- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Combine turkey, cilantro, bread crumbs, egg, scallions, vegetable oil, sesame oil, and soy sauce in a large bowl. Gently mix with your hands until combined. Roll tablespoon-sized scoops between your palms to form meatballs. Arrange meatballs on the prepared baking sheet.
- Bake in the preheated oven until well browned, 20 to 25 minutes.
- Meanwhile, make the dipping sauce. Smash ginger with the heavy side of a knife and place in a small pot. Add brown sugar, soy sauce, rice vinegar. Stir over medium-low until sugar dissolves, about 3 minutes. Simmer, stirring frequently, until slightly thickened, about 3 minutes. Fish out ginger and divide sauce among small cups.
- Serve meatballs alongside sauce, with toothpicks for dipping.

Steps:
- Preheat oven to 450 degrees.
- MEATBALLS:Mix all ingredients except for flour together, using a food processor if you want a very smooth mixture.
- Shape into 1 inch balls; roll lightly in flour, and arrange in one layer in a lightly oiled baking dish or jelly roll pan.
- Bake in upper middle level, 7 to 8 minutes, turning once or twice, to brown nicely and just to stiffen.
- Reduce oven temperature to 350 degrees.
- Drain in a sieve or colander.
- SAUCE:In a medium sauce pan, boil down the ingredients for the sauce until lightly thickened, carefully correct seasoning, and fold in meatballs.
- Bake for 20 minutes.

- Put oven rack in middle position and preheat oven to 500°F.
- Pour milk over bread crumbs in a large bowl and stir until liquid is absorbed. Add ground meat, egg, water chestnuts, salt, chopped cilantro, 1 tablespoon soy sauce, and 2 teaspoons oil and mix with your hands until combined well. Shape 3 tablespoons meat mixture into a ball and transfer to a 13- by 9-inch glass baking dish. Make more meatballs with remaining mixture, arranging meatballs about 1/2 inch apart in baking dish. Bake until cooked through, about 15 minutes.
- Meanwhile, stir together lime juice, water, sugar, remaining 4 tablespoons soy sauce, and remaining 2 teaspoons oil in a bowl until sugar is dissolved.
- Transfer meatballs to a serving dish. Stir sauce, then drizzle meatballs with 1 tablespoon sauce and sprinkle with cilantro sprigs.
- Serve meatballs with remaining sauce.

- Place the ground pork, scallions, bamboo shoots, soy sauce, sherry, sesame oil, sugar and beaten egg white in a large mixing bowl and mix until all ingredients are thoroughly combined.
- Stir in the cornstarch, mixing until thoroughly incorporated with the other ingredients.
- Spreat out the wonton skins on work counter. Place a spoonful of pork mixture in center of each wonton skin and lightly brush edges with water.
- Bring sides of skins together in the center of the filling, pinching firmly together (it'll look like a little purse).
- Line a steamer with a clean, DAMP tea towel and arrange wontons inside.
- Cover and steam for 5-7 minutes, until dim sum are cooked through.
- Serve immediately.
DIM SUM STEAMED BEEF BALLS (NGAO YUK)
I always order this when eating Dim Sum. I finally got a good recipe for this off about.com, which re-posted Evelyn Chau's recipe from her book "Have Some Dim Sum". My recipe is modified to suit me. The first time I made this I didn't have orange rinds and so something was off but this time I had an orange on hand and used a cheese grater to grate off some orange skin and wow that's the secret ingredient.

- This is a very crucial ingredient and can't be omitted/substituted. With a cheese grater, grate an orange peel. Mine is a cheap dollar store one and it's easier grating the skin while still attached to the whole orange. About 1/2 teaspoons I'll go up to 1 tsp at times.
- Add baking soda to beef.
- Add the beaten egg to the mixture. An alternative to the egg is pick up beef in hand and form into a large ball. Then throw the beef with some force into a large bowl. Repeat 10 - 15 times. The egg or throwing makes the beef less crumbly when cooked. I use the egg trick.
- Dissolve cornstarch in cold water. Stir well and add to beef.
- Add minced citrus peel, oil, white pepper, salt, chicken bouillion, sugar, sesame oil and egg, oyster sauce, cilantro, peas to beef. Mix well for about 10 min or till it's well mixed and pasty.
- Cover and Let marinate for 4 hours or more in the fridge.
- Form beef balls of about 2 tablespoons of beef with your spoon.
- Place beef balls on a medium plate, or whatever size plate fits in your steamer. If you're using small dishes, the beef can be steamed in batches.
- Steam on high heat for 8 minutes after water has come to a boil.
- Serve with a soy/maggi sauce mixture.

- Remove the cabbage core. Fill-in a pot with cold water just enough to cover the entire cabbage. Once the water starts boiling. Turn the heat down to low boil. Remove the leaves as they separate. Set aside to cool.
- Combine the ground pork with “pork seasonings”. Mix well. Line a bamboo steamer with a thin layer of parchment paper. Alt. use a plate set over a steaming rack.
- Select a small cabbage leaf. Form a small cup shape with a leaf in your hand and spoon about 1 tbsp of meat filling into the leaf wrapper. Gently squeeze the cabbage leaves and the meat filling to make sure they cohere nicely.
- Place them in the steamer. Put one next to each other so they won’t fall apart in the steamer. Steam over high heat for about 25-30 mins until fully cooked. The water should be more than simmering but not quite boiling. Enjoy with my signature umami dipping sauce !
