Frozen cut green beans and jarred beef gravy impart down-home flavor to a satisfying meat-and-potato stew.

1 lb boneless beef sirloin, cut into 1/2-inch pieces
1/2 teaspoon peppered seasoned salt
2 jars (12 oz each) home-style beef gravy
1 cup water
2 tablespoons Dijon mustard
1/4 teaspoon dried thyme leaves
4 unpeeled small red potatoes, cut into 1/2- to 3/4-inch cubes (about 2 cups)
1 1/2 cups frozen cut green beans
2 medium carrots, sliced (1 cup)

Steps:

  • Sprinkle beef with peppered seasoned salt. In 4-quart Dutch oven or 12-inch nonstick skillet, cook beef over medium-high heat about 4 minutes, stirring frequently, until brown.
  • Stir in gravy, water, mustard and thyme until well blended. Stir in potatoes, green beans and carrots. Heat to boiling; reduce heat to medium-low. Cover and cook 20 to 22 minutes, stirring occasionally, until potatoes and beans are tender.

2 tablespoons olive oil
1 tablespoon Dijon mustard
1 clove garlic, minced
¼ teaspoon thyme
¼ teaspoon rosemary
salt and ground black pepper to taste
5 red potatoes, cut into 1-inch pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a roasting pan.
  • Stir olive oil, Dijon mustard, garlic, thyme, rosemary, salt, and pepper together in a bowl; add potatoes and toss to coat. Transfer potatoes to prepared roasting pan.
  • Roast in preheated oven, turning occasionally, until tender in the middle, 40 to 45 minutes.

4 (4 ounce) beef cube steaks
1 tablespoon butter
1 (12 ounce) jar beef gravy
3 tablespoons half-and-half
1 tablespoon Dijon mustard
2 tablespoons chopped fresh parsley

Steps:

  • Melt butter in large skillet.
  • Brown steaks quickly on both sides.
  • Remove, set aside.
  • Reduce heat; add gravy, half-and-half and mustard to skillet.
  • Heat, stirring, till bubbly.
  • Return steaks to pan with gravy.
  • Turn heat down; cover and let simmer about 30 minutes, or until done.
  • (add water if necessary) Sprinkle fresh parsley over steaks just before eating.

2 cups sliced leeks
4 garlic cloves, minced
1/3 cup all-purpose flour
1 1/2 lbs chicken thighs, deboned & cut into bite size pieces
1/2 lb boneless skinless chicken breast, cut into bite size pieces
1/2 teaspoon salt, divided
1/2 teaspoon fresh ground black pepper, divided
1 cup dry white wine
3 cups chicken broth
1 tablespoon all-purpose flour
1 1/2 cups water
2 tablespoons Dijon mustard
2 cups white potatoes, peeled, cubed
8 cups loosely packed torn kale or 8 cups spinach, if kale is not available
crushed red pepper flakes (optional)

Steps:

  • Heat 1 tsp oil in Dutch Oven over medium-high heat.
  • Add leek; saute 6 minutes or until tender and golden brown.
  • Add garlic; saute 1 minute.
  • spoon leek mixture into a bowl.
  • Place 1/3 cup flour in a shallow bowl & dredge chicken; shaking off excess.
  • Heat remaining 1 tablespoon oil in pan over medium-high heat.
  • Add 1/2 chicken; sprinkle with 1/8 tsp salt & 1/8 tsp pepper.
  • Cook 6 minutes browning on all sides.
  • Add browned chicken to leek mixture.
  • Repeat with remaining chicken.
  • Add wine to pan, scraping pan to loosen browned bits.
  • Combine 1 cup broth a 1 tbsp flour stirring with a whisk till smooth.
  • Add broth mixture, remaining broth, water and mustard to pan; bring to boil.
  • Stir in chicken mixture, remaining salt & pepper; cover, reduce heat and simmer for 30 minutes.
  • Stir in potatoes, cover & simmer 30 minutes.
  • Stir in Kale, cover and simmer 10 minutes.
  • Garnish with red peppers and serve with bread, i.e, roll, toast, etc.

1 pound boneless beef chuck roast, cut into 1-inch cubes
1 pinch salt and ground black pepper to taste
1 pinch paprika, or more to taste
2 tablespoons all-purpose flour
2 tablespoons olive oil
1 tablespoon salted butter
1 large onion, cut into chunks
5 cloves garlic, cut into small pieces
2 seeds whole cardamom seeds
1 large bay leaf
1 large tomato, cut into chunks
1 cup beef stock
1 cup sunflower oil
2 large potatoes, cut into 1-inch cubes

Steps:

  • Place beef in a bowl and season with salt, pepper, and paprika. Mix in flour to dredge the beef.
  • Heat olive oil and butter in a large pot over medium-low heat. Add onion and cook, stirring occasionally, until onion has softened and turned translucent, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add cardamom, bay leaf, and beef. Increase heat to medium and cook until meat turns from red to pinkish-brown, 2 to 3 minutes.
  • Add tomatoes to the pot; stir and cook until soft, about 2 minutes. Add beef stock and cook until beef is no longer pink in the middle, 10 to 15 minutes.
  • Heat sunflower oil in a deep saucepan over medium heat. Lower potatoes carefully into the hot oil and fry until tender on the inside, 5 to 10 minutes. Transfer to a plate lined with paper towels to drain. Add potatoes to the beef-tomato mixture and cook for 2 more minutes before serving.
