FRIED ZUCCHINI BATTER

Fried Zucchini Batter image

Recipe from box of Argo Cornstarch in the early 80's. This batter is light and tasty. Posting recipe as request from one of my sons. This batter is great for zucchini, but can be used on any thing you would like to fry up! Many reviews complain of the lack of seasoning. I have taken the garlic powder up to 1 tsp. and it helps, a dash of hot sauce works well too. If you must, sprinkle lightly with additional salt immediately after removing from the frying oil. Another tip - I prefer the thinner batter for a lighter and crunchier coating on the veggies (the thicker batter just seems to be too doughy for our tastes).

CRISPY FRIED ZUCCHINI - COURGETTE FRITTERS RECIPE (GREEK KOLOKITHAKIA TIGANITA)

Crispy Fried Zucchini - Courgette Fritters Recipe (Greek Kolokithakia tiganita) image

A super simple fried zucchini recipe for the lovers of the authentic Greek cuisine! Fried zucchini (Tiganita Greek kolokithakia) is a favourite Greek meze that is served in every Greek tavern and you should really give it a try making it at home!

Provided by Eli K. Giannopoulos

Categories     Appetizer

Time 30m

Number Of Ingredients 9

5 medium sized zucchini
1 cup flour
salt and pepper to taste
vegetable oil for frying
5 medium sized zucchini
350ml beer
200-250g flour
salt and freshly ground pepper
vegetable oil for frying

Steps:

  • To prepare this Greek fried zucchini recipe start by washing the zucchini. Remove the stalks and ends and slice in thin slices, approx. 0.5 cm or lengthwise. (For this fried zucchini recipe the skin is not removed, so make sure to wash it thoroughly).
  • Place the zucchini in a colander along with some salt and set aside for 1 hour to drain.
  • Dredge the zucchini in the flour, place them on a large platter and leave in the fridge for 3-4 hours. At this point the moisture coming out from the zucchini will transform the flour into a batter. If you don't have the time, just coat them with flour and dip each one separately in a glass of water just before frying.
  • Into a medium sized frying pan pour enough vegetable oil to deep fry the zucchini. Heat the oil to medium high heat until it begins to bubble. Test if the oil is hot enough by dipping one of the zucchini rings in; if it sizzles the oil is ready. For crispy fried zucchini it is best to fry in batches for about 2 minutes, flipping them sides, until nicely coloured.
  • Remove the fried zucchini using a slotted spoon and place on some paper towel to dry for 1-2 minutes. Have a taste and season. Serve while still hot with tzatziki sauce.
  • To prepare this batter fried zucchini recipe, start by preparing the batter for the fried zucchini. Pour the beer in a large bowl and add the flour (sifted) a little bit at a time whilst whisking, being careful not to get lumpy. The batter for coating the fried zucchini should be more liquid (not firm), so if it's getting too firm, use less flour than this recipe calls for. Season with salt and pepper, cover the batter with some plastic wrap and place in the fridge for 30 minutes.
  • In the meantime wash the zucchini, remove the stalks and ends and slice in thin slices, approx. 0.5 cm or lengthwise.
  • Place the zucchini in a colander along with some salt and set aside for 15-20 minutes to drain. Pat them dry with some kitchen paper.
  • Dip the zucchini one at a time in the batter and fry on both sides until nicely coloured. Remove the fried zucchini using a slotted spoon and place on some paper towel to dry for 1-2 minutes.
  • Enjoy this delicious batter fried zucchini while still hot with a last minute squeeze of a lemon!

BATTER FRIED ZUCCHINI OR SQUASH

Batter Fried Zucchini or Squash image

Remember the power of ONE for a light, crisp batter. I use any kind of summer squash I have growing in the garden -- zucchini, Yellow Crookneck, Patty Pan, 8 Ball, Papaya Pear, Sunburst, ... . IMO, the best size for frying is when the seeds have begun to develop but before they've gotten large and hard. The immature seeds add depth to the flavor. Cooking time will vary with the size of your frying utensil.

