GARLIC LOVER'S CLAM DIP
One of my absolute favorite family recipes is my Granddaddy's clam dip. We had it at most family get-togethers while I was growing up, and he and my Grandma always made sure to make a double batch if they knew I was going to be there (with a special portion just for me to take home). This rich and creamy old fashioned clam dip is a garlic lover's dream.

Steps:
- Drain clam juice into a measuring cup or small container, and set aside.
- In a bowl, mix cream cheese, mayonnaise, Worcestershire sauce, and enough of the clam juice for the dip to reach your desired consistency (it shouldn't be too thick that it will break your chips). Reserve the rest of the clam juice.
- Mix in chopped clams and fresh garlic.
- Mix in garlic salt (to taste).
- The dip can be served immediately, or chilled in the refrigerator to serve later. As the dip will thicken in the fridge, stir in some of the reserved clam juice before serving to bring it back to a nice thickness for dipping.
- Serve with Classic Lay's or Ruffles potato chips.
ROASTED GARLIC DIP

Steps:
- Cut the top third off each head of garlic so the cloves are exposed and wrap in foil. Roast the garlic until the cloves are very soft and golden, about 45 minutes. Cool slightly and then pop the cloves from the skins and finely chop.
- Meanwhile, heat the oil in medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until crisp, about 8 minutes. Using a slotted spoon, transfer the pancetta to paper towels to drain.
- Mix together the sour cream and cream cheese in a large bowl until smooth. Add the pancetta, chopped garlic, dill, 1 teaspoon salt and 1/2 teaspoon pepper and stir to combine. Serve with crackers.

Steps:
- In a medium sauce pan over medium heat melt the butter and saute garlic and scallions till soft.
- Add the cream cheese in chunks, allow to melt.
- Add the sour cream.
- Once mixture is warm slowly add the hard cheeses until all is added and melted.
- Stir to completely combine.
- Place the mixture in an oven proof bowl or casserole and cover.
- Bake at 200 degrees F for about 30 minutes.
- This is just to make sure the cheese is melted and all the flavors come through.
- Serve warm with your favorite dipping sticks (veggies, crackers, fingers).
GARLIC LOVERS EASY PEASY CHICKPEA DIP
A fast dip, great for last minute company. It improves while it sits, but it doesn't need meld time to be ready to serve right away. This recipe was created through improvising on a couple of recipes I found online. ** Garlic lovers only!** The fresh garlic is the prominent flavor in the dip. (If you can't get Old Bay Seasoning in your area, you might want to add some cayenne for a little kick.)

GARLIC LOVERS DIP
Steps:
- Take the Philadelphia Cream Cheese and put them through the microwave for about 25 seconds. Peel and then run garlic through a garlic press (amount depending on the size of the cloves and how much your friends like garlic) into the warm Philadelphia cream cheese. Add garlic powder and a splash of pickle juice.
- Then get a big strong spoon and mix and squeeze it all together thoroughly. Keep adding small amounts of pickle juice until you get it a little thinner than necessary as it will harden up a bit when the Philadelphia Cream Cheese cools. (Ideally you want to be able to use a ridged potato chip in the dip without breaking).
- Put in the refrigerator overnight to ferment and take out about an hour before serving to bring it up to room temperature.

THE VERY VERSATILE GARLIC DIP OR SPREAD
This dip is SO EASY and so versatile that you will wonder how you have ever been without it. With only four relatively cheap ingredients it is perfect for both snack time and for entertaining. Feel free to add or reduce any of the ingredients to your liking as it will probably take you a few tries to find the way you like the best. But there is a %100 percent guarantee you will wonder where this spread has been all you life!

- Shred cheese coarsely but with short strokes (we use muenster because it is so cheap and yummy and it is extremely moist, but you can use any other cheese of similar consistency. Don't use a cheese like parmesan or romano because the spread won't have the right texture.
- Combine mayonnaise, sour cream (you can also use low-fat yogurt in place of sour cream to save a few calories) and shredded cheese.
- Use a garlic press to mince the garlic directly over cheese mixture (you should use a garlic press because it will evenly distribute the juice of the garlic).
- If you crush it on a cutting board you will lose all the juice and your spread won't have the right flavor.
- Feel free to add additional cloves of garlic if you can handle it.
- My wife and I haven't been able to make it past five.
- Mix well and serve.
- We usually eat spread on a cracker or dark bread like rye but you can put it on just about anything.
- Enjoy.

BEST GARLIC DIP
I have adapted this from a recipe I found on the German cooking website chefkoch.de and changed it to my liking. I first made this for a New Year's Eve party and eventhough it makes quite a large amount, there was none left at the end. If you can't find Quark, you can substitute with either low-fat sour cream or natural yoghurt or a mix of the two. Have a look in you frozen food department of the grocery store for the frozen herbs, they come in small flat cartons in the UK and Germany. The paprika mentioned is the sweet mild kind, not very hot.

- You might want to add salt and pepper, but usually it doesn't need it.
- Can be eaten straight away, but the flavours develop much better if you cover and chill it overnight.
