1 cup oatmeal
1/2 cup margarine (softened)
1 cup sugar
1 cup brown sugar
1 teaspoon brown sugar
1 teaspoon vanilla extract
2 eggs
1 1/2 self rising flour
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup margarine (melted)
1/2 cup brown sugar
3 tablespoons half-and-half
1/3 chopped pecans
3/4 cup grated coconut

Steps:

  • Pour boiling water over oatmeal and let stand for 20 minutes.
  • Beat margarine until creamy.
  • Gradually add sugars and beat until fluffy.
  • Blend in vanilla and eggs.
  • Add oatmeal, flour, and spices.
  • Bake in 9 inch square pan for 50-55 minutes.
  • To frost, leave cake in pan.
  • Mix frosting ingredients and spread evenly over over cake.
  • Put cake under broiler until frosting becomes bubbly.
  • Serve warm or cold.

Steps:

  • In a small bowl, pour boiling water over oats; let stand for 5 minutes. In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda, cinnamon and salt; add to the creamed mixture alternately with the oat mixture, beating well after each addition. , Transfer to a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Meanwhile, in a small saucepan, bring the brown sugar, butter and milk to a boil over medium heat. Remove from the heat; stir in the coconut, nuts and vanilla. Pour over warm cake. Cool completely.

Steps:

  • For the cake, pour the boiling water over the oats in a bowl and let stand for 20 minutes. Mix the flour, soda, cinnamon, nutmeg and salt together.

Steps:

1 1/4 cups boiling water
8 tablespoons (1 stick) unsalted butter, softened at room temperature
1/2 cup sugar
1 cup light brown sugar, packed
2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
Topping, recipe follows
10 tablespoons cold unsalted butter, cut into pieces
2/3 cup light brown sugar, packed
1/4 cup heavy cream
2/3 cup chopped walnuts or pecans
1 cup packed shredded or flaked sweetened coconut

Steps:

  • Place the oats in a medium bowl. Add the boiling water, mix, and let stand 20 minutes. Preheat the oven to 350 degrees F. Lightly butter a 9-inch cake pan, round or square. In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until smooth. Add both sugars and mix until smooth and fluffy. Add the eggs and vanilla and mix just until combined. Add the rolled oats and mix just until combined.
  • In another bowl, mix the flour, baking soda, cinnamon, nutmeg, and salt. Working in 3 batches, add the dry ingredients to the butter-oat mixture, mixing until just combined after each addition. Pour into the prepared pan. Bake until a tester inserted into the center of the cake comes out dry and almost clean (a few crumbs are okay), 40 to 50 minutes.
  • When the cake comes out of the oven, preheat the broiler to high. Spread the coconut topping evenly over the cake and broil until golden brown, about 2 minutes, watching carefully to make sure it does not burn. Let cool at least 10 minutes before serving.
  • In a medium bowl, mix the butter, sugar, and cream. Add the nuts and coconut and mix just until combined.

  • Cream butter then add brown sugar. Stir in cream, nuts and coconut. Garnish with apple confit.
  • In a saute pan on medium, melt the butter then stir in the sugar. Simmer, stirring occasionally until it begins to turn golden brown and caramelized. Add brandy and lemon juice to the pan and simmer to incorporate. Peel, half and core apples. Place apples in caramel and cook slowly to caramelize and tenderize. Serve warm.

Making it in individual ramekins is even better because all you have to do is a quick heat up and it's ready. Loaded with nuts and seeds this vegan oatmeal will give you the energy you need to start your day.

1/4 cup melted coconut oil, plus more for greasing
3 cups gluten-free old-fashioned rolled oats
1 cup toasted unsweetened shredded coconut
1 cup roughly chopped toasted walnuts
1/2 mini vegan chocolate chips, plus 1/4 cup for sprinkling
1/2 cup hemp seeds
1/2 cup pepitas
1/2 cup unsweetened cocoa powder
1/4 cup chia seeds
1 teaspoon ground cinnamon
1 teaspoon instant espresso powder
1 teaspoon baking powder
1/2 teaspoon fine sea salt
One 13.5-ounce can full fat coconut milk
3/4 cup nondairy milk, such as almond or cashew
3/4 cup pure maple syrup
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease a 10-inch oval or a 9-inch square baking dish with 1 tablespoon coconut oil. Alternatively, lightly grease ten 6-ounce ramekins with coconut oil.
  • In a large bowl, stir together the oats, shredded coconut, walnuts, chocolate chips, hemp seeds, pepitas, cocoa powder, chia seeds, cinnamon, espresso powder, baking powder and salt.

  • The baked and cooled oatmeal can be wrapped and refrigerated for up to 4 to 5 days or frozen for up to 2 to 3 months.
  • Reheating instructions: Let thaw, if frozen, in the refrigerator overnight and up to 1 day, cover with foil and place in an oven preheated to 325 degrees F. Bake until heated through, 20 to 25 minutes in the baking dish or 10 to 15 minutes in one ramekin. Remove the foil toward the end of the baking time for a crispy top. If the oatmeal dries out too much during baking, add 1/4 to 3/4 cup of nondairy milk to soften it back up.
