SPICY OYSTER CRACKERS
Steps:
- Preheat oven to 300 degrees F.
- Combine spices together with oil and melted butter. Place crackers on a parchment-lined sheet pan. Pour spice mixture on top. Mix until well coated.
- Bake for 25 minutes, move crackers around gently with a spatula halfway through.
- Let cool on a wire rack. When completely cool, store in an airtight container.
DIY OYSTER CRACKERS RECIPE
Steps:
- Adjust oven rack to middle position and preheat oven to 375°F (190°C). Combine flour, salt, sugar, and baking powder into a medium bowl and whisk to combine. Add butter and using a pastry cutter or fingertips, work into flour until it resembles coarse meal. Add water and lightly knead dough until it comes together into a ball.
- Set dough on a lightly floured surface and cover with an overturned mixing bowl. Allow to rest for 15 minutes.
- Roll dough out on a well floured surface to a thickness of 1/8 inch. Cut dough into 1/2-inch squares, rectangles, or diamonds. Transfer to a parchment-lined baking sheet and space the shapes out as much as possible.
- Bake until crackers are showing color around the bottom edges, about 15 minutes. Turn oven off and crack the door open about 8 inches. Leave crackers inside to cool and continue to crisp, about 30 minutes. Remove from oven, season with salt, and allow to cool completely. Crackers can be stored in a sealed container for up to a week.

Steps:
- 1. Preheat oven to 375^. Spray a jelly roll sheet or cover with parchment paper; set aside. --- Combine all dry ingredients in a food processor. Add butter chunks and pulse quickly, until it looks like coarse meal. Add the milk and process 3 seconds.
- 2. Remove to floured surface, knead 10 seconds-flatten slightly and wrap in plastic wrap. and chill dough for 30 minutes.
- 3. Divide the dough into 4 equal pieces, and working with one piece at a time(keep remaining pieces chilled), roll the dough out to 1/8-inch thickness and sprinkle with salt,if using.
- 4. Using a fork, poke the dough all over. Cut with your favorite small cutter, doughnut hole, or shot glass to the size desired.
- 5. Place the cut outs on the baking pan and bake for 5 to 7 minutes or just until light brown. Store in airtight container when COMPLETELY cool.
OYSTER CRACKER CRUSTED FISH STICKS
Steps:
- Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
- Cut the fish into 1/2-inch strips (you should get about 24 to 30 pieces). Season all over with 1/2 teaspoon salt and several grinds of pepper.
- Spread the flour in a shallow bowl. Beat the eggs in a second shallow bowl with a pinch of salt. Put the crackers in a food processor and pulse to mostly fine crumbs, about the consistency of panko with a few larger crumbs mixed in (you can also crush the crackers in a plastic bag with a rolling pin.) Toss the crumbs in a third shallow bowl with the dried chives, dried dill, dried parsley, garlic powder, onion powder, dried thyme, 1/2 teaspoon of salt and several grinds of pepper.
- Dredge the fish, a few pieces at a time, in the flour, then beaten egg letting the excess drip back into the bowl. Roll to coat thoroughly in the crumbs then place each piece on the prepared baking sheet, about an inch apart.
- Once all of the fish is coated, spray liberally all over with olive oil spray. Bake until the crumbs are crisp and golden and the fish is cooked through, about 15 minutes. Remove to a platter and serve with the tartar sauce and lemon wedges.
- Add the mayonnaise, pickles, lemon juice, parsley, capers, dill, and sugar in a medium bowl and stir to combine. Season to taste with salt and pepper. Cover and refrigerate to allow the flavors to blend while you make the fish sticks.

- Preheat oven to 275 degrees F (135 degrees C).
- In a large bowl, mix the canola oil, ranch dressing mix, dill, lemon pepper, granulated garlic, onion powder, seasoned salt, and white pepper until thoroughly combined. Gently mix the crackers with the seasonings, tossing to coat the crackers with the seasoned oil. Spread the crackers out onto a jelly roll pan in a single layer.
