1 cup (2 sticks) butter, plus more for greasing pan
5 ounces unsweetened chocolate
1/4 cup unsweetened cocoa powder
2 cups granulated sugar
1 tablespoon vanilla
3 large eggs
1 1/4 cups all-purpose flour
Half of a 14-ounce can dulce de leche
Powdered sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-by-8-inch baking pan (a square pan will result in thicker brownies).
  • In a medium-large saucepan, melt the butter with the chocolate over low heat, whisking occasionally until smooth and melted. Sprinkle in the cocoa powder and whisk to combine. Allow to cool for about 10 minutes.
  • Stir in the granulated sugar and vanilla until just combined. Stir in the eggs. Gently stir in the flour until halfway incorporated. Pour the batter (it will be very thick!) into the prepared pan.
  • Place the dulce de leche in a glass bowl. Warm it in the microwave for 30 to 45 seconds. Drop large dollops of dulce de leche on the surface of the brownie batter. Use a knife to slowly swirl it through the batter. Don't drag the knife sideways through the batter; hold it so the thin side of the knife leads the way.
  • Bake for 40 minutes, then check the brownies with a toothpick. If they are overly gooey/messy, return to the oven for 5 to 10 more minutes (just be careful not to burn the edges). Allow to cool completely (important!), then sprinkle with powdered sugar and cut into small squares.

3 ounces unsweetened chocolate
3 extra-large eggs
1 1/2 tablespoons instant coffee granules, such as Nescafe
1 tablespoon pure vanilla extract
1 cup plus 2 tablespoons sugar
1/2 cup plus 2 tablespoons all-purpose flour, divided
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
5 to 6 ounces good caramel sauce, such as Fran's
2 to 3 teaspoons flaked sea salt, such as Maldon

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 9 x 12 x 1 1/2-inch baking pan.
  • Melt the butter, 8 ounces of the chocolate chips, and the unsweetened chocolate together in a medium bowl set over simmering water. Allow to cool for 15 minutes. In a large bowl, stir (do not beat) together the eggs, coffee, vanilla, and sugar. Stir the chocolate mixture into the egg mixture and allow to cool to room temperature (see note below).
  • In a medium bowl, sift together 1/2 cup of the flour, the baking powder, and salt and add to the chocolate mixture. Toss the remaining 6 ounces of chocolate chips and the remaining 2 tablespoons of flour in a medium bowl and add them to the chocolate mixture. Spread evenly in the prepared pan.
  • Bake for 35 minutes, until a toothpick comes out clean. Don't overbake!
  • As soon as the brownies are out of the oven, place the jar of caramel sauce without the lid in a microwave and heat just until it's pourable. Stir until smooth. Drizzle the caramel evenly over the hot brownies and sprinkle with the sea salt. Cool completely and cut into 12 bars.

1 (14-ounce) package individually wrapped caramels
2/3 cup evaporated milk, divided
1 (18.25-ounce) package chocolate cake mix
3/4 cup butter, melted
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Line a 9x13-inch pan with parchment paper or aluminum foil, leaving a bit of overhang on the edges.
  • In a heavy saucepan over low heat, add the caramels and 1/3 cup of evaporated milk. Stir it constantly until caramels have melted and are well combined with the milk.
  • In a large bowl, beat together the cake mix, melted butter, and 1/3 cup of evaporated milk until well-combined.
  • Split the dough in half. Press half of it into the lined pan.
  • Bake the dough for 10 minutes. Remove it from the oven and top with the chocolate chips. Pour the caramel evenly over the chocolate chips. Crumble the remaining dough over the caramel.
  • Bake for 15 to 18 minutes. Cool the brownies in the fridge for 2 hours to set the caramel.
  • Slice them into small bars. Serve and enjoy!

14 ounces caramels, wrappers removed
1/2 cup evaporated milk
1 (18 1/4 ounce) box German chocolate cake mix
1/4 cup evaporated milk
1/2 cup butter, melted
1 cup chocolate chips
1/2 cup nuts, chopped (optional)

Steps:

  • Mix (by hand) cake mix with 1/4 cup evaporated milk and 1/2 cup melted butter; add nuts if using.
  • Batter will be stiff.
  • Press half of batter into bottom of 9 x 13-inch pan. I use wax paper and a small rolling pin to make this process easier.
  • Bake at 350° for 8 minutes.
  • Meanwhile, melt caramels with 1/2 cup evaporated milk in microwave or in double boiler.
  • Remove bottom layer from oven and sprinkle with chocolate chips, then drizzle with caramel.
  • Top with remaining batter by rubbing batter between fingers and dropping evenly (will not cover completely).
  • Bake 18- 20 minutes.
  • Let cool before cutting.

1 package Kraft caramels (about 45, 14 oz. )
1 can evaporated milk (10 oz., divided)
3/4 cup butter melted

12 ounces semi sweet chocolate chips (I use jumbo)
1/2 cup chopped pecans (optional)

Steps:

  • Preheat the oven to 350. Grease a 9x13 pan and set aside.
  • Melt the caramel and 1/3 cup evaporated milk and stir in a small saucepan over low heat until melted and incorporated.
  • In a mixing bowl combine cake mix, 1/3 cup evaporated milk, melted butter and flour. Press half of the mix into the 9x13 inch dish and bake for 6 minutes.
  • Remove pan from oven and sprinkle chocolate chips.
  • Pour the caramel on top of the chocolate chips.
  • Top with the remaining brownie batter on the top of the caramel and bake for an additional 15-18 minutes.
  • Remove from oven and let cool completely so that the caramel can set. I also find that if you let it cool and place in the fridge it helps to set up right before cutting.

