8 strips Bacon
1/3 c. Chopped Shallots
10 Eggs
4 c. Whole Milk
1 tsp. Dry Mustard
1 tsp. Kosher Salt
1/2 tsp. Freshly Ground Black Pepper
1 c. Grated Gruyere Cheese
1 c. Grated Cheddar Cheese
1/4 c. Fresh Italian Parsley
6 c. (Lightly Packed) Torn French Bread

Steps:

  • Grease a 9x13 pan. Chop bacon into 1 1/2 inch pieces. Cook until crispy. Set aside on paper towels and pat to remove excess grease. Pour all but a couple of tablespoons of the bacon grease out of the pan. Cook shallots in remaining fat until softened. Set aside. Whisk eggs for 1-2 minutes. Whisk in milk, mustard, salt, and pepper. Stir in reserved bacon, shallots, cheese, and parsley. Fold in the torn bread. Pour into the prepared pan and cover with foil. Refrigerate for at least 6 hours, up to 24. Preheat oven to 350ºF. Bake strata for 1 hour and 10 minutes, or until golden, puffed, and set in the center. Remove from oven and let rest for 5 minutes before serving. (The strata will deflate as is rests.) Scoop portions with a large spoon rather than trying to cut into squares.

BROCCOLI AND CHEDDAR STRATA



Broccoli and Cheddar Strata image

Reinvent leftover hot dog buns by turning them into this cheesy broccoli strata.

1 tablespoon unsalted butter, at room temperature, plus more, for the baking dish
3 cups half-and-half
1/4 cup grated Parmesan
10 large eggs
Kosher salt and freshly ground black pepper
3 cups bite-sized broccoli florets
12 ounces hot dog buns, cut into 1-inch cubes, preferably stale (about 6 cups)
2 cups shredded sharp Cheddar

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Whisk the half-and-half, Parmesan, eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
  • Bring a medium pot of salted water to a boil. Add the broccoli florets and simmer until crisp-tender, 3 to 4 minutes; drain.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Cheddar, followed by the broccoli. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
  • On the day of baking, preheat the oven to 325 degrees F.
  • Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Cheddar. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

1-1/2 cups KRAFT Shredded Cheddar Cheese, divided
1-1/2 cups chopped cooked turkey
1 small red pepper, chopped
2 green onions, chopped
4 eggs
1-3/4 cups milk
1/3 cup MIRACLE WHIP Dressing
2 Tbsp. GREY POUPON Dijon Mustard

Steps:

  • Heat oven to 325°F.
  • Layer 3 cups bread cubes, 1 cup cheese, turkey, peppers and onions in 11x7-inch baking dish sprayed with cooking spray; top with remaining bread cubes.
  • Whisk eggs, milk, dressing and mustard until blended; pour over bread. Top with remaining cheese; cover. Refrigerate at least 2 hours.
  • Bake strata, uncovered, 45 min. or until knife inserted in center comes out clean. Let stand 10 min. before serving.

Overnight Breakfast Strata Recipe: This easy make-ahead holiday breakfast is super quick to prep, then pop in the oven the next morning!

12 large eggs
3 cups whole milk ((or half & half))
1 1/2 cups shredded sharp cheddar cheese ((off the block))
1 1/2 cup shredded smoked gouda cheese ((off the block))
1 cup chopped deli ham
1 cup chopped scallions
3/4 cup chopped roasted red pepper
1 1/2 teaspoons salt
1 teaspoon ground mustard
1/2 teaspoon garlic powder
12 ounce loaf french bread

Steps:

  • Set out a large mixing bowl and a 9X13 inch (3 quart) baking dish. Grease the baking dish. Chop all necessary ingredients.
  • In the mixing bowl, add the eggs, milk, salt, ground mustard, and garlic powder. Whisk well to break up all the yolks. Then stir in the cheeses, ham, scallions, and roasted red pepper.
  • Tear the bread loaf into 1-2 inch chunks and place them in the baking dish.
  • Pour the egg mixture over the top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed. Cover and chill until ready to bake.
  • Let the strata recipe rest for at least one hour, so the bread soaks up all the eggs. Preheat the oven to 350 degrees F. (This is a fabulous make-ahead overnight recipe, so you can also preheat the oven in the morning.)
  • Bake, uncovered, for 50-60 minutes, until the top is golden-brown and puffy in the center. Insert a sharp knife into the center to check that the eggs are set. If not, bake another 5-10 minutes. Then cool for 5 minutes before cutting. Serve warm!

3 cups half-and-half
1/4 cup grated Parmesan

One 12-ounce loaf sourdough bread, preferably stale, crust removed, cut into 1-inch cubes (about 6 cups)
2 cups shredded sharp Cheddar
1 cup sun-dried tomatoes packed in oil, drained, patted dry and chopped
1/4 cup thinly sliced scallions

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Whisk together the half-and-half, Parmesan, eggs, 1 1/2 teaspoons salt and a few grinds of pepper in a large bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Cheddar, followed by the sun-dried tomatoes and scallions. Cover with the remaining bread cubes and pour the egg mixture evenly over the top. Cover with plastic wrap and refrigerate overnight. From the Turkey Store cookbook, this recipe uses Turkey Store Breakfast Sausage patties. I have also made this using turkey sausage links or turkey Italian sausage.

1 (14 ounce) package turkey sausage patties
6 slices white bread, crusts removed, cut into 1-inch cubes
1/2 cup 2% cheddar cheese, shredded
2 cups nonfat milk
1 cup fat free egg substitute
2 tablespoons green onions, chopped
1 tablespoon fresh parsley, chopped
1/2 teaspoon prepared mustard
1/4 teaspoon black pepper

Steps:

  • Spray 8 x 8" baking dish and large skillet with no-stick cooking spray. heat skillet over medium-high heat about 30 seconds. Add turkey breakfast sausage patties. Cook 12-15 minutes or until lightly browned and no longer pink in the center, turning occasionally. Drain on paper towel. Place in baking dish. Spread bread cubes over turkey. Sprinkle cheese over bread cubes.
  • In large bowl combine milk, egg substitute, onions, parsley, mustard and pepper. Pour into baking dish. Cover. Refrigerate 8 hours or overnight.
  • Heat oven to 325. Remove cover from baking dish. Bake 1 hour or until set.
