- Place butter in a microwave-safe bowl; microwave, covered, until melted, 30-45 seconds. Stir in brown sugar, cream, cinnamon, allspice and, if desired, pecans. BANANAS FOSTER FRENCH TOAST BREAKFAST CASSEROLE

- Gather the ingredients.
- In a small saucepan combine the butter, brown sugar, and corn syrup to make the caramel mixture . Stir the mixture and heat until the sugar has completely dissolved and the mixture starts to bubble about 3 to 5 minutes.
- Stir the vanilla and cinnamon into the sugar mixture and then pour it into a 9 x 13-inch baking dish.
- Layer the sliced banana on top of the sugar mixture. Drizzle the rum over the bananas at this time, if using.
- Place the cubed bread over the top of the bananas in an even layer.
- In a medium bowl, whisk together the eggs, milk, sugar, melted butter, vanilla extract, and salt until thoroughly beaten.
- Pour the egg mixture over the bread cubes. Press down on the cubes so that they submerge more fully in the egg mixture.
- Cover with aluminum foil and refrigerate for at least 5 hours, ideally overnight. When you are ready to serve, preheat the oven to 375 F and take the French toast breakfast casserole out of the refrigerator. Leave the French toast on the counter while the oven preheats.

- Arrange bread slices in one layer in baking dish, squeezing them slightly to fit.
- In a large bowl, whisk together eggs, egg substitute, milk, vanilla, ½ teaspoon of cinnamon, agave or sugar, salt, and rum until combined well.
- Pour mixture evenly over bread. Cover and refrigerate at least 8 hours or overnight for best results.
- Preheat oven to 350 degrees F. Bring bread to room temperature.

A Banana's Foster bottom layer adds a tasty twist on the traditional favorite. I make this the night before a bake the following morning. I was able to plate the casserole banana side up. This was my first time making this and my 8 year old son really enjoyed it. He gave me a "10".

- Using a small sauce pan, melt butter. Add brown sugar and salt. Stirring until sauce starts to bubble lightly. Remove from heat and add rum and liqueur. Set aside.
- Mix together milk, eggs, vanilla, almond extract, salt, cinnamon & sugar.
- Butter a 13 x 9 baking dish, layer the sliced banana's and drizzle with sauce. Layer half of the bread, all of the chocolate morsels and top with remaining bread. Pour egg mixture over bread. Cover with plastic wrap and gently press down on the top to make sure the bread gets to adsorb the egg mixture. Place in the refrigerator overnight.

- Grease a 9x13" baking dish and Set aside, then cut the bread into cubes.
- Melt butter over medium-high heat in a large skillet. Add 3/4 cup brown sugar, 1 tsp cinnamon, and 1 tsp vanilla, stirring with a wooden spoon until the mixture thickens. Finally, put in the bananas, and stir until coated.
- Remove from heat and set aside. In a large bowl, beat eggs the remaining brown sugar, cinnamon, and vanilla. Add nutmeg, half and half, and milk, whisking until blended.
- Add bread cubes and gently stir until the bread has soaked up the liquid. After that step, pour the bread mixture into the prepared baking dish.
- Evenly pour the banana mixture over the bread mixture and cover it with plastic wrap and refrigerate overnight.
- Preheat oven to 350F. Take the plastic wrap off the baking dish and bake for about 50 minutes until golden brown.
BANANAS FOSTER FRENCH TOAST WITH WHIPPED CREAM CHEESE
Steps:
- For the whipped cream cheese: Put the cream cheese, vanilla and orange zest in the bowl of a stand mixer fitted with the whip attachment and whip until light and fluffy. Add the cold heavy cream and whip until soft peaks form. Cover and refrigerate until ready to use.
- For the french toast: Preheat the oven to 300 degrees F. Whisk together the sugar and eggs until smooth. Whisk in the milk, cream, cinnamon and vanilla until combined.
- Make the French toast in 2 batches. Heat 2 tablespoons each of the butter and oil in a large saute pan over medium heat until the butter is melted and the oil begins to shimmer.
- Place 4 slices of the bread in the custard mixture and let sit on both sides until soaked through. Remove with a slotted spatula to allow the excess custard to run off. Cook until the toast is golden brown on both sides and cooked through, about 2 minutes per side.
- Transfer the French toast to a baking rack set over a baking sheet and keep warm in the oven while you cook the second batch with the remaining butter, oil and bread. Keep French toast warm until ready to serve.
- For the banana foster topping: Heat the butter in a large saute pan over high heat until it begins to sizzle. Whisk in the brown sugar and cinnamon and cook until the sugar has melted and the mixture has thickened slightly.
- Add the bananas and cook until slightly softened. Remove from the heat and add the rum and banana liqueur. Return to the heat and cook until the alcohol has burned off.
- Serve 2 slices of toast per person, topped with some of the bananas and their syrup, a dollop of the whipped cream cheese, some fresh berries, and sprinkling of confectioners' sugar, if using. Garnish with mint.

- In a shallow dish, whisk together eggs, cream, and cinnamon. In a large skillet, melt 2 tablespoons butter over medium-high heat. Dip 4 croissant halves in egg mixture to coat both sides.