Steps:

  • For the brownies: Preheat the oven to 350 degrees F. Line an 8-inch square baking pan with parchment.
  • Melt the butter and chocolate together in a shallow heatproof bowl set over a saucepan with 1 or 2 inches of simmering water. Stir until completely melted and smooth.
  • Transfer the melted chocolate mixture to a medium bowl and stir in the sugar. Let cool, then whisk in the eggs, one at a time. Stir in the flour, espresso powder, salt and vanilla, and pour into the prepared baking pan.
  • Bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Let cool completely.
  • For the caramel: While the brownies are baking, heat the sugar and 1/3 cup water in a heavy-bottomed medium saucepan over medium-high heat. Bring to a boil, swirling the pan but not stirring; cook until the mixture turns a golden amber color. Remove from the heat and immediately add the butter, swirling to combine; take great care to keep the pan at a distance when adding the butter, as the caramel will bubble up and foam. When the bubbling has subsided and the butter and caramel are combined, add the cream and vanilla and stir to incorporate. Set aside to cool.
  • Lift the cooled brownies out of the pan, cut into squares and place on a serving platter. Drizzle with the caramel and sprinkle with the sea salt. Serve with ice cream.

DONITA'S CARAMEL BROWNIES

Donita was a friend I met while living in Kentucky. She used to bring these brownies to potlucks and kindly shared the recipe with me. I have made my own changes over the years, but it is still basically the same recipe she used. You can add 1 cup chopped nuts if you like, however I feel these are rich enough without them.

1 (18 1/2 ounce) box German chocolate cake mix, unprepared (or a box of brownie mix, see notes)
3/4 cup unsalted butter, melted (1 1/2 sticks)
2/3 cup evaporated milk, divided (I have used both regular and light)
1 (14 ounce) bag Kraft caramels (48 squares) or 1 (14 ounce) bag chocolate riesen candies, unwrapped
1 (12 ounce) bag semi-sweet chocolate chips

Steps:

  • Preheat oven to 375 F and line a 9x13" baking pan with foil. Grease the foil lightly.
  • Mix together the dry cake mix, melted butter, and just 1/3 cup of the evaporated milk.
  • Spread half of this mixture into the prepared pan and bake for 6 minutes.
  • Meanwhile, melt the unwrapped candies with the remaining 1/3 cup evaporated milk in the microwave (time will adjust based on your wattage, about 3 minutes).
  • When the first layer is done pre-baking, remove from the oven and cover with chocolate chips (and nuts if you are adding any).
  • Pour the melted caramel mixture all over the top.
  • Spoon the remaining raw batter in blobs all over the top and bake another 15-18 minutes.
  • Allow too cool, then lift out of the pan and cut with a large knife, using a rocking motion - they are very gooey and if you try to cut them too soon it will be very messy.
  • NOTE: If using brownie mix instead of cake mix, then skip the melted butter and the first 1/3 cup of evaporated milk and simply prepare the batter according to the brownie package instructions. Pour half the mixture into the pan, and then continue with the rest of the recipe as directed. You may also need to adjust the time for the brownies, a little longer until it is bubbling up. Keep these brownies in the fridge to firm up.

200g unsalted butter, plus a little extra for greasing
100g chocolate, 70% cocoa solids
100g chocolate, 50% cocoa solids
397g can Carnation caramel
1 tsp flaky sea salt, plus a little extra for the top
200g golden caster sugar
4 medium eggs, at room temperature
130g plain flour
50g cocoa powder

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • Grease then line a 23cm square traybake tin with baking parchment.
  • Melt 200g unsalted butter in a medium pan, break in 100g chocolate (70% cocoa solids) and 100g chocolate (50% cocoa solids), then remove the pan from the heat and wait for the cubes to melt.
  • In a small bowl, mix 175g Carnation caramel from a 397g can with 1 tsp sea salt - it will loosen up.
  • Put the rest of the caramel in a large bowl with 200g golden caster sugar and 4 medium eggs, and beat with an electric hand mixer or balloon whisk until even. Whisk in the chocolate and butter.
  • In another bowl, combine 130g plain flour, 50g cocoa powder and a good pinch of table salt, then sift this on top of the chocolate mix. Beat briefly until smooth.
  • Pour half the brownie batter into the tin and level it with a spatula.
  • Using a teaspoon, spoon half of the salted caramel on top of the batter layer in 5 thick, evenly spaced stripes.
  • Spoon the rest of the brownie batter on top and smooth it out, trying not to disturb the caramel beneath. Top with the rest of the caramel in the same stripy fashion. Drag a skewer or tip of a knife through the caramel to make a feathered pattern on the top.
  • Scatter with a little more sea salt, then bake for 25-30 mins or until risen all the way to the middle with a firm crust on top. When ready, the brownie will jiggle just a little when you shake the tin.
  • Let it cool completely in the tin, then cut into squares.
