DIJON TARTAR SAUCE
Fat-free mayonnaise mixed only with pickle relish seemed so tasteless, so I began experimenting and came up with my own recipe for tartar sauce. It adds lots of flavor to fish, but a few calories. -Kristen Flaherty of South Portland, Maine

TARTAR SAUCE
Packed with crunchy, sharp zing from onion, and tang and savoriness from capers, this homemade tartar sauce delivers bold freshness. Once you've mixed the base below, you can stir in more of whichever ingredients you most enjoy. And if you don't like the bite of raw onion, you can soak it in cold water for 10 minutes and drain before stirring it in. Thick yet spreadable, this works as a dip, too.

- In a small bowl, stir together the mayonnaise, pickle, onion, capers, lemon juice, mustard and dill, if using. Use immediately or store in an airtight container for up to 1 week.
- Use as a dip for fried fish or other seafood, fries, chips, pita chips and crudités. Mix into tuna, egg or potato salad, or spread onto bread for tuna, egg or chicken salad sandwiches, as well as for roast beef and fried chicken or fish sandwiches, and salmon burgers.

- In a medium bowl, combine mayo, mustard, lemon juice, pickles, parsley, capers and chopped egg. Stir to combine and season with salt, pepper and paprika.

- In a food processor or blender mince the scallion, pickle and parsley, then puree with mayonnaise and mustard and season with salt and cayenne pepper.
CAJUN FRIED FLOUNDER WITH DIJON TARTAR SAUCE
Fridays were "fry-days" growing up-we'd always have a fish fry or some sort of seafood. Flounder is a great fish to fry; it's flaky, yet meaty, and the Cajun seasoning and crunch of cornmeal make it super delicious.

- Make the tartar sauce: Stir together the mayonnaise, mustard, relish, dill, vinegar, sugar and Worcestershire sauce in a small bowl. Season with salt and pepper. Refrigerate until ready to serve.
- Make the flounder: Soak the fish in the buttermilk in a bowl for 30 minutes. Meanwhile, pour enough oil to go 1 1/2 inches up the sides of a large, deep cast-iron skillet. Heat over medium heat to 375 degrees F.
- Sprinkle the fish lightly with salt and pepper. Place the cornmeal and flour in a shallow dish or paper bag. Sprinkle the fish with the Cajun seasoning. Add the fish to the flour mixture and coat each piece evenly. Transfer the breaded fish to a plate or cutting board.
- Add the fish to the oil in batches and fry until the pieces start to float to the top and are golden brown, 3 to 4 minutes. Drain on a wire rack after cooking to let the extra oil run off. Sprinkle a little lemon juice on top of each fillet before serving. Serve with the tartar sauce.

- Mix ingredients together, refrigerate, and serve as needed.
CAJUN - CREOLE TARTAR SAUCE
My family loves a bit of sauce on the side of fish dishes. The cajun spice along with dijon mustard is especially tasty. When I cook for the family, I cut the sauce recipes in half. I don't want leftovers. We like ours fresh.

- Make the sauce by mixing all the ingredients and refrigerate.
- Preheat oven to 350°F.
- Cook potato in microwave 5 minutes until tender.
- Mash and cool.
- Add remaining ingredients and shape into 12 patties.
- Add 1 tbsp oil to skillet and add 6 patties, cook 2 minutes on each side.
- Spray a baking sheet with cooking spray and add cooked patties.
- Repeat, then add 12 patties to oven, bake for 10 minutes and serve with sauce.
