1/3 cup fat-free plain yogurt
2 tablespoons reduced-fat mayonnaise
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
2 teaspoons Dijon mustard
4 halibut steaks (6 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small bowl, combine the yogurt, mayonnaise, dill and mustard; cover and refrigerate. Sprinkle halibut with salt and pepper. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill halibut, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until fish flakes easily with a fork. Serve sauce with halibut.

Cured in the same way as salmon gravlax, this halibut is delicate in taste, with a faintly sweet, herbal flavor. Pacific halibut gets a green light from Seafood Watch for its well-managed fisheries in both California and Alaska. Find crème fraîche in the dairy cases of well-stocked grocery stores. Prep and Cook Time: 20 minutes, plus 2 days to cure. Notes: Be sure to use a very sharp knife when slicing. Cured halibut keeps, chilled, for up to 2 weeks.

Number Of Ingredients 12

1/3 cup olive oil
1/4 cup chopped fresh dill
1/4 cup coarse sea salt
1/4 cup granulated sugar
1/4 teaspoon freshly ground black pepper
2 skin-on halibut fillets (8 oz. each), center cut (1/2- to 3/4-in. thick)
1/4 cup whole-grain mustard
1/4 cup Dijon mustard
1/3 cup light brown sugar
6 slices square (5 in. by 5 in.) deli-style dense pumpernickel bread, such as Wedemeyer brand
1/2 cup crème fraîche
Dill sprigs

Steps:

  • In a small bowl, stir together olive oil, dill, salt, sugar, and pepper. Trim fillets to the same size and thickness. Line an 8- by 8-in. baking dish with plastic wrap and lay one fillet, skin side down, on bottom. Cover with dill mixture and top with second fillet, skin side up. Cover fillets with plastic wrap (do not seal edges) and a plate just big enough to fit inside the baking dish. Top plate with a 2- to 4-lb. weight (such as a 6-pack of soda). Cure fish, chilled, 2 days, turning over and draining excess liquid after 1 day.
  • Remove fillets, scrape off dill, rinse well, and pat dry. Thinly slice halibut on a steep angle, leaving skin behind and creating wide slices.
  • Whisk together mustards and brown sugar and set aside.
  • Stack bread slices and cut into 4 equal squares. Top each square with a dollop of crème fraîche. Arrange 1 or 2 pieces halibut over the crème fraîche and top with several dots of mustard sauce and a sprig of dill.

1/2 teaspoon salt
1/8 teaspoon pepper
4 halibut steaks (6 ounces each)
1/4 cup reduced-fat sour cream
1/4 cup reduced-fat mayonnaise
1 tablespoon chopped dill pickle
1 tablespoon chopped green onion
1/2 teaspoon dill weed
1/2 teaspoon lemon juice
1/8 teaspoon seasoned salt
3 tablespoons grated Parmesan cheese

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add halibut, one piece at a time, and shake to coat. Place in a 13-in. x 9-in. baking dish coated with cooking spray. , In a small bowl, combine the sour cream, mayonnaise, pickle, onion, dill, lemon juice and seasoned salt; spread evenly over halibut. Sprinkle with Parmesan cheese. Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork.

8 ounces fresh halibut steaks
1/2 lemon, juice of, large
2 tablespoons honey mustard
6 tablespoons olive oil
1/4 cup dry white wine
2 tablespoons capers
salt and pepper

Steps:

  • preheat the oven to 350°F.
  • take out two sheets of tin foil, appx 8x10 and stack them (one will actually cover the fish, the other will act as a safety to prevent spilling juice/sauce in the oven).
  • Place the fish steak in the center of the tin foil, and salt and pepper it.
  • In a small bowl, place the olive oil, lemon juice, honey mustard and white wine and mix into an emulsion.
  • pour the sauce over the fish (be sure to lift the sides of the foil to create a barrier and prevent the sauce from spilling onto the counter).
  • place the capers over the fish.
  • fold the foil into a pouch.
  • place in the oven for 20 minutes and test for doneness (fish should be white and flaky in the center).
  • Serve the fish with the sauce.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • In a small bowl, mix together mayonnaise, mustard, horseradish, and lemon juice. Stir in 1/4 cup bread crumbs and 1 tablespoon Parmesan cheese. Arrange fish fillets on the prepared baking sheet. Spread bread crumb mixture evenly over fish.
  • In a small bowl, mix together melted margarine, 1/4 cup bread crumbs, and 1 tablespoon Parmesan cheese. Sprinkle over the coated halibut.