Provided by 3KillerBs

Categories     Vegetable

Time 1h

Yield 8 serving(s)

Number Of Ingredients 7

4 -6 zucchini or 4 -6 summer squash
1 egg
1 cup milk
1 teaspoon italian seasoning
1 dash garlic powder
1 cup self-rising flour
grated parmesan cheese (optional)

Steps:

  • Clean and cut up zucchini/squash. I like to cut them into sticks rather than slices because that shape fries more evenly in deep fat without need of turning.
  • Pre-heat oven to 250.
  • Prepare an oven-proof pan by lining it with several paper towels.
  • Either heat your deep fryer to the temperature recommended for fried squash in its manual or heat 2 inches of frying grease (I prefer a 50-50 mix of oil and shortening), in your preferred, stove-top, frying utensil -- mine is a cast iron chicken fryer -- until a drop of water thrown into the grease sizzles vigorously but not violently.
  • While the grease is heating beat the egg in a shallow bowl. Beat in the milk, seasonings, and finally the flour. The batter will be thin and may have a few lumps.
  • Toss a skillet's worth of squash sticks in the batter and coat thoroughly.
  • When the grease is ready carefully drop in the battered sticks, being sure not to drop them right on top of each other. If you are in doubt of your ability to do this without burning yourself use tongs.
  • Yes, the thin batter will have drippy bits that dangle from the sticks and there will be a lot of little, batter crispies in the grease. The drippy bits are what makes this batter light and crisp where a thicker batter might be heavy.
  • If necessary turn the pieces over partway through so as to brown them evenly.
  • When nicely brown transfer the sticks to the prepared pan and put them into the oven while you fry the next batch. Do not try to fry too much at once or the temperature of the grease will drop and the coating will end up soggy and greasy.
  • When the squash is done serve with grated Parmesan at the table.
  • Some people might like ranch or blue cheese dressing instead or a simple dipping sauce made from sour cream, fresh dill, and a bit of lemon juice to thin it.
  • This recipe doubles nicely. But if you need more than that I suggest making separate, additional batches since the rising power fades after long sitting.
  • Leftovers can be reheated on a baking sheet in a 450 degree oven. The microwave would make them soggy and unpleasant.
  • This batter is also good on eggplant, onion rings, and chicken tenders.
  • Note: If you do not keep self-rising flour in the house you can use 1 cup all-purpose flour mixed with 1tsp baking powder and a pinch of salt instead.

PAN-FRIED ZUCCHINI

Pan-Fried Zucchini image

Fresh zucchini coated with yellow cornmeal and fried in olive oil. A variation is to add sliced onions at the beginning. Any leftovers reheat well in the microwave.

Provided by Judy Sing

Categories     Side Dish     Vegetables     Squash     Zucchini     Fried Zucchini Recipes

Time 45m

Yield 4

Number Of Ingredients 4

3 zucchini
¼ cup yellow cornmeal
2 tablespoons olive oil
salt and pepper to taste

Steps:

  • Wash and dry the zucchini. Trim off ends, then slice zucchini into 1/8 inch thick rounds. Place cornmeal in a medium bowl, and toss in zucchini slices, mixing thoroughly to coat.
  • Heat oil in a large nonstick skillet over medium heat. Place all of the zucchini pieces into the hot oil and fry over medium heat. Sprinkle with salt and pepper. Watch zucchini closely, adding more oil if it begins to brown too quickly. When it is golden brown on one side, flip it over to brown on other side. It will clump together as it cooks, that is what you want.
  • When zucchini is evenly browned, turn heat down to low and cover pan with a lid. Allow it to steam until zucchini is slightly tender. Turn zucchini, replace lid, and steam until soft. Remove lid and turn heat back up to medium-high. Fry on both sides until crisp. Serve hot.

DEEP FRIED ZUCCHINI

Deep Fried Zucchini image

I was looking for a plain old battered, deep fried zucchini, but most on here are seasoned, or breaded and baked. So here is plain old beer battered zucchini, care of momofukufor2.com She has this amazing sriracha-lime mayonnaise for dipping (I'll put it in as the last step); between that and good old dill dip, these things disappear fast. KOLOKYTHAKIA TIGANITA - GREEK BATTERED FRIED ZUCCHINI / COURGETT

Kolokythakia Tiganita - Greek Battered Fried Zucchini / Courgett image

Here's another grear vegetarian Greek dish. Soda water in the batter keeps these thin slices of fried zucchini light and crispy. A simple recipe, serve these as an appetizer or meze, or a side dish. Recipe by Nancy Gaifyllia, she says "The key to great crispy zucchini is to slice thinly and fry at high heat so the zucchini has time to cook but not absorb a lot of oil. Use a cheese slicer, mandoline, or long-bladed knife to get uniformly thin slices." Time to make doesn't include resting time. Posted for ZWT 4.

