Steps:

  • Instructions for Italian seasoning: In a food processor, combine basil, oregano, rosemary, thyme, and marjoram. Blend for 1 minute or until desired consistency is achieved.
  • Instructions for Cajun seasoning: In a small bowl, whisk all ingredients together. Or, combine in a jar with a tight-fitting lid and shake to combine. Store covered at room temperature.

A quick and easy Cajun dip recipe made with roasted red bell pepper, fresh garlic, creamy yogurt and sour cream, and a spicy seasoning blend, perfect for parties when you need big flavor fast.

1 red bell pepper
¾ cup plain yogurt
¼ cup Mexican crema or sour cream
2 cloves garlic (minced)
2 tablespoons chopped green onion
1 tablespoon Cajun seasonings
Bag of your favorite Doritos for serving

Steps:

  • Set your oven to BROIL. Slice the red bell pepper in half down the middle and place them skin sides up on a large baking sheet.
  • Set them into the oven beneath the broiler, about half way down in the oven, not too close to the heating element.
  • Roast about 15 minutes, or untilthe skins blacken and bubble up. Remove, cool enough to handle, and peel away the skins.
  • Add the roasted red pepper, yogurt, crema or sour cream, garlic, green onion and Cajun seasoning to a food processor blender. Process until smooth.
  • Serve in a bowl with Doritos!

1 tsp dry mustard
1 tsp white pepper, freshly ground
1 tsp black pepper, freshly ground
1 tsp crushed pepper flakes
1 tsp cayenne pepper
1 tsp dried thyme
1 tsp dried greek oregano
1 Tbsp chili powder, i prefer hatch
1 Tbsp salt, kosher variety, fine grind
2 Tbsp hungarian paprika
2 Tbsp dehydrated onions
2 Tbsp garlic powder

Steps:

  • 1. PREP/PREPARE
  • 2. You will need a spice blender, or just a good blender to make this recipe.
  • 3. One other thing about Cajun spices is that they are tremendously high in salt content. I cut the sodium in this recipe by over half; however, if you are on a salt restricted diet, cut it down more, or leave it out entirely. That is the great thing about homemade spice mixes, you are in control of what goes into them.
  • 4. Gather your ingredients (mise en place).
  • 5. Add all the ingredients to a blender, and grind away until mixed and fine, then place in a sealed container, and store in a cool place, away from direct sunlight.
  • 6. Chef's Tip: Save your old spice bottles. They are excellent for storing your homemade spices.
  • 7. PLATE/PRESENT
  • 8. Use anywhere you would use Cajun spice: vegetables, fish, meat, poultry; some people sprinkle it fruit. Enjoy.
  • 9. Keep the faith, and keep cooking.

2 boneless, skinless, chicken breasts, (diced small)
2 tablespoons butter
2 teaspoons Italian seasoning
1 teaspoon garlic salt
1 teaspoon black pepper
1 teaspoon Slap Ya Mama
1 medium onion (finely diced)
1 cup mushrooms
2 tbsp butter
2 garlic cloves, (minced)
3 cups heavy whipping cream
4 ounces cream cheese
6 ounces Parmesan cheese (freshly shredded)
16 ounce box fettuccine pasta

Steps:

  • Cook pasta according to package directions.
  • Drain, rinse with cold water and set aside.
  • Using a large pan or skillet, melt 2 tbsp butter over medium heat.
  • Add chicken and sprinkle with Italian seasoning, garlic salt, pepper and slap ya mama. Stir.
  • Cook chicken until almost thoroughly cooked, then add onions and mushrooms.
  • Continue cooking until chicken is no longer pink and onions and mushrooms are tender.
  • Add remaining butter and garlic. Saute for 2 additional minutes, stirring frequently.
  • Pour in heavy cream, stir, lower heat and simmer.
  • Add ½ of the Parmesan cheese and all of the cream cheese. Constantly whisk until cheese is fully incorporated.
  • Add the remaining Parmesan and whisk continuously until the cheese is fully melted and mixed well.
  • Reduce heat and let simmer for 10 minutes stirring occasionally.
  • Add fettuccine pasta to the sauce mixture and stir.
  • Serve immediately.
