2/3 cup packed brown sugar
1/2 cup heavy whipping cream
1/2 teaspoon ground cinnamon

1/4 cup chopped pecans, optional
3 large bananas, sliced
12 slices egg bread or challah (about 3/4 pound)
1-1/2 cups 2% milk
3 large eggs
1 tablespoon sugar
1 teaspoon vanilla extract

Steps:

  • Place butter in a microwave-safe bowl; microwave, covered, until melted, 30-45 seconds. Stir in brown sugar, cream, cinnamon, allspice and, if desired, pecans. Add bananas; toss gently to coat., Transfer to a greased 13x9-in. baking dish. Arrange bread over top, trimming to fit as necessary., Place remaining ingredients in a blender; process just until blended. Pour over bread. Refrigerate, covered, 8 hours or overnight., Preheat oven to 375°. Remove French toast from refrigerator while oven heats. Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 5-10 minutes. Invert to serve.

Caramel Syrup:
6 tablespoons butter
1 cup brown sugar
2 tablespoons corn syrup
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
French Toast:
2 medium ripe bananas (thinly sliced, plus additional bananas for serving)
Optional: 1/4 cup dark rum
1 loaf Challah bread (or other rich or eggy bread, cut into cubes)
8 eggs
1 1/2 cup milk
2/3 cup sugar
2 tablespoons butter (melted)
1 1/2 teaspoons vanilla extract
Pinch of salt
Whipped cream for serving

Steps:

  • Gather the ingredients.
  • In a small saucepan combine the butter, brown sugar, and corn syrup to make the caramel mixture . Stir the mixture and heat until the sugar has completely dissolved and the mixture starts to bubble about 3 to 5 minutes.
  • Stir the vanilla and cinnamon into the sugar mixture and then pour it into a 9 x 13-inch baking dish.
  • Layer the sliced banana on top of the sugar mixture. Drizzle the rum over the bananas at this time, if using.
  • Place the cubed bread over the top of the bananas in an even layer.
  • In a medium bowl, whisk together the eggs, milk, sugar, melted butter, vanilla extract, and salt until thoroughly beaten.
  • Pour the egg mixture over the bread cubes. Press down on the cubes so that they submerge more fully in the egg mixture.
  • Cover with aluminum foil and refrigerate for at least 5 hours, ideally overnight. When you are ready to serve, preheat the oven to 375 F and take the French toast breakfast casserole out of the refrigerator. Leave the French toast on the counter while the oven preheats.
  • Bake the French toast, covered for 45 to 60 minutes. Monitor the casserole and check to make sure that the egg mixture is thoroughly cooked and not runny. Remove the aluminum foil for the last 5 to 10 minutes for a crunchy top.
  • Remove the casserole from the oven and top with additional caramel syrup (can make ahead of time or right after you take it out of the oven), additional sliced banana, and whipped cream. Alternatively, you can also flip the pan upside down onto a plate so that the caramelized bananas are displayed on top. Then top with additional bananas, whipped cream, and caramel syrup.

Steps:

  • Spray a 13x9-inch baking dish with cooking spray.
  • Arrange bread slices in one layer in baking dish, squeezing them slightly to fit.
  • In a large bowl, whisk together eggs, egg substitute, milk, vanilla, ½ teaspoon of cinnamon, agave or sugar, salt, and rum until combined well.

2/3 cup light brown sugar
4 tablespoons unsalted butter
1/4 teaspoon salt
1 tablespoon dark rum
1 teaspoon banana liqueur
3 sliced bananas
1 lb French bread, cubed
3 cups 1% low-fat milk

1 teaspoon almond extract
1/2 teaspoon salt

Steps:

  • Using a small sauce pan, melt butter. Add brown sugar and salt. Stirring until sauce starts to bubble lightly. Remove from heat and add rum and liqueur. Set aside.

1 loaf French Bread
1 1/2 cup Brown Sugar divided
2 tsp Cinnamon divided
1 stick butter
5 Bananas peeled and sliced
3 tsp Vanilla Extract divided
1 cup Half and Half
8 Eggs
1/4 tsp Nutmeg
1 cup Milk

Steps:

  • Grease a 9x13" baking dish and Set aside, then cut the bread into cubes.
  • Melt butter over medium-high heat in a large skillet. Add 3/4 cup brown sugar, 1 tsp cinnamon, and 1 tsp vanilla, stirring with a wooden spoon until the mixture thickens. Finally, put in the bananas, and stir until coated.
  • Remove from heat and set aside. In a large bowl, beat eggs the remaining brown sugar, cinnamon, and vanilla. Add nutmeg, half and half, and milk, whisking until blended.
  • Add bread cubes and gently stir until the bread has soaked up the liquid. After that step, pour the bread mixture into the prepared baking dish.
  • Evenly pour the banana mixture over the bread mixture and cover it with plastic wrap and refrigerate overnight.
  • Preheat oven to 350F. Take the plastic wrap off the baking dish and bake for about 50 minutes until golden brown.

1/2 teaspoon finelygrated orange zest
1 cup very coldheavy cream

6 large eggs
1 cup whole milk
1/2 cup heavy cream
1 teaspoon ground cinnamon
1 teaspoon purevanilla extract
4 tablespoonsunsalted butter
4 tablespoons canola oil
Eight1/2-inch-thick slices day-old brioche, left out overnight on a baking rack
4 tablespoonsunsalted butter
1 cup packed lightbrown muscovado sugar
Pinch ground cinnamon
2 small ripe bananas, cut into 1/2-inch-thick slices
1/2 cup dark rum
2 tablespoonsbanana liqueur
Mixed berries, forgarnish
Mint sprigs, forgarnish

Steps:

  • For the whipped cream cheese: Put the cream cheese, vanilla and orange zest in the bowl of a stand mixer fitted with the whip attachment and whip until light and fluffy. Add the cold heavy cream and whip until soft peaks form. Cover and refrigerate until ready to use.
  • For the french toast: Preheat the oven to 300 degrees F. Whisk together the sugar and eggs until smooth. Whisk in the milk, cream, cinnamon and vanilla until combined.
  • Make the French toast in 2 batches. Heat 2 tablespoons each of the butter and oil in a large saute pan over medium heat until the butter is melted and the oil begins to shimmer.
  • Place 4 slices of the bread in the custard mixture and let sit on both sides until soaked through. Remove with a slotted spatula to allow the excess custard to run off. Cook until the toast is golden brown on both sides and cooked through, about 2 minutes per side.
  • Transfer the French toast to a baking rack set over a baking sheet and keep warm in the oven while you cook the second batch with the remaining butter, oil and bread. Keep French toast warm until ready to serve.
  • For the banana foster topping: Heat the butter in a large saute pan over high heat until it begins to sizzle. Whisk in the brown sugar and cinnamon and cook until the sugar has melted and the mixture has thickened slightly.
  • Add the bananas and cook until slightly softened. Remove from the heat and add the rum and banana liqueur. Return to the heat and cook until the alcohol has burned off.
  • Serve 2 slices of toast per person, topped with some of the bananas and their syrup, a dollop of the whipped cream cheese, some fresh berries, and sprinkling of confectioners' sugar, if using. Garnish with mint.
