OVEN FRIED ONION RINGS

Steps:
- Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
- In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
- In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
- Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
- Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.
MOM'S ONION RINGS
Steps:
- Preheat the oven to 200 degrees F. Set a cooling rack over a baking sheet.
- Separate the onions into rings and put in a large bowl. Toss with 1/2 cup of the flour. Arrange the floured rings on the cooling rack; let stand for 15 minutes.
- Fill a large, wide pot with 2 inches of vegetable oil and heat to 365 degrees F over medium-high heat. In a large bowl, whisk the remaining 2 cups flour with the cornstarch, paprika, cayenne, lime zest and 1 1/2 teaspoons kosher salt. Add the milk, club soda and egg and whisk to combine.
- Working in 3 or 4 batches, add a small amount of the onions to the batter and then immediately place into the hot oil. Fry until crisp and golden, turning once, 2 to 3 minutes. Allow the oil to come back to temperature between batches.
- Season the onion rings with salt. Serve immediately with your condiment of choice, or transfer to a cooling rack and keep warm in the oven until ready to eat.
MAKING CRISPY ONION RINGS
This recipe for onion rings is so easy and so amazingly crispy, you can now make up for all those years of deep-fried denial by making these at home.

- Whisk together flour, cornstarch, dry potato flakes, and cayenne pepper in a large bowl. Whisk in club soda to make a smooth batter.
- Place panko bread crumbs in a shallow bowl.
- Heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C).
- Place a few onion rings at a time into the bowl of batter and turn to coat all sides with batter.
- Remove onion rings from batter and place into pan of panko bread crumbs; turn to coat completely with crumbs.
- Cook a few rings at a time in the hot oil until golden brown, about 2 to 3 minutes.
- Transfer to a cooling rack set over paper towels to drain. Season with salt to taste and serve.

DILLY ONION RINGS
Be sure to let these marinate for at least the 5 hours. I really enjoy these served with fried catfish or smoked/barbecue pork! My mom likes to throw them on top of her turnip greens (cooked forever). This is just one of those recipes that have been around forever. Marinating time is not included in prep or cook time.

LORD OF THE ONION RINGS

- Preheat the oven to 375 degrees F.
- Slice the ends off the onion and remove its outer layer. Cut onion into 1/2-inch-wide slices, and separate into rings. Set aside.
- Using a blender or food processor, grind cereal to a breadcrumb-like consistency. Season the crumbs with spices and transfer to a plate or bowl.
- Fill a small bowl with egg substitute. Prepare a baking sheet (or 2) by spraying with nonstick spray. Set aside.
- One at a time, dunk each ring in egg substitute, give it a shake to remove any excess, and then coat it in the seasoned crumbs. Evenly place rings on the baking sheet(s).
- Bake in the oven until the outsides are crispy and insides are soft, 20 to 25 minutes, carefully flipping rings over about halfway through. Serve with mustard, if using. Enjoy!

SOUR CREAM AND ONION-ONION RINGS
Steps:
- Heat 2 inches of oil in a Dutch oven to 370 degrees F.
- Whisk together the sour cream and onion dip mix, 2 teaspoons of the onion powder and 1/2 teaspoon of the garlic powder in a large bowl (large enough to use for dredging). Set aside 2 tablespoons of the seasoning mixture for later. To the mixture in the bowl, stir in 1/4 cup of the flour. Set aside.
- In a separate large mixing bowl, whisk together the remaining 1 cup flour, the cornstarch, remaining 2 teaspoons onion powder, the salt, baking powder and remaining 1/2 teaspoon garlic powder. Add the seltzer and sour cream and whisk until just smooth. Stir in the chives. The batter should be the consistency of thick paint.
- Add the onion rings to the seasoned flour and toss to lightly coat. Working in 2 batches, dredge the floured rings in the batter, letting the excess drip back in the bowl, and add to the oil. Fry, flipping occasionally, until very crisp and deep golden, about 4 minutes per batch. Drain on a wire rack set over a baking sheet.
- While still hot, season the onion rings with the reserved sour cream and onion seasoning mixture. Serve immediately, with ketchup.
DILLY'S ONION RINGS

- Cut the onions in thin slices. Seperate the slices into rings and put them in a bowl.
- Combine the sugar, salt, dill, white vinegar, and water.
- Pour the liquid over the onion rings.
- Cover the bowl and refrigerate for at least 5 hours, stirring every hour or so.
- Serving suggestions: Slice large ripe tomatoes and arrange on a platter. Lift the onion rings out of the brine and sprinkle them on top of the tomato slices. Garnish with fresh, chopped parsley leaves if desired.
- You can use these onion rings to garnish cooked carrots, cooked green beans, even mashed potatoes. They're also a wonderful garnish for a mixed green salad.
- Covered tightly and stirred a couple of times a day, these marinated onion rings should last for at least a week in the refrigerator.

SUPER CRISPY ONION RINGS

- In a very large pot (or deep fryer), heat the oil to 365°.
- In a bowl, whisk the flour with the cornstarch, baking soda and 2 teaspoons of salt.
- Add 2 1/2 cups of the club soda and whisk until smooth; the batter should be thick but pourable. If needed, add the remaining 1/2 cup of club soda, a few tablespoons at a time.
- Working with 6 or 7 onion rings at a time, dip them in the batter until completely coated; as you pull the rings from the batter, scrape some of the excess against the side of the bowl.
- Carefully add the onion rings to the hot oil and fry until golden and crisp, about 2 minutes.
- Drain the onion rings on paper towels.
- Sprinkle the onion rings with salt and serve immediately or keep warm in an oven on low heat while you coat and fry the rest. Enjoy!
