespoons granulated sugar
1 teaspoon salt
1 cup (2 sticks) cold butter, cubed
1 egg
5 tablespoons cold water (or more if needed)
1 tablespoon distilled vinegar
One 13-ounce jar mixed berry jam (about 1 1/4 cup)
1 egg, lightly beaten for egg wash
1 1/4 cup powdered sugar
2 tablespoons milk
1 tablespoon mixed berry jam
2 drops neon purple food coloring
Multicolored jimmies or sprinkles

Steps:

  • For the crust: In a large bowl, mix together the flour, granulated sugar and salt. Using a pastry cutter or two knives, cut the butter into the flour until it resembles tiny pebbles. Lightly beat the egg and add to the mixture. Next, add the cold water and vinegar. Stir until the dough just comes together but is still crumbly, using more water if necessary. Form the dough into a disc and wrap tightly in plastic wrap. Chill for 1 hour.
  • Preheat the oven to 400 degrees F. Line two sheet pans with parchment.
  • On a floured surface, roll half of the dough out into a large rectangle, 12 inches by 16 inches. Cut the long side into 4-by-4-inch wide strips. Cut each strip in half across the middle, making 8 equally sized rectangles (4-by-6-inch).
  • For the filling: Put 2 tablespoons of the jam into the center of four of the cut rectangles. With a pastry brush, brush egg wash around the edges. Place the remaining rectangle over the jam, crimping the edges with a fork to seal. Press lightly on the top to help distribute the jam evenly. Transfer to the prepared sheet pan. Repeat with the other half of the dough. Bake until barely golden, 16 to 18 minutes.
  • For the glaze: Meanwhile, sift the powdered sugar into a large bowl. Add the milk, jam and food coloring. Mix until smooth, then set aside.
  • Remove the tarts from the oven and allow to cool, 20 minutes. Spoon over the glaze and top with sprinkles. Let the glaze set for 1 hour before bagging up.

DOUBLE CHOCOLATE & PASSION FRUIT TART

Double chocolate & passion fruit tart image

Pair the sharpness of passion fruit with the sweetness of white chocolate in this delightful tart from Tom Kerridge served in a dark chocolate pastry casing

Provided by Tom Kerridge

Categories     Dessert

Time 1h20m

Number Of Ingredients 13

175g plain flour, plus a little extra for dusting
80g icing sugar
40g 70% cocoa powder, the best quality you can find
140g butter, chilled and cut into small cubes
2 medium egg yolks, lightly beaten
185ml whole milk
185ml double cream
60g white caster sugar
4 egg yolks
300g white chocolate
6 passion fruit
75ml caster sugar
100ml orange juice

Steps:

  • To make the pastry, sift the flour, icing sugar and cocoa powder into a small food processor. Add the butter and blitz together until it is the texture of breadcrumbs. Add the egg yolks and mix together gently with your fingers until it forms a soft paste. You may need to add a little water, 1 tbsp at a time. Wrap in cling film and place in the fridge to rest for at least 1 hr.
  • Heat the oven to 190C/170C fan/gas 5. Roll out the pastry on a lightly floured surface to the thickness of a pound coin. Use the pastry to line a 20cm round tart tin with a slight overhang. Prick the pastry with a fork and chill in the fridge for 1 hr. Line the inside of the pastry case with baking parchment and fill with baking beans, uncooked rice or dried pulses to keep the base flat. Place the tart tin on a baking sheet and bake for 25 mins. Remove from the oven, take out the parchment and beans and return to the oven to cook for a further 10-20 mins until the pastry case is cooked through and dried out. Remove from the oven and leave to cool. Trim off the excess pastry with a serrated knife.
  • To make the custard filling, pour the milk, cream and sugar into a saucepan and bring to the boil. Remove from the heat and put the egg yolks in a bowl. While whisking the yolks, pour in the cream mix, until fully incorporated. Pour the custard back into the saucepan and heat to 85C (use a digital probe to check the temperature), or until it's thick enough to coat the back of a spoon. Tip the white chocolate into a large bowl and pour over the hot custard, stirring to make a rich chocolate custard. Leave to cool, then ladle the custard evenly into the pastry case and chill for at least 2 hrs, or overnight if possible.
  • For the passion fruit syrup, cut the fruit in half, scrape out the seeded flesh into a saucepan and add the caster sugar and orange juice. Put the pan on a medium heat, bring to the boil and simmer for 25 mins until thickened and syrupy. Remove from the heat and leave to cool. Can be made several days ahead. Pour the chilled passion fruit syrup over the chilled tart just before slicing.
