Steps:
- Preheat oven to 375 degrees F.
- To prepare the crust: In a large bowl, mix together the flour and the salt. Using 2 knives, cut in the butter until coarse crumbs form. Add water, 1 tablespoon at a time, tossing with a fork, until dough forms. Shape into a disk, wrap in plastic wrap and chill in refrigerator for 30 minutes. Lightly flour counter and rolling pin and roll into about a 10 or 11-inch circle. Fit into a 9-inch pie pan. Trim edge, leaving 1/4-inch overhang. Prick dough with a fork. Line with foil and fill with dried beans. Bake for 10 minutes. Remove the foil and dried beans. Bake until lightly golden, about 5 minutes more. Transfer to wire rack to cool.
- To prepare the filling: In a medium skillet cook the bacon over medium heat until crisp, 8 to 10 minutes. Crumble bacon. Transfer to a paper towel to drain. In a small bowl whisk together the eggs, cream, thyme and pepper. Pour into the crust. Sprinkle egg mixture with bacon and cheeses. Bake until golden and custard is set, about 30 minutes.

Steps:
- Stir together the flours, baking powder, baking soda, salt and walnuts. Set aside.
- In large bowl of mixer, cream butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Stir flour mixture into creamed mixture alternately with milk and wine.
- Spoon half the batter into another bowl. Stir cheddar into one portion of batter and blue cheese into the other.
- Spoon half the Cheddar batter into each of 2 greased and floured 9 x 5 inch loaf pans, distributing batter down one long side of each pan. Then spoon half the blue cheese batter into each pan alongside cheddar batter. If you prefer, you can make 1 Cheddar loaf and 1 blue cheese loaf by putting all of one type of batter into 1 pan etc.
- Sprinkle poppy seeds over cheddar batter and sesame seeds over blue cheese batter.
- Bake at 350°F for about 1 hour or until a wooden pick inserted in center of loaf comes out clean.
- Let cool in pans for 10 minutes, then turn out onto racks to cool completely.
- May be wrapped and frozen for up to 2 months.
- To serve, cut bread into 3/4 inch thick slices.
- It has a tendency to crumble so don't try to slice thin.

DOUBLE CHEESE MEATLOAF
I found this on the web years ago, but unfortunately, I don't remember where. This has a ketchup glaze, but if you reduce the amount of ketchup and increase the brown mustard (which is what I do) you can't tell. This is excellent, and really doesn't have a lot of filler. I also increase the cheese. Sometimes I make this in my muffin tins. I generally serve this with mashed potatoes and dinner rolls, and my two picky sons both like it.

CHEESE AND ONION BREAD
This bread is a savory treat! I use my heavy-duty mixer and the sponge method. White whole wheat flour works well in this recipe, and the onions can be replaced with chives or scallions.

CHEESE BREAD
This is a wonderful recipe for cheese bread, if you don't want to add in grated cheddar, add in small cubes of cheddar by hand after kneading. This can also be made on a stand mixer with a dough hook attached. If desired you can add in about 2 tablespoons room temperature Crisco shortening in with the yeast, warm water, sugar and salt, the bread will stay fresher longer and bake out with a softer texture.
