Quick and easy taco entree for a last minute meal. Top with chopped tomato, onion, and lettuce if desired.

1 pound ground beef
1 cup salsa
½ cup chopped onion
½ cup mayonnaise
2 tablespoons chili powder
1 teaspoon ground cumin
2 cups crushed tortilla chips, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Layer about half of each of the Cheddar and Monterey Jack cheeses over the tortilla chip layer. Repeat layers with remaining ingredients, ending with Monterey Jack cheese. Cover dish with aluminum foil.
  • Bake in preheated oven until the cheese is melted in the middle, about 30 minutes.

2 cups uncooked wide egg noodles
2 pounds ground beef
1 can (8 ounces) tomato sauce
1/2 cup water
1 can (4 ounces) chopped green chilies
1 envelope taco seasoning
1 teaspoon onion powder
1 teaspoon chili powder
1/2 teaspoon garlic powder
1 cup shredded cheddar cheese
2 cups shredded lettuce
1 cup diced fresh tomatoes
1/3 cup sliced ripe olives, drained
1/2 cup taco sauce
1/2 cup sour cream

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in tomato sauce, water, green chilies, taco seasoning, onion powder, chili powder and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. , Drain noodles; place in a greased 11x7-in. baking dish. Spread with beef mixture; sprinkle with cheese. Bake, uncovered, until cheese is melted, 10-15 minutes. Let stand 10 minutes., Top with lettuce, tomatoes, olives and taco sauce. Garnish with sour cream.

This is from my beloved Betty Crocker cookbook, and it is such a favorite that I want to share it with everybody! It's also a GREAT use for those tortilla chip bits at the bottom of the bag! I've "healthed it up" a bit, but you would never guess from the flavor and the servings are huge! The cookbook says this is 345 cals per serving, 13 g fat.

1 lb ground turkey
1 (15 ounce) can chili beans
1 cup salsa (the hotter the better!!)
2 cups tortilla chips, broken
1/2 cup fat free sour cream
4 green onions, sliced
1 tomatoes, chopped
1 cup reduced-fat cheddar cheese

Steps:

  • Pre-heat oven to 350.
  • Cook turkey over medium heat 8-10 minutes, until no longer pink. Drain if necessary. Stir in beans and salsa and heat to boiling.
  • Place tortilla chips in the bottom of an ungreased 8x8 casserole. Top with turkey/bean mixture. Spread with sour cream, then top with onions, tomatoes, and cheese.
  • Bake uncovered 25 minutes or until hot and bubbly.
  • Enjoy!

6 ounces dry extra-wide egg noodles, uncooked
1 pound ground chuck beef (80% lean)
2 cups frozen Southwest mixed vegetables (corn, black beans, red peppers)
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 (10 ounce) can red enchilada sauce
1 ¼ cups water
1 ¼ cups shredded Mexican blend cheese
¼ cup thinly sliced green onions
1 teaspoon Sour cream

Steps:

  • Preheat oven to 400 degrees F. Spray 13x9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
  • Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet; stir. Bring to a boil. Pour mixture over noodles.
  • Cover dish tightly with foil; bake 15 minutes. Stir; sprinkle with cheese and cover with foil. Bake 10 minutes more or until noodles are tender. Sprinkle with green onions. Serve with sour cream, if desired.

It is good hot or cold any time of the day. Works for the family or company. I have been asked for the recipe many times. Good thing it is easy to remember!

1 (8 ounce) package refrigerated crescent dinner rolls
1 lb ground beef
1 small onion, chopped
1 (1 1/4 ounce) package taco seasoning
1 (16 ounce) can refried beans
1 egg
1 (8 ounce) carton sour cream
1 cup grated cheddar cheese
shredded lettuce
chopped tomato
taco sauce

Steps:

  • Unroll crescent rolls and press on bottom and slightly up the sides of a greased 9" X 13" pan.
  • Brown ground beef and onions. Drain and add the taco seasoning and refried beans. Mix well and spread this mixture on top of the crescent rolls.
  • Beat egg and combine with sour cream and cheese. Spread on top of beef mixture.
  • Bake at 350 degrees for 20 minutes. Remove from oven and allow to set for 10 minutes before serving. Cut into individual servings and top with shredded lettuce, chopped tomato and taco sauce. or your choice of toppings. Chopped avacado is also good.

3 cans (8 ounces each) tomato sauce
1/3 cup taco sauce

6 cups coarsely crushed tortilla chips
3 cups sour cream
3 tablespoons all-purpose flour
3 cups shredded cheddar cheese
3 medium tomatoes, chopped
12 green onions, sliced
Shredded lettuce and additional taco sauce, optional

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the beans, tomato sauce, taco sauce, chili powder and garlic powder., Divide chips among three ungreased 2-qt. baking dishes; top with beef mixture. Combine sour cream and flour; spread over top. Sprinkle with cheese, tomatoes and onions., Bake, uncovered, at 350° for 30-40 minutes or until heated through. This is one of my family's favorite "comfort foods". I took it to a sick friend once who also "hates tuna casseroles". He thought it was chicken. :) Try it, I think you'll want it as a keeper!

1 (8 ounce) package fine egg noodles, cooked and drained
1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 (6 ounce) can albacore tuna, rinsed and drained
1 (10 1/2 ounce) can cream of mushroom soup
1/2 teaspoon onion salt
2 tablespoons parsley flakes
milk
breadcrumbs, for top

Steps:

  • Mix together cream cheese, sour cream, mushroom soup, onion salt and parsley flakes.
  • Carefully stir in tuna and noodles.
  • You may need to thin with a little milk. During the baking the noodles tend to soak up the moisture and can be dry.
  • Spoon into a casserole dish, top with bread crumbs.
  • Bake uncovered 350F for 30-35 minutes until heated through.
  • I serve it with a crisp green salad and hot dinner rolls.
  • ENJOY!

This is one of those recipes that, when you see it being made, you think, "I don't know about that..." My sister used to make this for herself when she came home from work (when she was 15!) and I thought it sounded awful...til I made it! Great for chilly days of fall and winter - makes a very filling meal. Try it - you might like it!

1 lb lean ground beef
1 (3 ounce) package ramen noodles (I like oriental or beef flavor for this)
4 ounces Velveeta cheese, cubed
salt and pepper

Steps:

  • In a medium skillet, brown, rinse and drain ground beef.
  • Prepare Ramen Noodle soup per directions on package, including adding the flavor packet.
  • Melt Velveeta cheese into the soup (you can add more or less, depending on how much you like cheese - I tend to use a bit more).
  • Stir beef into the soup/cheese mixture and add salt and pepper to taste.
  • Serve it up and enjoy!

1 (13 ounce) bag Doritos
1 lb hamburger
1 (1 1/4 ounce) packet taco seasoning
3/4 cup water
2 cups shredded cheddar cheese

Steps:

  • Cook hamburger until no longer pink. Add taco seasoning and water and cook about 5 minutes or until most of the water has evaporated.
  • Spray 9x13 pan with PAM. Put a layer of Doritos on bottom of pan (I don't use a whole bag). Smash down a bit but don't crumble them. Add taco meat to top of Doritos and top with cheese.
  • Heat in an oven for about 10 minutes or until cheese has melted.