WORLD'S BEST FRIED ZUCCHINI

World's Best Fried Zucchini image

I have loved this ever since I was a little girl. It takes a while to make but it's really easy and totally worth it. Cooked zucchini is the best!! **However, I must mention that I use garden zucchinis for this recipe that tend to be quite a bit larger than those purchased in a grocery store. If you are using smaller zucchinis, you will need less of the coating mixture.

1 zucchini (about 450 g/ 1 lb)
2 tablespoons all-purpose flour
2 eggs
vegetable oil (or lard for shallow frying)
coarse sea salt

Steps:

  • Slice the zucchini into ½ cm/ 0.2 inch thick slices. Place the flour on a plate. Beat the eggs in a shallow bowl. Coat the zucchini slices lightly with flour and pat the pieces with your hands to remove the excess flour.

  • Drag each zucchini slice through the beaten eggs just before placing it in the pan.

1 to 1 1/8 cups chilled seltzer or club soda
1/4 pound mozzarella, grated coarse (about 1 cup)

16 zucchini blossoms, pistils removed it desired
vegetable oil for deep-frying

Steps:

  • In a bowl whisk together the flour, the curry powder, and the salt, add 1 cup of the seltzer, and whisk the batter until it is smooth. Let the batter stand for 10 minutes and, if desired, thin it with enough of the remaining seltzer to reach the consistency of crêpe batter. In a small bowl toss together the mozzarella and the coriander and divide the mixture among the blossoms, stuffing it inside them and pressing the ends of the blossoms closed.
  • In a deep skillet heat 1 inch of the oil to 375°F. on a deep-fat thermometer. Working quickly in batches, dip the blossoms, 1 at a time, in the batter, coating them completely, and fry them in the oil, turning them, for 1 1/2 to 2 minutes, or until they are golden and crisp. (Make sure the oil returns to 375°F. before adding each new batch.) Transfer the blossoms as they are fried with a slotted spoon to paper towels to drain, sprinkle them with salt, and serve them warm.

  • Rinse the zucchinis and remove the stems and bottoms. Cut into 8 cm (3-inch) long slices that are about 1 cm thick (0.4-inch).
  • In a mixing bowl using a whisk, stir the flour, salt, and pepper to combine. Keep stirring while your pour in the soda. Stir well until no flour lumps remain in the batter.
  • Cover the bottom of a large frying pan 3 cm high with frying oil. Heat over medium-high heat until temperature reads 140-145°C (284-293 °F) on an instant-read thermometer. Or simply toss a drop of the batter in the oil to check if it's hot enough.
  • Dip a zucchini slice into the batter, shake to remove excess batter, and add to the hot frying oil. Give it a few seconds to form a crust before adding the next slice (so they won't stick together). Cook no more than 5-6 slices on each batch. In order to not get overcrowded in the pan, and the temperature to remain high. Cook for about 3-4 minutes until deep golden and then using two forks flip them to cook on the other side as well for another 3-4 minutes. Transfer on paper towels. Do not stack them while they're hot, so they won't get soggy.

  • Rinse zucchini and pat dry. Trim off ends. Cut them horizontally into thirds (if your zucchini is small, you can just cut it in half horizontally.) Next, cut each piece in half the long way. Then cut each of those pieces in half the long way. (See photos in post.)

You should end up with strips of zucchini about 3 inches long, 1/8 inch-to-1/4 inch thick, and around 3/4 inch wide. Each strip should have an edge of green skin on it.
  • Place the zucchini strips in a large mixing bowl as you slice them. Let the strips sit in the bowl to dry out for at least 30 minutes.
  • In a medium bowl, mix flour with 1 1/3 teaspoons salt and 1/3 teaspoon pepper. In a small bowl, crack your eggs and sprinkle salt and pepper on them. Beat the eggs with a fork or whisk.
