Number Of Ingredients 9

2 zucchini, large
1 pint tomatoes, cherry
2 garlic cloves
2 tablespoons garlic, finely chopped
2 tablespoons thyme, fresh, finely chopped
1 tablespoon balsamic vinegar
2 teaspoons olive oil
1/4 teaspoon red pepper flakes
salt and pepper

Steps:

  • Slice zucchini in half and slice zucchini into half-moons. Slice each cherry tomato in half. Finely chop garlic, and add the garlic, thyme, tomatoes, salt and pepper with oil in a large sauté pan- medium low heat. Sautee for 5 minutes until tomatoes are soft. Add zucchini, a pinch more salt, and red pepper flakes and sauté for another 5 minutes. Add balsamic vinegar and raise heat to medium high. Sautee for another 5 minutes, remove from heat and serve hot -- yummy!

2 medium zucchini, cut into 3/4-inch cubes
1 medium summer squash, cut into 3/4-inch cubes
1/3 cup onion, chopped
1 tablespoon olive oil
6 medium plum tomatoes, chopped
3/4 teaspoon salt
1/4 teaspoon black pepper
parmesan cheese, grated

Steps:

  • In large skillet, saute the zucchini, squash and onion in oil for 5 minutes.
  • Add the tomatoes, salt and pepper.
  • Cook and stir until vegetables are tender.
  • Sprinkle with cheese.

1 tablespoon olive oil
1 medium red onion, chopped
3 medium zucchini (about 5 or 6-oz each), cut into rounds
1/4 teaspoon dried oregano
Fresh ground pepper

Steps:

  • 1. In a large skillet over medium heat, heat oil. Add onion, and sauté until onion is translucent but not browned.2. Add zucchini, cover, and simmer 3 to 4 minutes. CORN AND ZUCCHINI SAUTE

This dish has such pretty colour and great flavour. It is a little different from the one already posted, as it has tomatoes and cheddar cheese. This is from TOH. I have posted it as it appears in the magazine but if you use a non-stick pan, as I do, reduce the oil to 1 tbsp as you don't need that much oil.

3/4 cup onion, chopped
3 tablespoons olive oil
2 garlic cloves, minced
3 zucchini, medium size, quartered and sliced
1 plum tomato, seeded and chopped
12 ounces corn, drained
1/4 cup water
1 tablespoon parsley
salt
pepper
1/2 cup cheddar cheese, shredded

Steps:

  • In large skillet, saute onion in the oil until tender.
  • Add garlic, cook 1 minute longer.
  • Add zucchini and tomato, cook 5 minutes stirring occasionally.
  • Stir in corn, water, parsley, salt and pepper, bring to boil.
  • Reduce heat and simmer uncovered for 10 minutes.
  • Sprinkle with cheese and cover for 2 minutes to melt cheese.

HALIBUT ZUCCHINI SAUTE

3/4 lb halibut steaks
salt & pepper
1 small zucchini, sliced
1/4 cup coarsely chopped onion
1 clove garlic, minced
3 tablespoons oil, divided
1 medium tomatoes, cut into wedges
1 tablespoon chopped parsley
1 tablespoon lemon juice

Steps:

  • Sprinkle halibut with salt and pepper.
  • Sauté zucchini, onion and garlic in 1 tbsp.
  • oil for 2 minutes.
  • Add tomato and parsley and cook covered for 1 minute.
  • Remove from pan.
  • Sauté halibut in 2 tbsps.
  • hot oil until brown on both sides.
  • Allow a total cooking time of 10 minutes per inch of thickness (measured at thickest part or until flakes easily with fork).
  • Return vegetables to pan.
  • Add lemon juice, salt and pepper to taste.
  • Heat briefly.
  • Recipe may be doubled.
