DIRTY RICE DRESSING
Steps:
- Begin by putting the chicken livers into boiling water and cook until tender. Remove from the water and put in a food processor and process to a pate-like texture. Set aside.
- In a separate pot, add the bouillon granules to boiling water, and then add the eggplant. Reduce the heat to medium and cook until tender, about 10 minutes.
- Brown the meat in a lightly greased, heavy cast-iron pot. Pour off the excess grease. Remove the meat and melt the butter. Add the celery, onions and bell peppers and saute until tender. Add back the chicken livers, meat mixture and cooked eggplant. Add Cajun seasoning to taste. Slowly simmer for 1 1/2 hours.
- Meanwhile, cook the rice according to package directions and add to the dressing a bit at a time until you achieve the balance that you like of rice to dressing mix. At the very end, add the chopped green onion tops. Simmer for a few minutes longer.
SAUSAGE AND RICE STUFFED PEPPERS
Stuffed green peppers with rice and sausage in cheesy tomato sauce. Tomato soup is used instead of tomato sauce. Very, very good.

Steps:
- Slice tops off of green peppers; remove seeds and membranes, and rinse well. Bring a large pot of water to a boil. Add peppers and cook for 15 minutes, or until tender-crisp.
- Place sausage and onions in a large, deep skillet. Cook over medium high heat until evenly brown. Reduce heat to medium and stir in tomato soup, water, chili powder, garlic powder, salt and pepper; bring to a low boil. Reduce heat to low, stir in 3/4 of cheese and simmer for 1 hour.
- Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- Prepare instant rice according to package instructions. Fluff with a fork and then stir into tomato mixture. Simmer for 30 minutes.
- Spoon rice mixture into peppers.
- Bake in preheated oven for 30 minutes. Sprinkle remaining cheese on peppers and place under broiler until cheese is melted and bubbly.

DIRTY, DIRTY RICE
Believe it or not, the first place I ever had dirty rice was at Popeyes®. They were out of the red beans and rice. I'd never been a huge fan of liver before, but not only have I come to love dirty rice, I've also started to crave it with even more "dirt," i.e. more liver, pork, and aromatic vegetables, hence this redundantly named dish. While the traditional method cooks the rice first before "soiling" it, here we add all the "filth" at the beginning and cook it into the rice.

Steps:
- Heat oil in a high-sided pan over medium-high heat. Cook and stir pork until well browned and fat is rendered, 5 to 7 minutes. Add onion, celery, and bell pepper; saute until translucent, about 5 minutes. Stir in paprika, cumin, black pepper, cayenne, garlic powder, oregano, and thyme. Cook, stirring occasionally, until vegetables continue to soften, about 5 minutes.
- Reduce heat to medium and add andouille sausage. Cook and stir to release some flavor, 2 to 3 minutes. Stir in chicken livers and rice until well coated. Season with salt, pour in broth, and bring to a simmer over medium-high heat. Add bay leaf and Worcestershire sauce. Cover tightly; reduce heat to medium-low. Cook, without stirring, until most of the liquid is absorbed and rice is starting to get tender, about 25 minutes.
- Add green onions and parsley; mix well. Continue cooking over low to medium-low heat until rice is tender, about 10 minutes more. Taste for seasoning and remove bay leaf before serving.

- In a Dutch oven, cook beef, onion, chopped green pepper, garlic, salt and pepper over medium heat until beef is no longer pink; drain. Add the water, tomatoes, tomato sauce and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Stir in rice; simmer, uncovered, for 5 minutes. Remove from the heat; cover and let stand for 5 minutes. , Remove tops and seeds from the peppers; cut in half widthwise. Place in a large pan of boiling water; boil for 4 minutes. , Drain peppers and stuff with meat mixture. Place remaining meat mixture in an ungreased 13x9-in. baking dish; top with stuffed peppers, pressing down gently. Cover and bake at 350° for 1 hour. In a saucepan, heat sauce ingredients until cheese is melted. Serve over peppers.

This spicy filling is perfect for stuffed peppers. I cheat and use Zatarains Dirty Rice Mix, works well with any Dirty Rice recipe.

Steps:
- Brown ground beef with garlic, onions and celery.
- Prepare Dirty Rice.
- Add beef mixture to Dirty Rice and simmer for 25 minutes.
- Remove from heat and let sit 5 minutes.
- Preheat oven to 350°F.
- Prepare peppers by coring, removing seeds and cuting off tops (level the bottoms of any uneven so that they stand upright on their bottoms).
- Beat egg with Frank's Red Hot sauce and add 1 cup cheese to egg mixture.
- Add egg mixture to dirty rice/beef mixture.
- Stuff each pepper to the top with meat and rice mixture, and place in glass baking dish.
- Cover loosely with Alumnium Foil.
- Cook in oven for 25 minutes.
- Remove from oven, uncover and top each pepper with remaining cheese. Bake uncovered for an additional 10 minutes.
- When finished, remove from oven and let sit 5 mins before serving.

- Preheat oven to 350° Fahrenheit. Spray bottom of 9x13 or large casserole dish with nonstick cooking spray.
- Wash and dry bell peppers. Slice off tops or cut in half lengthwise right through the stem. Remove seeds and seed membranes from inside the pepper halves.
- Stuff peppers with 1 C to 1.5 C of rice, using a spoon to create a rounded top with the rice. Line in baking dish rice side up. Top with shredded Parmesan and bake in preheated oven for 15- 20 minutes. Tent a piece of aluminum foil over the dish for remaining cook time to prevent over browning or drying out.
- When cook time is up, peppers should be tender. Remove from oven and let cool for 5 minutes. Top with fresh parsley and serve.

- Preheat oven to 375 degrees then arrange bell pepper halves in the bottom of a 9x13” baking dish sprayed lightly with nonstick spray. Lightly spray bell pepper halves with nonstick spray then set aside.
- Heat 1 Tablespoon oil in a large skillet over medium-high heat then add sausage, and 2/3 of both the celery and onion. Season with Cajun seasoning then saute until vegetables are tender, 8-10 minutes, turning heat down if vegetables begin to burn. Add 2/3 of the minced garlic then saute for 1 more minute. Add rice, 2 cups chicken broth, and more Cajun seasoning to taste then turn heat up to bring broth to a boil. Place a lid on top then turn heat down and simmer until rice has absorbed all the broth and is tender, 15-20 minutes. Stir in parsley.
- Scoop rice mixture inside bell pepper halves then cover baking dish with foil and bake for 35 minutes. Turn heat up to 400 then remove foil and bake for 10 more minutes, or until peppers are crisp tender.
- Meanwhile, heat remaining 1-1/2 Tablespoons oil in a saucepan over medium heat then add remaining onion and celery. Season with Cajun seasoning to taste then saute until vegetables are soft, 10 minutes, turning heat down slightly if vegetables begin to burn. Add remaining garlic then saute for one more minute. Add bay leaf, thyme, remaining 2 Tablespoons chicken broth, and crushed tomatoes then turn heat up to bring mixture to a bubble. Turn heat down to medium-low then simmer, partially covered or topped with a splatter screen, for 10 minutes. Taste then adjust seasonings if necessary. Plate peppers then top with sauce and serve.
